day 5 of Channukah and I STILL can't make a decent Latke

I've fried them, baked them, fried/baked them and I'm about ready to give up.

I'm using the potatoes in the bag, as my mom told me, and an onion and shredding in the FP on the larger disc. Then squeezing the heck out of them so they are so dry, adding an egg and some potato starch.

They aren't staying together in the pan, cook on the outside not on the inside, if I lower the temp they are greasy, baked are so disgusting no one will eat them.
