Diabetic cookie?

I made a gift basket for a friend who is diabetic, I have 2 boxes of herb/flavored tea, a cup & a hand towel. I'd like to include a nice T&T diabetic cookie or something sweet. Do you have a great recipe or any ideas?

Someone told me this diabetic cookie recipe is good and I'm going to try it myself, but I haven't yet. When I do it for Christmas, I think I'll decorate them up a little bit to make them pretty, stick a nut on top of each cookie, maybe.

1 stick butter
1 cup Splenda
1 egg
1 tsp cinnamon
1 tsp vanilla
8 oz. slivered almonds, finely ground.

Cream butter and Splenda.
Add egg and beat to combine.
Add cinnamon and vanilla.
Grind almonds in a food processor until it becomes flour and add to mixture.

Drop by teaspoons onto baking sheet.
Bake at 350 degrees for 10-15 min.

Makes 18-20 cookies

3.5 carbs per cookie

Joann, it depends on what diet she follows. For example, I stay very low carb, under 50 carbs a day, for stay in control. Others stay in the 20-50-70 carbs per meal, particularly if they use insulin.

But to give you an idea, if she is a carb watcher, here is a great site.

Why don't you just add freshly-milled flaxmeal (up to 1/2 c.) to your favorite cookie recipe (you may want to reduce the flour a little, but it's not always necessary). I add flaxmeal to EVERYTHING I bake - no special recipes necessary. In some instances, you can also reduce the fat because flax will help replace it. I'd also suggest trying Agave Nectar instead of Splenda, for baking. Agave Nectar is a low-glycemic, honey-like, natural sweetener that works like sugar in baking. It ferments when used in yeast breads - unlike Splenda, and browns - unlike Splenda (or other chemical sweeteners). For every cup of sugar called for, you only need 1/2-3/4 c. of agave nectar. Check out the book, "The Flax Cookbook" by Elaine Magee, P.P.H., R.D. I think you will find several cookie recipes that will meet your needs. Check your local library for this book, and if they don't have it, ask them to get it through inter-library loan. Grainlady

Test kitchen tips for Gluten-Free Measure for Measure Flour This flour is best suited for non-yeasted recipes. Directly swap the amount of all-purpose flour called for with the same amount of Measure for Measure flour: No need for additional specialty ingredients. Works beautifully in your favorite recipes, whether you’re substituting just a few ounces of conventional flour or several cups. Grainlady's soapbox: The biggest drawback with most of the all-purpose gluten-free blends --- rice flour being the main ingredient. I wouldn't recommend using large amounts of rice flour for anyone, and especially children, due to the arsenic associated with it; and nearly all gluten-free flour blends and commercial gluten-free foods contain rice flour. To use an old idiom: Out of the frying pan and into the fire. Trading one health concern for another potential health concern - gluten intolerance followed by diabetes and other health issues due to food choices. Therefore, just as before I was gluten-free, I mill gluten-free wholegrain flour myself and use coconut flour and almond flour over rice flour. The brown rice flour I do use I make myself in order to reduce the amount of arsenic in it by rinsing, soaking, sprouting (which includes more rinsing), dehydrating the sprouted grain, and milling it into flour myself. With that much work involved, you use it sparingly. After a 10-day detox from all grains at the first of the year, I soon realized how other grains, even gluten-free grains, still affect your wellbeing. They initiate inflammation and auto immunity. Phytates block nutrient absorption, and oats contain higher levels of phytates than almost any other grain - unless you know how to soak and prepare them to reduce the phytates. Going gluten-free and maintaining your health is more challenging than just "going gluten-free." Especially with all the commercial gluten-free choices now, and most are really just more junk food - without the gluten. Everyone always seems to focus on desserts when they have guests with diabetes, and there's this idea that the thing they need to do is to replace the sugar in any desserts with stevia, splenda or some other sweetener. But, people with diabetes CAN eat sugar and a piece of a regular dessert or a candy bar can have a lot less impact on their blood glucose than the rice, pasta, potatoes, bread, fruit juice, fruit, wine, regular soda, etc. that is commonly served with meals and almost never considered. It's not about sugar, it's about carbs and certain carbs will affect different people in different ways. For example, a friend of mine with diabetes would have a lot less trouble with a serving of most any dessert than she would with white rice. Also, desserts with stevia or an artificial sweetener can still have plenty of carbs, which come not just from the sugar in desserts, but also from things like flour. You can make sugar free cakes, cookies, pies, etc., but it's easy to forget that these have plenty of carbs in them from the flour and the sugar may have actually not contributed that much to the carb count in the first place. So, overall, making sugar free desserts just isn't that helpful for people with diabetes, especially if the desserts have other sources of carbohydrates. Honestly, I always just ask people if they have any dietary restrictions or if there are things that I need to consider when making meals. You might be surprised to find that a diabetic guest will be just fine if you make a regular dessert, but will request that you include a salad and other vegetable to go along with the lasagna, potatoes, rice, etc. that you were planning to make.

Joann-I don't know if these are considered "diabetic" but they are sugar free and delicious.I make them all the time.They are very delicate so don't know if they would work for a basket.Maybe you could put them in a little tin of some kind with cardboard or heavy paper between the layers.
Peanut Butter Cookies
1 C. peanut butter,creamy or chunky.
1 C. granulated Splenda
1 whole egg
Mix all ingredients together.Form into balls about the size of a large marble.Place 2 inches apart on cookie sheet lined with parchment paper.Bake @ 350 degrees until lightly browned,10-12 min.Cool completely on the cookie sheet.Makes about 1 dozen or so cookies.Store in airtight container.

I subscribe to Diabetes self management they have a great recipe area with a lot of various type recipes, you could check there for something you might like. I would include the recipe with what ever you choose to make and also the nutrition info and exchanges info.

This is from "Mr. Food's Quick & Easy Diabetic Cooking"
Cherry Bonbons
1 stick butter, softened
1cup plus 2 Tbl. confestioners' sugar, divided
1 1/2 cups all-purpose flour
2 Tbl fat-free milk
1 Tsp vanilla extract
1/8 Tsp salt
24 Maraschino cherries, drained, reserve 2 Tsp. liquid

1. Preheat oven to 350. In a medium bowl, beat the butter and 3/4 cup confectioners' sugar until creamy. Stir in the flour, milk, vanilla, and salt; mix well.
2. Shape into 24 balls. Press each ball around a cherry and place on an ungreased baking sheet. Bake for 18-20 minutes, or until light golden. Cool on wire rack.
3. Place 2 Tbl. confectioners' sugar in a shallow dish and roll the bonbons until lightly coated.
4. In a small bowl combine the remaoning 1/4 cup sugar and the reserved cherry liquid; mix well. Place in a resealable plastic bag. Cut a small corner off bag and drizzle the glaze over the bonbons.
5. Allow the bonbons to cool until the glaze is firm, then serve, or store in an airtight container.

That's a good website Lynn! Thanks! Just wish she would put her 'stars' next to the name instead of at the end of the recipe.

Terilyn, I don't think that carb count is correct. Just 1 cup of confectioner's sugar has 120 carbs, the cherries have almost 42 and there is 18 carbs in just 1 oz of white flour. They sound yummy though.. just can't imagine them on a diabetic's diet.

I was going to say the same thing about the carb count for the cherry bonbons...the sugar, flour and the cherries are loaded with carbs

You could substitute almond flour and artificial sweetener, but the cherries would have to go. :)

So many of the diabetic recipes have way more carbs than I can eat without a negative impact on my bg, dietians continually insist on low fat, high fiber....and then they wonder why we have no control of our levels. GEEZ, this isn't rocket science! LOL!

Terilyn, please don't take offense, I know I didn't think anything of it and am sure no one else did either. Sadly a lot of the ADA's nutritional info is controversial when it comes to the effect on our bodies. Each of us are different, I have little tolerence for carbs and cannot eat some things others have daily.

Your researching to help is very kind.

Many of the so-called "diabetic" recipes around are actually loaded with carbs, some laughably so. Not your fault, terilyn!

I picked up a "diabetic" recipe book at the store recently and was amazed at what they called "diabetic" foods....they'd make my blood sugar shriek!
