What's for Dinner....Sunday?

Ok, we've been talking or thinking about food all day, lol. What's on your dinner table?

Robert brought home some nice crappie and a bass last night. I think that I'll pan fry them, and fix some slow cooked grits and an arugula salad.

I made a naked burrito: roasted chicken from Kroger, fresh cilantro, green onions, salsa, black beans, little bit of cheddar cheese, lettuce and a little sour cream. It was so good. I made some up to take to work the next couple of days.

Kittiesmom, here is the recipe. Sharon didn't include a name, so I named it... Lima Beans Sharon KT 1 pkg of frozen Fordhook Lima Beans 1 small onion. diced finely 1 sm. jar of chopped pimentos-drained 1/2 cup sour cream-room temp 1 stick butter Melt butter in a saute pan & add the onions & pimentos..gently cook until tender. Meanwhile, cook the limas per pkg directions, & drain. Add the hot limas to the onion mixture. Gently stir in the sour cream & add salt & pepper to taste-don't be stingy w/the seasoning. You can add a little more butter if you care to, at this point. NOTE: This dish must be prepared just before dinner-serve immediately once you add the sour cream. DELISH!!! It is definitely DELISH!!! I gave my DD a "sample" of it today, and she loved it and asked for the recipe. I see Sharon has posted a recipe for Super Delish Baked Pork Chops. Can't wait to try that. Thanks, Sharon. Sue

Shirley, that coney dog is calling me! Glad the snow and ice are gone so you can get out and about! Jasdip, did your team win? I haven't been keeping up with the Olympics. My bad! I had 5 large baking potatoes that needed to be used so I made them into twice-baked potatoes. Baked the potatoes, scooped out the pulp, mashed it with butter, milk and sour cream. Added shredded cheddar, sliced green onions chopped parsley and some chopped bacon. Topped with more cheese and bacon. Put them on a cookie sheet and they are in the freezer before being stored in bags and run through the Food Saver. They sure look pretty! Sue, glad you are able to get out again. Lunch sounds great. Little Alyssa will soon be a 3-year old. It's a great age. I've never had Captain D's but it looks a lot like Long John Silvers. Glenda, I really like Thai coconut soup, but the rest of your meal sounds even better.

Shrimp kabobs on the grill, served on top of a big salad made of all kinds of good things. We're harvesting baby greens and mixed greens from the garden again, so that was a treat. I made a spicy thousand island type dressing that tasted good with the shrimp.

Sunday was a beautiful, cold, wintry, sunny day. We bought a 2-pack of frozen Delissio pizza when we were doing groceries. It was on sale, plus I had a $2 coupon. Boy have they changed! They are a LOT smaller.......square instead of round. The package said Party Pack but they wouldn't come close to feeding a group of people. With frozen food I always add more veggies, sauce and cheese. Thank heavens for the coupon, we won't be buying that again. We had a salad with it as well. I made an apple crostata for desset.

I made gravy out of lean ground pork with mushrooms. Put it over a potato, and had a side salad.

I got to see the sunshine a good bit today. It just makes such a big difference in my attitude.

Between the bread, apple pie and dinner, the oven was on a lot today.
Chicken marbella for dinner with roasted potatoes and carrots. We had some apple pie for dessert.

kathsgrdn, your naked burrito sounds like a tasty and quick dinner. I will have to try next week after DH gets home. We're trying to stay low carb and love Mexican, so that's perfect!

I'm having a hamburger patty topped with jalapeÃÂ±o pimento cheese and a side of mixed veggies with Parmesan (yes, I'm a cheese lover!).

Stopped goofy trivial chores after lunch. Go out and play, or do nothing. Picked up the Italian Beef for supper, with extra peppers, jus, and fries. (free). Enough for lunch tomorrow. The batch of Kahlua made earlier has chilled, the sipping is delicious. Got just enough room left for half a dozen regular Reese's Cups.

I made chicken fajitas and an experimental side-dish casserole of black beans, onions, corn, jalapenos, salsa, and cheese. It hit the spot!

Angelaid, our brains must think alike. We had chicken fried steak, gravy, mashed potatoes, green beans, and home made biscuits. It was so good.
