What's for dinner Sunday?

Dear KT friends,

I'm sorry that I won' t be able to handle the dinner post for a while. With Harry in the hospital and my own health problems, I find I'm just too tired to do much of anything these days.

If anyone would like to take it over for a few weeks, I would appreciate it. Or whoever thinks of it first could start.

I shall return but right now I just have to get well.

I'm late with this but thought I'd share anyway. I've been turned on to the low and slow method of cooking. So far I've done french dip sandwiches - bottom round roast and yesterday we did a fresh chicken. The concept is to cook for hours at low temperatures. So far I've use 170 degrees. The meat temperature never rises about 170. We did the bottom round for just a bit too long. I should have gotten it out when the temp read about 150 so it could rest for slicing. Yesterday's chicken on the other hand, so good. All I did was salt and pepper the inside/outside the night before and left in the fridge over night. In the morning I took it out about an hour before cooking. I cranked the oven to 500 to crispen it up then dropped it down to 170 for about 6 hours. I did baste it with olive oil, rosemary and thyme and stuck some lemons in the cavity. It was the juiciest chicken I've ever done and so flavorful. Broccoli and garlic mashed tatoes along with a wilted lettuce salad with hot bacon dressing. Leftovers for lunch today.

Kittiesmom, here is the recipe. Sharon didn't include a name, so I named it... Lima Beans Sharon KT 1 pkg of frozen Fordhook Lima Beans 1 small onion. diced finely 1 sm. jar of chopped pimentos-drained 1/2 cup sour cream-room temp 1 stick butter Melt butter in a saute pan & add the onions & pimentos..gently cook until tender. Meanwhile, cook the limas per pkg directions, & drain. Add the hot limas to the onion mixture. Gently stir in the sour cream & add salt & pepper to taste-don't be stingy w/the seasoning. You can add a little more butter if you care to, at this point. NOTE: This dish must be prepared just before dinner-serve immediately once you add the sour cream. DELISH!!! It is definitely DELISH!!! I gave my DD a "sample" of it today, and she loved it and asked for the recipe. I see Sharon has posted a recipe for Super Delish Baked Pork Chops. Can't wait to try that. Thanks, Sharon. Sue

I've thawed a couple of boneless chicken breasts (I'll save a little of one for a soup for my lunch ala Raven) and plenty of fresh veggies for a stir fry. Robert will be my sous chef.....there will be lots of chopping and dicing and my hands are so sore from yesterday's pruning. He's using my mandolin, so let us pray. Let's see....green pepper, onion, garlic, fresh ginger, broccoli, carrots, Chinese cabbage, shiitake mushrooms, sugar snap peas. I'll season the brown rice with a little sesame oil.....so fragrant.

Sunday was a beautiful, cold, wintry, sunny day. We bought a 2-pack of frozen Delissio pizza when we were doing groceries. It was on sale, plus I had a $2 coupon. Boy have they changed! They are a LOT smaller.......square instead of round. The package said Party Pack but they wouldn't come close to feeding a group of people. With frozen food I always add more veggies, sauce and cheese. Thank heavens for the coupon, we won't be buying that again. We had a salad with it as well. I made an apple crostata for desset.

Patti, I'm so sorry you and Harry are having these health issues right now. You will be greatly missed and will be in our thoughts and prayers for healthier times ahead. Please, please take care of yourself.

I've lurked a long time and have just begun to post a bit. I admire the way you are dealing with your health challenges. I'm a breast cancer patient and can certainly empathize. I'm lucky that my husband is healthy, but not always helpful.

Dinner for us is one gorgeous, homegrown beefsteak tomato on BLT's with tomato and roasted red pepper bisque.

Oh Patti you are so sweet, it's time to just think of you and Harry! We will miss you terribly but prefer you focus on your health. You are such a trooper!

I made a big pot of gumbo today, chicken, okra, sausage and shrimp. Oh lord it is good! We have been craving it for a while now so it really hit the spot.
Have enough for a few meals.

Patti, I hope you and Harry both are feeling better soon. We are having hamburgers tonight. I'm eating mine without a bun, partly because I'm dieting & don't need the extra calories and partly because we only have one left and I see no need to buy a whole pkg and have to find ways to use them up. I think I'll fix a salad too.

Patti, take care of yourself and Harry. I will miss your posts; I have very much enjoyed reading your daily "what's for dinner" postings. Dinner for us today is BBQed beef patties and roasted veggies (sweet potatoes, parsnips, rutabaga and onions). Also a glass of white wine.

Awe Patti...Rest and breaks are needed!

Just finished Bean and Cheese enchiladas...

Also just finished a batch of english muffins...still have to fry sausage patties and make eggs for the husbands breakfast sands...and bake some cchip cookies...dough is in the fridge..

My house is full of yummy smells, but the kitchen is a disaster...lol

Patti ~ holding you and Harry close to my heart! I do so wish we could do more. You are such a big part of this KT family!

Leftovers tonight. Not cooking again until I see clean shelves in the fridge. There is crock pot cube steaks, pork roast hash, beef ribs, baked beans, roasted veggies, corn on the cob ... not sure what else.
