Had pancakes n eggs tonite. Had our first snow flurries today, nothing major.

My favorite dinner--and Harry's, too. I don't "do" breakfast, so when he gets pancakes and eggs, he's in heaven!!

We're having fried chicken strips. I love them dipped in Ranch dressing.

Cream of potato soup with rivals and had crackers and for dessert some canned mandarin oranges.

I have a pot of beef stew/soup combo on the stove. I picked up a couple of fresh cut mixes at the grocery store that had cabbage, onions, celery, potato, corn, etc I added some browned stew meat and a few extra additions to the pot and that is going to be dinner. It looks good hope it tastes good too.

I was going to do my cottage roll (pickled ham) in the slow cooker and scalloped potatoes today but put it off till tomorrow instead.

I had a bag of Arctic Gardens frozen Asian veggies that I picked up for Free with a coupon. Thought this would be a good nite to cook some rice, stir-fry the veggies with soy sauce, sesame oil, and heated up some chicken.

The veggies were awful. We ate dinner but blech. The price was right, so now we know. We aren't big frozen veggie eaters......just peas and corn.

Gino's deep dish sausage patty pizza (frozen) and a salad. Easy dinner tonight!

We had smoked sausage and cabbage. I cook my cabbage with lots of onions, caraway and some fennel. We didn't have a lot of time due to trying to settle the kittens in.....what fun! I forgot just how much fun (multiple) kittens are.

I'll have some fried green tomatoes, please. Ravencajun, I've never seen that mix of vegetables before, but I'll sure be on the lookout for them.

Jas, I hate when that happens. It's usually when I'm not into cooking dinner.

We had white chili tonight. So good. I would have loved to have had some of your cornbread Patti and thought about baking some but I hung tough because I'm trying to drop a few pounds before the real eating frenzy begins. For the next week, dinners will be a little unimaginative. I hope it pays off. LOL

I came home from work exhausted, and had a bowl of cereal....14 two year olds can make an old woman tired....yeah, they aren't potty trained.

Threw this together last night. Was really good. And easy!

Easy Homemade Cream of Spinach Soup

* Servings: 4-6

Ingredients

o 16 ounces frozen chopped spinach (or fresh)
o 1 1/2 cups water
o 3 tablespoons butter
o 1/4 cup flour
o 3 teaspoons chicken bouillon granules (or 3 cubes)
o 3 cups milk
o 1/2 teaspoon garlic powder (optional)
o 1 teaspoon salt
o 1/2 teaspoon pepper, to taste

Directions

1. In a medium saucepan combine water and spinach.
2. Cook till tender; do not drain.
3. In a large saucepan melt the butter on medium low heat.
4. Stir in flour until smooth.
5. Whisk in hot milk and bouillon.
6. Cook until beginning to thicken, then add spinach mixture.
7. Season to taste.
