Finally--egg salad! We'll have cottage cheese and tomatoes with it.

What are you having for dinner this beautiful college football evening?

Me too for the egg salad. Put it on whole wheat bread along with lettuce and tomato. That along with freshly made turkey noodle soup, and a slice of cantaloupe. It was pretty to look at and great to eat.

I really don't know, Cheryl and I are still canning salsa! 16 pints and a quart so far today, still have some to can. She will go home soon and I will finish up.

No dinner tonight. We went to a birthday brunch, ate too much, and have been dragging around all day. Neither one of us are used to eating heavily at 10:30 in the morning. Left there and went to Costco since we were close, Fred Meyer (there isn't one here locally) then home and had company for a while. Brunch was at a casino. The food is good, I had bacon and tomato omelet, more. And I did gamble a little before we left. I had almost lost my $20, won it back so played some more (slots) and that time I did lose it. DH lost his $5 on a penny machine and quit :) We're not gamblers, and I must say, its a lot more fun when I can break even or win a little. My SIL had begun with $200 and was up to almost $700 in winnings when we left, she has more disposable income than I feel I do.

Gosh, everyone's dinner sounds so good! I swear that I'm going to get a slow cooker; I must be one of the few that don't. I'm looking forward to those cool autumn evenings. I sort of miss our little outdoor chiminea....it was enjoyable to sit around a fire and chat over drinks. Jasdip, my eyes are FABULOUS! My vision gets sharper and brighter every day. I asked Robert this evening if he noticed that the TV reception had improved and he just laughed at me. I simply cannot believe that I have this vision out of my own eyes. My doctor somehow managed to finess my new lenses so that I feel like I have almost infinite far vision but still can see well enough close up that I've only needed readers for very small print. I can put on my makeup, read most things without my new little readers. I will donate all of my eye glasses next week. Pretty amazing. I had him, his technician, and myself dabbing our eyes last week at a checkup visit after my second surgery. I made him stop what he was going, I took his hand in mine, leaned close to him and told him how much my new vision meant to me, someone who had really been so burdened by terrible vision since I was a little, tiny girl. I wanted him to know that my life was changed.

Yes, nasty wet snow out, probably got 6 inches on top of what we had already. I don't have to get out so it doesn't bother me. I was looking for my two big muffin pans, they each hold 24 and in the process started cleaning on my pantry. I did find the pans and will use them Tuesday for my rolls I have to bake. Supper was more of the leftover potato soup and I made a new pie dough and baked a little of it and am putting instant vanilla pudding over it and will try that. I liked the crust. Thanks, Terri. No wonder you don't feel like cooking after all that baking and cooking your did over the holidays. I hope you're just tired and not coming down with something. (Fingers crossed!) Thanks, Pam. The only thing that happened was I got that cold/sore throat that's going around, but with my compromised immune system (whatever that means), it knocked me for a loop and I spent over 2 weeks in bed--half the time barely able to drink due to the sore throat. It sure feels good to feel half way decent!! I'm sure sorry about your sister and it must be hard on you taking care of her when you aren't used to it. So nice of your DH to be helping you out--a lot of men wouldn't. Enjoy the French toast! Hi, Mary--thank you. I haven't seen you posting much lately and was hoping you are feeling okay. I sure don't envy you that 22 degree weather. Ick! I think I have meatballs in the freezer i made earlier. I'll have to check. Shirley, thank you. Yes, I think I'll be living on Stouffer's until I get a little stronger. Still a lot I can't eat but, hey, I'm getting there one bite at a time. Can't wait for a fried egg sandwich! Woohoo!! As much as I like to cook, I can see cooking for one is going to be problematic! Had I been there, the GN bean soup would also be gone :-)

Yea, for egg salad sandwiches!! Mine was so good the other day, I'm craving another!

Niki's by the farmer's market: veal cutlet, theirs is so good, and I chose navy beans over 7 layer salad.

Their sweet potato pie was calling my name, but will power kicked in! Thank you very much!

I jumped on the egg salad band wagon too. On dark whole wheat bread. Also had cottage cheese and sliced fresh-out of a neighbor/friend's-garden tomato. I made blueberry muffins this afternoon so had one of those for pre-dessert. Ice cram later.

I had a peanut butter sandwich, a banana and a glass of milk. We ended up canning today, 23 pints, 7 quarts and a jelly jar of salsa. Tomorrow preparing for a family dinner at Amber and Mike's while the men work on the chicken house some more.

Just look what Glenda started! I was debating between finishing up the egg salad or the spaghetti. Spaghetti won. I put a pat of butter in a bowl with a little vermouth and melted the butter than heated up the shrimp and spaghetti. The spaghetti had soaked up all the clam sauce so this just helped to refresh it. Yum!

I had very salty french fries...hubby had the fries and Jake's Special..double cheeseburger with grilled onions..
It's the only reason he likes going to this particular football field...lol
Kam's team won 40-0...BTW

Then stopped at Taco Bell and got the boys tacos when we made it back into town..
