I made myself a salad by topping a bed of romaine lettuce with homemade chicken salad. Then I took a hamburger patty and put sauteed mushrooms on top, and added a side of leftover pork n beans.

Left-over chicken and dumplings and fresh pineapple for dessert. I feel well-fed!

Rhizo, hope you're finished in time for the movie. Those kabobs sure sound yummy! YogaLady, does that mean we won't see your sweet self for a few days? Today was a gloriously sunny day and for some reason I was in the mood for cooking and baking. I made my regular 2 loaves of bread and I had a bunch of ham stock from my boiled ham yesterday. So I made a big pot of cabbage soup and another pot of potato soup, using some ham stock. I also threw some ham pieces in the potato soup. We had a well-done roast of beef with carrots around it. I boiled some Yukon Gold and a sweet potato. While the oven was on, I made some butter tart squares. Here are the fruits of my labour today!

Just put a pan of enchilada casserole in the oven. Made 10 min enchilada sauce, used left over pulled pork, cream cheese and cheddar plus pepper jack as the filling, layered between corn tortillas..rest of the sauce on top, and covered with foil..more cheddar at the end.. I have some cookie dough warming a bit from last weekend to get some jam pin wheels baked up..and still have gingerbread dough to cut out too..

Don't think it got past 29F today.. We went and did our Costco shopping today...and then a trip to Safeway..for a few things then to Albertsons for hubbies meds...and deli chicken.. 23F when we got in the car to head home for the night at 5:30... 7:13 pm right now..21F... I just topped off my chicken breast and 3 jojo's with a Halo. :) I like them better than the Cuties...probably the exact same thing...but Halo's taste better.

GS had a ballgame at 12:30, so I stopped by a new deli, Jimmy John's and got a tuna salad sandwich.

After game, a mother from the other team, tapped me on the shoulder and wanted to know what kind of sandwich I was eating. Said when I took the first half out to eat,, the smell had everyone drooling around her. And when I had the second half someone said they had to know :o)

T'was good, but I didn't know it drew so much attention while I was eating it. lol

We went out to an Irish-themed tasting dinner. Had salmon patties, shepherd's pie, corned beef and potatoes, bubble and squeak with sausage and a chocolate Guinness parfait. Quite tasty and a treat!

Gadgets I am not sure where I read or heard what to do with it. It was either googled or from my brother who knows a lot about saving food. I think he learned it from my DM. Tonight I had the second piece that was supposed to be my DH until he told me he was going to be gone and it was just as delicious. I just used flour and Lawry seasoning salt and fried it. I think I have about 8 more pieces. Because we are Catholic I will try to use them during lent now on Friday's because we don't eat meat.

Hubby wanted hamburgers and we had no buns. As I was making bread I tried making one loaf into hamburger buns.
They turned out great!

Had cheeseburgers with a slice of Spanish onion, tomatoes and lettuce and roasted carrots and parsnips and potato slices. Delicious
