I put together the chicken / wine / mushroom dish last night to pop in the oven tonight for dinner.

Party Bake Pork Chops
Betty Crocker New Dinner For Two Cookbook copyright 1964

4 lean pork chops, 1" thick
4 thin slices onion
1/4 cup uncooked rice (not instant)
1 can (1 lb. 13 oz.) tomatoes
1/2 to 1 tsp. salt
pepper

Trim any excess fat from chops. Season chops well on both sides with salt and pepper. Brown on both sides in lightly greased hot skillet. Top each chop with a slice of onion, 1 tbsp rice, and cover with whole tomatoes. Add any remaining tomatoes and juice to skillet. Cover tightly; simmer over low heat or bake in foil covered baking dish at 350 degrees for 1 1/2 hours or until tender.
4 servings.

How I do it.

I don't brown the chops. I put them in an oblong baking dish and put sliced onions on them and then I rinse my oriental rice (Calrose or Hinode) to remove the talc. It won't hurt if you have a little extra rice. Then I take a large can of whole tomatoes and break them up all over the pork chops. I add some water to the can to get the rest of the juice and then cover with foil and bake. This is delicious served with soy sauce to taste. From Nita AZ

8 chicken breasts (I used thighs as we like those better) Coat them with grated parmesan cheese. Then dip into beaten eggs (I used 3 eggs). Then coat them with Italian bread crumbs.

In a fry pan with some oil brown the chicken on both sides and remove to an oblong pan. Place a slice of Swiss cheese on each piece of chicken.

In another fry pan melt a stick of butter and then add 1 pound of sliced mushrooms. Heat for a minute or two and then add 1 cup of white wine. Stir together for about a minute or two. Pour this over the chicken.

Bake at 325 degrees for one hour. This is better if it is put together a day or two before baking to let the wine meld with the chicken. My friend covered it before baking so that is what I did. I didn't want the wonderful juice to evaporate while cooking.

I should have put this together yesterday but didn't. I did do it earlier today so it has sat for at least 5 hours. I am planning on serving the juices and mushrooms in the pan over the steamed rice.

Thanks. Thanks for giving the real recipe and especially the way you cook it. Often the amended way is much tastier than the original recipe. I really like pork chops but have trouble finding recipes that don't dry them out. I'll try this one.

I love to cook and can do fancy or simple. My friends love to come over for dinner. When I put out an invite nobody refuses. LOL I had 15 here for spaghetti dinner on Sunday and got rave reviews. It makes me happy to see my friends and family enjoy what I have prepared.

I think the next time I make the chicken I am going to double the sauce so there will be plenty to pour over the rice. When we had it at my friends there was a lot of juice but when I made it on Saturday there was just barely enough.
