What's For Supper?

I don't know as I am really fixing anything for myself for supper. Amber and I had a late lunch from Bob Evans and I am still not even the least bit hungry. We tried to hurry though the grocery and we did, a lot of things we both planned to get was not on the shelves. Then they only had 3 check outs open other than the "speedy" check outs or the check out yourself ones, so it was wait to be checked out. I can't say any real bargains for today. I did get two quarts of strawberries cleaned for supper. I don't even know if I want any. It is now up to 81 here, sure could take a nap but too late in the day. I guess Izzi doesn't know that :) Hope your day has been a good one and do you have plans for supper?

Nothing...nada.
We went over to Benihana for a late lunch today...had hibachi filet mignon.

Too full to eat another meal.

We are having Blackened Salmon...I really love it and it's so easy...My husband is staying away from carbs for a few weeks so I am going to make him a salad and I'm not sure what else...

rhizo, do you mean that you sub'd sliced zucchini for the lasagna noodles, or that you added zucchini to the meat & cheese filling? either way sounds good. Quick dinner here too -- hot day, so I made tuna & pasta salad, sweet corn, and sliced tomatoes and zucchini.

Your chicken sounds good, jasdip. I brought some Napa the other day, for a stirfry. I like it, when I can remember to pick some up. Hi, Kath....I'm so sorry that you resort to frozen dinners; that's not much fun and not healthy, if you do it often. I think that "just you" is important! But I have friends who stopped cooking entirely the minute they could. I appreciate that. Sounds like my kind of meal, satine! Almost any kind of meat tastes better with a salad under it, lol. Ellendi, leftovers are a treat, aren't they? Most of my meals are planned with leftovers in mind.

Each day of the week has a theme that I follow, and Monday is "Big Meal". That means a large cut of meat so there are leftovers for lunches/sandwiches/stir-fry, and possibly enough for the freezer, and possibly the base for soup. Last night was ham, fresh pole beans from the garden in "Spicy Asian Green Beans". Also from the garden - Potatoes O'Brian (with onions & peppers), a gluten-free banana muffin (from the freezer), and for dessert - I made a 3-minute Microwave Apple Crisp with a Jonathan apple, some raisins, palm sugar, apple pie spice, and a dab of butter. Served with a little whipping cream and homemade granola on the top - which is a Q&E substitute for Apple Pie and Ice Cream at our house (I hate to make pies so I fake them when possible ;-).

I know it is Tuesday but I am so excited about the Chicken Tortilla soup in the Crock Pot right now. Will deep fry some flour tortillas and have avocado and sour cream on top. Added black beans, corn and black olives. Have lime flavored rice, hominy and quinoa so everyone can choose what they want to eat it over or if they just want it as is. It smells so good and I am not even hungry. DH and I went out for Brunch before we voted. Last night we had grilled ham and cheese because I was feeling lazy.

Just finished, I grilled chicken kabobs....chicken with chunks of red pepper, red onion, whole mushrooms & fresh pineapple. Yummy!

Friend took me to a mom and pops Italian Eatery as a birthday gift.

She had beef ravioli and I had Italian peppers and onions BUT the best part was the olive dip with freshly baked bread.

Yummy to the tummy!

I am making tacos...it is so hot here today that I thought it was something easy and won't heat up the trailer! We are leaving friday at noon to head home so don't want to get alot of leftovers and such in the fridge til we get back....STacy

I had a larger than usual lunch so just heated up some homemade vegetable soup and spread some chicken salad on a Wasa crispbread for my evening meal. Will have some fresh melon later on.

I had stew going in the slow cooker (tvp, baby potatoes and carrots, fresh beans from the garden, some corn, and a few mushrooms I wanted to use up). Added some vegan bouillon and let it cook all day. I have one of those really little slow cookers and I just love it.

Once I got home, I added a "slurry" of flour and water and let it thicken while I made a salad and garlic bread.

Bacon Cheeseburgers,Chips and ranch dip.Very easy and doesnt heat up the house.

Linda--that sounds delish! We had a boneless, skinless chicken breast I dredged in flour, browned then finished off in the oven. Leftover zucchini stuff and sliced tomatoes. Made that summer torte this morning so we even had dessert tonight.

Leftover buffalo ribs -- I made them last night and they were yummy! Very meaty and tasty and much leaner than beef ribs. Also some potato salad and a green salad with some early girl tomatoes from the garden.

I marinated some chicken breast in a bottled marinade, Carribean Jerk, and made some rice and served it with pineapple. However, as I expected, DS#1 and I were the only ones interested in that. So I didn't make much anyway. I let the other kids have hotdogs and DH found some leftovers.

Yesterday I put a pork tenderloin in the crock pot all day. It was one of those pre-seasoned ones from the grocery, mesquite bbq. It cooked so well, fell apart, and was delicious for bbq sandwiches! That's what I had for lunch, too. ;o)

DH just got back home from his 2 1/2 week driving trip to the Midwest. I made his favorites; spinach lasagna, home made sour dough bread and rice pudding.
