The hurricane rains and winds approach... Here in the close-in D.C. suburbs, it's looking like we'll get a ton of rain and outages, but who knows! We DID have a crazy earthquake, and who would've expected that!

But amid that, a so-important request!

I don't bake -- I've admitted here before I barely cook -- but I decided to mix up a batch of box-mix brownies last night.

Tho the box says you can use a 9x13 pan, my results (way too flat brownies) show that's not a good idea. I also used a Pyrex pan; my oven is gas, and it's so old that it's probably not temperature-calibrated properly, so I know those things affected them. I took a hint from the Web that for a glass pan, I should lower the temperature stated on the box mix and baked it just a bit longer. I haven't tasted them yet.

So box mix or from scratch, what are the factors that make your brownies come out great every time?

This is the first batch I've made in many years, and it's unlikely I'll be doing it more than once in a blue moon, but when I do, I'd like to do it better!
