What's on the dinner table for Monday?

Humid day today. I was awake for an hour in the middle of the nite because of the massive thunder and lightning. I ran around and unplugged the computer, modem, etc and closed the windows.

Tonite we had sausages with sauerkraut, baked potato, and a bowl of Asian coleslaw. It's our favourite summer coleslaw.
I'll have some fresh strawberries and milk with my tea.

Chicken tempura, pork and beans, frozen French fries and green salad. I am not excited.

Not sure yet. DH just called and said he had a sore throat and was heading to the walk-in.
I was planning salad with turkey, but may hold off as Dh wants soup.
Jasdip, how do you make your asian cole slaw? I just made sesame broccoli for my DD. Equal parts of sesame oil, soy sauce, rice vinegar, honey. Toast sesame seeds and combine. It's supposed to marinate at room temp for 30 minute to 2 hours but we ate it after 15 minutes.

LuAnn, isn't couscous a nice diversion from the regular side stuff. Wish I'd remember it more often :-) Shirley, every once in a while I get a great urge for tuna casserole. I like the kind with potato chips on top. Wish you could've been here--we have leftover salad. Raven, I think a taco salad will be on the menu soon. Haven't had them for such a long time! Marilyn, where is everybody--you usually have a houseful or are cooking! Guess you're busy sewing these days. How was Allysa's birthday? Pam, I know what you mean--before we moved to the sticks we took Publix pretty much for granted. After we moved to no-man's-land the reality set in! We had this tiny little store that barely had a produce department and overpriced off-brand canned stuff. I'm very grateful to be back in civilization :-) But our store is always full of customers and not one of them is under 60. I swear it's their daily entertainment to see and be seen at Publix. Love your description of "mushy fried potatoes". To me that translates as perfect potatoes! Stacey, that's a good idea to cook the pasta separately. Never thought of that! I agree that tarragon and chicken go well together. While I was chopping it tonight, I remember a creamy tarragon chicken recipe that's served over rice, so before the tarragon bites the dust, I plan to have that one night. Mom24, you lucky ladies who have husbands who cook need to share your secret on how that happens! That caccatorie sounds delicious. Phyllis, your leftovers are probably 10 times better than anything I make. Enjoy!! (I like leftovers, too.)

I fixed a big salad with all kinds of green stuff plus grapes, manderines, hard boiled eggs, sunflower seeds, toasted almonds. I whipped up a quickie wasabi mustard vinaigrette. Sometimes, a salad is the only thing that will do! But, I know that some of the meals mentioned tonight are going to be on our table soon. I love Mediterranean pasta....just think Greek instead of Italian. I always add canned artichokes to mine, along with the other usual ingredients. Wonderful with chicken or shrimp. You can use canned chopped tomatoes, too.

Shirley/Jasdip, I hope Georgysmom posts how she does hers. I usually get 3 rather large baking potatoes and bake them until they're tender. Let cool a little. Cut in half and scoop out most of the pulp and grate it with a box grater. I add butter, S&P, a little milk, grated cheddar and chopped green onions. Mix it together and refill the potato shells. You can put whatever you like in them. Then I put them on a baking sheet, freeze them and transfer them to a freezer bag. (I seal mine now with the Food Saver.) Then just use them when we want one. I don't defrost--just bake at 350 for 30-40 minutes, I think. I usually don't add sour cream until they're ready to go on the table because it tends to break down. But I've never tried it--maybe it doesn't.

Here it is Grams. This only makes about 2 big bowls, I double the recipe (for just 2 of us)......Angelaid Crockpot French Onion Soup 2 cans of beef broth 3 T butter 2 yellow onions 1/2 T granulated sugar 1/4 cup cooking sherry 1/2 t kosher salt (you might need more if your butter isn't salted) slices of brown rice bread (or french bread) gruyere cheese (swiss could work too) Heat your crockpot to high and plop your butter in to start melting slice the yellow onions into rings break up the onion slices with your fingers, and rub them around in the melted butter add the beef broth, sugar, salt, and sherry cook on high for 6-8 hours or low for 10-12. It takes a while for the onions to get translucent and pliable Before serving: --preheat oven to the broiling option --toast 4 slices of the bread that you are going to use. That Trader Joe's brown rice bread needed to be toasted twice in my toaster to get to the desired crunchiness. --cut gruyere cheese into slices --put the cheese onto the toasted bread, and carefully float the bread and cheese on the top of the soup --remove stoneware from crockpot and place the UNCOVERED stoneware into the oven --broil for a minute or two--the cheese should be all melty and turn a golden color ladle into 4 bowls.

It's rained lightly off/on here in Ohio. Supposed to be chances of more tomorrow plus severe stuff. They can keep it all as far as I'm concerned.

I had Bulgar Casserole and a salad tonight.

Hi Ellen,
It's shredded napa cabbage and onion.
You crush ramen noodles (throw out the seasoning package) and brown with sliced almonds and sesame seeds.
The dressing is oil, sugar, vinegar and soy sauce.
The salad is addicting to us!

A few showers this morning so I went to the thrift store and bought 4 tops and a light rain coat - great deals!

After lunch I hiked the Signal Hill trail, did a load of laundry, vacuumed and got the garbage & recyclables ready for tomorrow's pickup.

Supper was planked salmon, roasted mini potatoes, asparagus and broccoli. Yummy!!

jasdip, my Dad loved that Asian salad and made it the same as you!

lol @ pam and the lack of excitement. ;^)

Rain on and off all day here too. I've been doing all the cooking lately, so my BF is making chili and a garden salad for us for dinner tonight. :)

St. Louis style ribs on the grill and potato salad. I make my potato salad a bit spicy (Spanish paprika), so I added white chocolate pudding.

I jus had a Marie Callender Salisbury Steak dinner
It ws ok I like her Sweet and Sour Chicken better. I dont cook anymore since it's only me

Made a marinade with sesame oil, peanut oil, rice wine vinegar, brown sugar, minced ginger, etc., and put a hunk of salmon in earlier this afternoon.

He's grilling it in the fish basket and I've got some rice and mixed grains ready and some yummy sauteed baby pattypan and zucchini.

Since I was tired from working in the garden today, I just had a leftover chicken breast, cottage cheese and a glass of milk. The chickens are in earlier for a change, so now I can go to bed. There was no rain to speak of today, just a few sprinkles. Overcast and breezy most of the day.

Oh no, I forgot to comment on everyone's dinner! They ALL sound great.

I will say that I see that Casey is eating potatoes! LOL

I have never had chicken marsala, I keep saying I'm going to, but I forget about it. I'm assuming you use a dry marsala, Matti?

OldFixer, always nice to have a job where you can skip out to seek the sun! I'm laughing about the rum cake every night.... you made it, right? Is it the kind that's like a pound cake soaked with a sugar-rum glaze, or is it the Italian version with a yellow cake split into many layers and filled with various pudding/fruit/rum mixes, or is it something else entirely?

Waldorf salad....isn't that with apples, sour cream, walnuts, and maybe grapes? If that's what I'm thinking of, that does sound good!

Nothing for dinner here. Had a late T-time and followed it with a very late lunchÃ¢ÂÂ¦.chicken quesadilla. Had to go out and play Mexican train tonight. Didn't even get to at my leftover brunch food.

Jasdip, chicken marsala is very easy to make. Right up there with chicken picata.

The rum cake is just a yellow cake w/pudding mix, chopped walnuts on top, 1/2 cup of rum in the batter. Then soaked with the rum glaze, another 1/2 cup.

LOL jasdip - I like those mini potatoes, only 80 calories in 5 and since I slice them in half it's like eating 10. But I only eat them maybe twice a month.

OldFixer, that sounds pretty good!

jasdip, I like the version of Waldorf Salad that uses apples, walnuts, celery, and slightly sweetened whipped heavy cream! yum!!! :)
