Beeen craving a quesadilla, so went to a Mexican restaurant, I had never been to, very popular, and ordered one a la carte. T'was ok! Had a white cheesie sauce on top, nothing else but the cooked beef.

No pool, still due to storm that flooded and muddied the pool. Poor souls spent 15 hrs yesterday cleaning the big one, and now they are working on the lap pool, where we exercise.

I made pulled chicken today. Put some of that on a whole wheat slider bun, and had a side dish of cracker dressing.

I would love to be a guest at your table tonight, Patti. Coconut cream and lemon pies are tied as my favorites.

Patti, I sent that rain to you, we had a beautiful day here & it was in the 80's.
After work we started to cut down some of our perennial flowers so they can bloom again. With everything in bloom the hummingbirds are eating like crazy. I love to watch them before work
Dinner was just hot dogs.

Plans to have roast Italian pork sandwiches at their Feast....but around 4 this afternoon, a cold, soaker of rain changed our plans.
So....we went to Cracker Barrel.

Country ham, fried apples and greens with those heavenly biscuits.

Glenda, I don't think I've ever seen quesadillas with sauce on top. Harry orders them often when we eat out. I bought a quesadilla maker to make them at home, but the results were iffy. Can't put a lot of filling in them or they make a mess.

Shirley, your dinner sounds great, but you would be welcomed here, too. Someday I have to learn I'm not cooking for a crowd!

Thanks for the rain, Mary. Glad you got to dry out a little, anyway. My Sis-I-L had 5 feeders on her porch and those hummers were just thick. They have to fill them several times a day. When we were there it must've been dinner time because every feeder had at least 3 birds and they were so thick in the trees you could easily see the little things. It was a sight!! They weren't even trying to fight each other off.

Was my first to have a cheese sauce on the top.
And it was one big tortilla folded in half.

I like it with two tortilla's with cheese and meat inbetween and crispy on both sides. That's what I was wanting.

Two other Mexican restaurants fold theirs with other fillings.

Picked up some chicken on the way home from the doctors.

Monica, sorry you didn't get to go to your festival. Will they have a rain date? I love those fried apples at Cracker Barrel.

Glenda, that's another thing I've never seen--a folded quesadilla. Not that the cheese sauce didn't sound good, because it did. Just never have seen it that way.

I braised a pot roast and filled the pot with onions, carrots, and rutabaga. One of Robert's favorites.

We had rain today and it was wonderful!! That doesn't happen very often!! We just finished dinner which consisted of bean and cheese enchiladas, sliced tomatoes and steamed veggies. Very simple and easy but delicious!

Patti, I used to think chicken salad with grapes sounded terrible until my friend served that at a lunch. I was surprised how good it was! And I LOVE anything coconut!

Glenda, I love Mexican food and quesadillas. I don't think I've ever had a cheese sauce on top, but I bet it was good. I love fresh guacamole and salsa to dip mine in. Ones at the restaurant always seem to be better-probably use a lot of butter!

Went to my mom's house tonight for dinner. She made her chicken divan which was good as usual. Her sauce always turns out perfect-mine is never the same twice. She normally uses brocolli in the casserole, but only had a small amount and used sugar snap peas for the rest. Was okay, but I wouldn't use that combination again.

My favorite chicken salad is Ms Myra's: smoked chicken salad, shredded, finely chopped celery, mayo. Tobasco sauce, with crackers. My kind of chicken salad.

Teresa, I need to make chicken divan soon. Harry really likes it and it would get one of his 3 green leafy vegetables in for the week. (Coumadin) I love anything coconut, too. Especially pina coladas :0

Glenda I make chopped chicken salad with little bits of celery, green pepper and onion--more celery than the others. Guess I could add a dash of liquid smoke to it--I'll have to try. We eat that as sliders on little rolls. Used to take them on Sunday's when we were boating.

liquid smoke would ruin it, patti!

gotta be smoked over real wood :o)
