DH and I ran some errands this morning. He had a certificate for $60.00 at Pier I so we bought some things for DD..........napkins, beaded butterfly napkin rings, placemats and matching plates. I'll put them away for
Christmas. Then we went to a farm stand and bought some fruit. I've been doing laundry, listening to the Canadian open while researching bathrooms on the web. We're going to start a remodel on the Master bath. I've been talking about it for two years, but holding off until DH was willing to give in and do a complete remodel. He called in some bathroom remodelers and now thinks it was his idea! The games we must play....LOL

We're having Cobb salad and some cornbread.

Wes is on a wilderness/mountain man pre-1750 type camping trip so he'll be having roots and berries and twigs, LOL, and some venison. I have leftover pulled beef and three hotdogs in the fridge. I make "something."

I've done nothing today. I had great plans but they never got put into action. I'm fixing a box to mail to Mom, and may "play" in the sewing room a bit.

They said rain but were wrong just hot & clouds.

The day was spent outside doing work in the flower beds & veggie garden. Did do some house cleaning when I came in.

Dinner was ham steak with baked potato & a salad for hubby, have to use those tomatoes from the garden.

I've never had chicken parmesan before. Care to share the recipe if you like it.

I cooked fresh green beans, potatoes and ham. We've had too much rain in the last 5 to 6 wks. The beans I bought in Amish country looked young, but were tough and stringy.

Gadgets, chicken parm is just breaded chicken breast with mozzarella cheese melted on top and some tomato sauce spooned on top. It's so easy, and a nice meal to make on the stove top.

It rained on and off all day, temps are definitely cooler. We watched the Canadian Open. Georgysmom, did you see that Hunter Mahan was in the lead, then withdrew today because his wife went into labour? She's 3 weeks early.

I wanted to start using my minced garlic that I bought at Costco, so I made pasta with garlic, red pepper flakes and olive oil. Had it with basa fish.

We ordered pizza late this afternoon, so was lunch/supper combined. I have been sick for several weeks, so cooking has not been something I feel like doing. Hope to get back in the groove soon. Tired of all the meds.

Georgysmom, I just love Pier I, but haven't been there for ages. Lucky daughter!! Have fun planning your new bath. I'd love to have some stuff done in my kitchen. Maybe later this fall.

Caroline, you should've come over. I only thawed one chicken breast but by the time I finished pounding it out, I had enough for 4 people with good appetites. Had to laugh about your DH out in the wilds eating berries :-)

Shirley, I basically followed Tyler Florence's recipe for the chicken but used jarred sauce. His sauce would've been better. Here is his recipe:

Tyler Florence's Chicken Parmesan

1/4 cup extra-virgin olive oil, plus 3 tablespoons
1 medium onion, chopped
2 garlic cloves, minced
2 bay leaves
1/2 cup kalamata olives, pitted
1/2 bunch fresh basil leaves
2 (28-ounce) cans whole peeled tomatoes, drained and hand-crushed
Pinch sugar
Kosher salt and freshly ground black pepper

4 skinless, boneless, chicken breasts (about 11/2 pounds)
1/2 cup all-purpose flour
2 large eggs, lightly beaten
1 tablespoon water
1 cup dried bread crumbs
1 (8-ounce) ball fresh buffalo mozzarella, water drained
Freshly grated Parmesan
1 pound spaghetti pasta, cooked al dente

Coat a saute pan with olive oil and place over medium heat. When the oil gets hazy, add the onions, garlic, and bay leaves; cook and stir for 5 minutes until fragrant and soft. Add the olives and some hand-torn basil. Carefully add the tomatoes (nothing splashes like tomatoes), cook and stir until the liquid is cooked down and the sauce is thick, about 15 minutes; season with sugar, salt and pepper. Lower the heat, cover, and keep warm.
Preheat the oven to 450 degrees F. Get the ingredients together for the chicken so you have a little assembly line. Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them. Pound the chicken breasts with a flat meat mallet, until they are about 1/2-inch thick. Put the flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly. In a wide bowl, combine the eggs and water, beat until frothy. Put the bread crumbs on a plate, season with salt and pepper.
Heat 3 tablespoons of olive oil over medium-high flame in a large oven-proof skillet. Lightly dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off, then dredge in the bread crumbs. When the oil is nice and hot, add the cutlets and fry for 4 minutes on each side until golden and crusty, turning once.
Ladle the tomato-olive sauce over the chicken and sprinkle with mozzarella, Parmesan, and basil. Bake the Chicken Parmesan for 15 minutes or until the cheese is bubbly. Serve hot with spaghetti.

Jasdip, how did you like the garlic? Is basa fish that fish from Vietnam? I've heard of it, but never had it. Know you're happy to be cool again--not that you aren't always cool--well, you know what I mean.

Jas, I love Hunter McMahon. So sorry he had to withdraw. I can certainly understand his withdrawing but I kept thinking maybe it's only premature labor. Wouldn't that be sad! Here's hoping it's not and that it's a healthy, happy baby.

Scalloped potatoes, left-over steak, and snow grapes. I'd have been happy just eating the latter, but felt the old bod needed some regular food, too.

We were out shopping and decided to go to the Katzs deli for dinner. Boy it sure was good, they make their own potato chips too I love those. Their sandwiches are awesome.

We are in Topeka, KS and met with JoAnn KS and Stoneybaloney. Lots of great things to eat at lunch time.

This afternoon after leaving JoAnn's house we stopped at Sonic for burgers. We ate them in the motor home along with a drink. Now we are having some fudge that we bought in Michigan.

We will be home on Wednesday.

There's a little grist mill not too far from us in Tennessee....Falls Mills. That is the only place from which we buy our corn meal and grits.....yes, it DOES make a difference! They also make a whole wheat pancake and biscuit mix that's fabulous.

Last night, Robert wanted pancakes for supper! Actually, he mentioned pancakes and bacon before he even got out of bed in the morning, lol.

So, wholewheat blueberry or pecan pancakes it was, with NY State maple syrup that my brother sends us. A treat!!

Patti, yes the Basa fish is from Vietnam. I bought some a while ago when it was on sale for 1/2 price and we love it. They're large fillets, all white meat and boneless. Takes just a few minutes to spice up and cook in a non-stick skillet. After buying it the first time, we went back and bought a bunch more while it was on sale.
