Dinner was left over chicken noodle soup, nothing fancy as I wanted to finish my fall cleaning.

LASAGNA! Haven't made that in 10 years. The fat pan should be worth 3-4 meals. You need a good snort of booze. Or two.

We're having a Stouffer's lasagna "with meat sauce" (and extra shredded cheese).

The veg is collard greens, with a bit a fresh, crispy bacon, a dash of red pepper flakes, and a splash of vinegar added for flavor.

I hope a good night's rest will help you feel better Patti. Well, Alyssa has been here since noon and Cheryl too. We watched her while Mommy and Daddy did some shopping. When they came home they brought a big KFC meal for the family and some macaroni salad, pecan pie and a pretty decorated cake from the store. I did not have any pie just a small piece of the cake. Everyone just went home.

I made chicken breasts in enchilada sauce.
Just throw frozen chicken breasts in crockpot
add can of green enchilada sauce and set on high
approx 5 hours. Try adding carrots and potatoes
for a one pot meal. Easy and tasty.

Kittiesmom, I never would've thought of marsala sauce on steak but it's a wonderful idea. I always double the sauce because I want it on everything!!

Terri, be still my heart!! I'm so happy to see you serve something you didn't make from scratch--takes away my guilt feelings :-) I think to myself I should be cooking like you. After all, you have the kids, a job, sports, running kids to school functions and still find time to make bread, cookies, etc.

K (okay if I just call you K?) I copied and pasted your dinner for the days ahead. I have a jar of green enchilada sauce I bought for something and have now forgotten what it was. That sounds good and easy. Thanks!

Thanks everyone, I am feeling better. I slept almost 12 hours. Geez, I must be reverting back to my teens when I could sleep forever. I think it's just a cold, but I always get a little nervous when I don't feel right.

I had some whole wheat crackers and cheese for dinner. My blood sugar levels were good.

I had HOT wings & crawfish etouffee(sp) from Tim's Cajun Kitchen in Huntsville, AL. They smoke their hot wings, talk about good they are my favorite!! Met DB & his family there, along with SIL's parents, It was a good time had by all.

I made pork chops with a madeira-mushroom cream sauce, sweet potatoes, and peas. The pork chops were sprinkled with "Creole Seasoning" and browned in a pan, further heated in the oven, and finished simmering in the pan gravy.
The sweet potatoes were cubed, boiled, and lightly mashed with butter, half-and-half, and a small amount of pumpkin pie spice.

It was outstanding, and the flavors really blended well together.
