What's for Dinner ... Tuesday?

We had record low temperatures last night in my part of Ohio. It was 49 in my area. No rain today was a plus.

I'll be having split pea soup tonight. I used yellow split peas this time. Will also have a Stove Top Meat Muffin. If I still want more, I'll have plain greek yogurt with a fresh peach.

So what's the meal at your house?

Hi Shirley,
We didn't set record temps last nite, but it got down to 8C.

I was in the mood for veggie soup so I made one. I threw a bunch of veggies......cauliflower, carrots, green beans, frozen corn, kale, onions etc.

I used one of my cans of RoTel tomatoes for some kick! (and it sure did), can of tomatoes, beef broth, a chipotle pepper.

It was real good and hit the spot. I'm not a soup meister, and was quite happy the way this turned out.

I made a great roast beef with potatoes, onions, mushrooms, and I roasted carrots separately. It made a wonderful thick brown gravy to go over rice. It was wonderful. Had the neighbors over for dinner and a visit. I had picked up some home grown tomatoes at the farmers market and sliced up some of those too.

Stuffed patty pan squash is on the menu, as much as I hate to use the oven. The stuffing will consist of squash innards, jalapeno and chipotle peppers (small doses), corn, chopped tomato, quinoa, seasoned with a little cilantro, lime zest, and topped with queso fresco. It's gotta be good, right? A neighbor brought over a Sugar Baby watermelon which will be enjoyed later.

We had an unplanned dinner guest. My daughter's first husband had taken their son swimming, and got back here just as dinner was coming out of the oven. The kitchen smelled so good--I could tell he noticed, so I invited him to stay. We all shared a pleasant meal--my daughter, her husband, her ex, and their son. I'm so happy for grandson's sake that everyone gets along.

Leftovers here, too. I'm going to make chicken fajitas with the chicken from last night, plus grilled green, yellow sweet peppers, and onions, avocado, chopped lettuce and tomatoes and sour cream, all on a flour tortilla. I'll mix up a little fresh salsa, too, I guess. Raven, I hope that your power comes back on SOON!

We had a cool and relatively sunny day. It is our 25th anniversary. We ate lunch at the golf course and played 9 holes. For dinner we are having just steak and mashed potatoes. We also have rolls and gravy left over from last night. No veg!

We're going to go to a quiet little Japanese restaurant for some sushi and a salad.

Played 18 holes of golf, then had to take DH to be fitted for a back brace. He fell two weeks ago and fractured his back in two places. We went to Bonefish afterward. We split a bowl of mussels and I had the Ahi tuna appetizer. He had a lobster tail and salad. I brought half of mine home for dinner tomorrow night.

It was such a beautiful day here today, No humidity and in the upper 70's.

Happy Anniversary to Pam and hubby from me, too.

Going to fizzle up/toast up a juicy BLT, with a tomato slice bigger around and thicker than the bread. Wonder if I could bite into a triple decker with 8 slices of bacon? Evening munchie might be a 12 oz bag of M&M.

Warm and humid here...back to salads for us. I went to Costco this morning and they had the most beautiful berries. I bought blackberries, raspberries, strawberries, blueberries and cherries. I think that will be our dessert and snack for several days to come.

Had a peach. Was so excited to bite into that first peach of the year, no flavor. So disapppointing.

We're having a salad, steamed broccoli with a sprinkle of parmesan cheese, and grilled teriyaki pork chops.

Glenda: Pork chops sound like just the right thing today. I love them.

Jasdip: Your soup sounds good to me. Rotel would have been the crowning touch.

Pam: Happy Anniversary. "Just steak" by itself would be good to me. It would be a bonus to add roll, potatoes and gravy.

Rhizo: Good for you to get to eat out. I'll skip the sushi and go for some of their other dishes. lol

Linda: Your meal tonight is one of my top ten favorites. Vegetable varies.

Georgysmom: I don't think I could choose between the two meals so I'd have to have some of each. This was my kind of day. I hope all is going well for your husband.

OldFixer: I'd try the triple decker. If it didn't fit, I'd mash it down till it did. Regular or Peanut M&Ms?

Fun2BHere: I envy you all those fruit choices. I think my favorite would be the raspberries....either color.

Angelaid: I know that feeling........such a let down.

Kittiemom: That's the way I like broccoli the best. And of course, I'd never turn down a pork chop.
