What's for Dinner ... Monday? 06-30-14

A friend of my wife gave her a bag of swiss chard from her garden. My response, great, what's swiss chard? Then upon seeing it, it looked like the mutant offspring of kale and rhubarb.

I looked up a couple of recipes (many of which called for bacon which I didn't have) and made the following:

I'm not sure that I loved it but it was pretty good.

Swiss chard

1 bundle of swiss chard
4 oz smoked sausage (cut in half and sliced thin)
1/2 small onion (sliced thin)
4 white mushrooms (sliced thin)
1 tsp crushed garlic
2 tsp lemon juice
2 tsp white wine vinegar
1 1/2 Tbsp butter
1 tsp olive oil

Remove stems from chard, cut stems into 1/2 inch pieces.
Roughly chop leaves.
Place butter, sausage, onion, and swiss chard stems in large pan on medium high heat. Cook for about 6 minutes until sausage is browned, and onion and chard stems are softened. Add garlic and mushrooms, cook for another 4 minutes.

Add chard leaves, olive oil, and vinegar, and cook until the leaves are are softened and wilted.

Serve.

I haven't had swiss chard in years. I love it eaten like cooked spinach. No bacon or anything.

We had a big lunch yesterday so dinner was just munching, as we were working. Strawberries, a couple of boiled eggs, the rest of the watermelon salad.

Today (Tuesday) is Canada Day, so I'm making bread now and plan on having some grilled chicken.

I have Swiss chard growing in my garden. I like to fix it with bacon, like cooked spinach. I really like it. Happy Canada Day!

Teresa, I'd never heard of Cottage pie until I met Harry. It figures since he worked for the school system and ate in the cafeteria :-) I didn't know what I was missing! Is it ever good!! Glad you feel better today. Shirley, is it too late for me to come for dinner. That sounds so good. Clubm, it never gets old though, does it? Guess it's because we don't eat it weekly or monthly that it tastes so good. Since my CB was leftover I just have enough for dinner tonight, so the smoked sausage can wait for tomorrow. I will be making colcannon more often during the year though. Really liked that stuff! Your dinner sounds good, too, Sue. Sure would like that sandwich!! Aw, Pam--I sure hope the weatherman is wrong. Your delicious dinner should keep you warm and happy, though.

I fixed a big salad with all kinds of green stuff plus grapes, manderines, hard boiled eggs, sunflower seeds, toasted almonds. I whipped up a quickie wasabi mustard vinaigrette. Sometimes, a salad is the only thing that will do! But, I know that some of the meals mentioned tonight are going to be on our table soon. I love Mediterranean pasta....just think Greek instead of Italian. I always add canned artichokes to mine, along with the other usual ingredients. Wonderful with chicken or shrimp. You can use canned chopped tomatoes, too.

Wow some good eats tonight!!! Luckygarndnr-I love beef ribs, but I am not sure I have ever heard of the sauce you had with them. Can you please share your recipe??? I prefer rice over a baked potato. I'm glad that you mentioned your worries about GMO, Jean, and that I could help. I know that I would HATE not having sweet corn (on or off the cob) . About the pesticides.....most will be found on the husks and silk. Once those are removed and the ears washed, the harmful chemicals are pretty much gone. Pork chops are a favorite at our house......pork, in general! I don't know which way that I like it best. (Whatever is on my plate, I guess!)

Sounds like a great recipe, Bob. Chard is a staple of our summer diet and have been growing it for many years. It takes the place of the cool season greens that fade out in the southern heat and humidity.

Robert grilled the best steak last night, a thick T-bone that we shared. I made a mushroom sauce to go over brown rice, and.........swiss chard! Just sauteed it with a little olive oil, chopped garlic, and a sprinkle of lemon juice and red pepper flakes.

Last night was French Dips with sauteed onions and provolone. Cottage cheese and sliced tomatoes on the side.
