What's for dinner Monday?

I made a big pot of chili today and am making a pan of cornbread to go with it. I think it was Raven (?) last week that made chili and it sounded so good. Yes, it's hot outside, but it's nice and cool in here!

What are you having for dinner tonight?

I could eat chili anytime of the year.

I had total leftovers tonight......chicken/stuffing, mashed potatoes/gravy, green beans.

Friend is home from the beach, but leaves next week for Boston, where they are building another home.

She had a huge apple cranberry roast turkey salad, and I enjoyed tremendously a blt on marbled rye..

Pam, I love quiche and have leftover ham in the freezer. I should make one with ham, and onions, peppers and mushrooms. Hubby won't eat any hot cooked eggs, so it's me and my quiche. The last time I made hamburger rolls I posted a pic :) Cheri I love pot roast. I tend to make mashed potatoes on the side, instead of in the slow cooker. We like them that way better. Alice your dinner sounds great! We eat a fair bit of rice, just love it. Ellendi would you share your quinoa recipe on the Share your Recipe Thread???? We enjoy quinoa. That's the pits you had so much trouble finding the sriracha. Old Fixer, IS there such a thing as too much garlic? LOL Party, I was going to bake some sweet potatoes yesterday, but they are really small, so I mashed them along with white potatoes. We like them mixed. Matti, I've heard that In n Out burgers are good. Enjoy! Rhizo, we just had some homemade apple sauce that I took out of the freezer with a warm oatmeal-carrot muffin! We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

The weather here today was similar to yours, jasdip. We decided to go to the famous local seasonal 'dive' which opened for the season yesterday... a family business since 1938, I think. It's just a little shack with minimal cooking facilities (bbq sandwiches, hamburgs, hotdogs, fries) where you stand outdoors in line to order. They also have an ice cream side, but it's not open yet. You can do take-out or eat outdoors on picnic tables. It's near a busy intersection so always noisy, but the food is good and super cheap, so it's always busy. Totally tacky and totally fun. You'll see everything from tattooed grandmas on motorcycles to vice presidents in suits all standing in that line together, and today the lines were the longest I've ever seen! I chose a pork sandwich w/ bbq sauce, dill pickles, hot relish on the side (they make their own and it's really good) and fries. Totally happy here. :O)

Gorgeous day here today. I made grilled chicken breast in cacciatore sauce with sliced fresh little tomatoes and served it over fettuccine topped with grated cheeses. It was awesome. I should have made garlic bread to go with it.

DS was suppose to arrive today to play in a golf tournament with me tomorrow but he was sick all night and cancelled. I was going to make a honey baked ham but changed my plans. Tonight we will have steak and home fries. My neighbor is going to play golf with me tomorrow and Wednesday he and his wife and grandson will come for dinner and we'll have the honey baked ham.

I took 4 bone-in chicken breasts out of the freezer, but they were HUGE, so I put 2 back.

I made Chipotle chicken and rice. I had intended to make extra for leftovers, but as it is, we each have half of our chicken left.

Oh Glenda, does that ever sound wonderful. Sure hope your neighbor keeps the condo, too.

Aw, Georgysmom, I'm sorry your son couldn't make it. Hope he's okay. Glad you could find another partner so quickly. Do you make your own HB ham? I just go to the HB Ham store myself :-) Love that ham!

Jasdip, I don't know what they're feeding those chickens but one is usually enough for the two of us--with some leftover!

Pam, anything with a tempura batter is delicious--vegetables are great with it. Woo hoo!

Mary, what are you going to do about all your darned rain?? Making lasagna is a good way to spend your time on days like this--of which you've had more than your share.

Well, we had a business appointment that finished up around dinner time so we decided to eat out at a little Italian restaurant not too far from us. Good grief, were we ever disappointed, lol.

Italian, my foot! It's a little chain called Rafael 's. The food was awful and not the kind of awful that cannot be blamed on the local kitchen, but the whole franchise . But my mama always told me to find something good to say about things, so I can say that the dinners were hot and the salad was cold.
