What's for Dinner, Monday?

We got home not long ago for hubby's pre-op for his upcoming surgery on the 28th.
3 hours of tests and paperwork. One thing that we found out today is the day before (the Sunday) is to be clear liquids only. That's going to put a dent in my usual Sunday cooking! LOL I told him I'd go through that alongside him. I even bought some Jello before we got home!

He has prostate cancer and we're ripping that puppy of a prostate out. He's a little nervous but feels better each time we meet with the medical staff. Everyone is so nice and comforting.

We talked on the way home about wanting something spicy, so I whipped up chicken fajitas. They hit the spot.

BBQ chicken breasts are in the crockpot, serving with potato salad and corn. Smells good in here!

Ellen chicken salad sounds delicious Shirley, Spanish rice sounds good. I make one version in the slow cooker, with ground beef. Sue, I like my fried egg sandwiches with tomato as well, and bacon when we have it. Kath, I used to like the Southwestern Salad from McD's. Haven't had one of them in a couple of years now. Raven, I love that skillet dish. One-dish meals are so handy. OF, as you said, frozen lasagna is way easier than making one from scratch! Pam you had what is the perfect steak dinner! Jim, veggie soup and lemon pudding! Yum! We're in for the high temps tomorrow as well with high humidity. 30C but feeling much hotter with the humidity.

This week includes my annual "special day" (a secret!). Last nite started with parmesan shrimp, breaded shrimp, coconut shrimp, shrimp alfredo, baked tater, salad, cheddar biscuits. Guess where? Brought home enough in the box for two lunches! Tonite will be a pig out buffet. Normally $20, I squeaked it down to $5, and that was free. Dumbo still prepared too much food here. A Chocolate Cake, with creamy Chocolate frosting. BBQ ribs. Some hamburger patties. A big pot of Chili. Salsa and Avacado. No cooking the rest of the week. Anybody hungry?

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

The weather here today was similar to yours, jasdip. We decided to go to the famous local seasonal 'dive' which opened for the season yesterday... a family business since 1938, I think. It's just a little shack with minimal cooking facilities (bbq sandwiches, hamburgs, hotdogs, fries) where you stand outdoors in line to order. They also have an ice cream side, but it's not open yet. You can do take-out or eat outdoors on picnic tables. It's near a busy intersection so always noisy, but the food is good and super cheap, so it's always busy. Totally tacky and totally fun. You'll see everything from tattooed grandmas on motorcycles to vice presidents in suits all standing in that line together, and today the lines were the longest I've ever seen! I chose a pork sandwich w/ bbq sauce, dill pickles, hot relish on the side (they make their own and it's really good) and fries. Totally happy here. :O)

Hi Jasdip! So sorry to hear about the cancer but glad that's he's taking care of it. Broth, popsicles, and jello!

Your fajitas sound good. I could go for something like that tonight, but I think that we'll do a re-run of last night's stir fry.

BBQ wings (after happy hour). And of course, more munchies later. Sorry about medical issues. But relax, surgeries are simple and the least of the worries. Hopefully they will find nothing more. It becomes a lifetime monitoring to keep an eye on that evil beast. Keep us posted.

Well leftovers for hubby and I. I've got burger browning with lots of garlic and onion powder to become meat sauce for over pasta for the boys.

Jasdip, hope everything goes well for your DH.

We're having baked salmon and grilled asparagus. DH has lost 25 lbs. so far doing a low carb diet, so he's sticking with it except for occasional splurges.

I had pork tenderloin slices leftover from yesterday, so I took them and some ham and swiss, and mustard and pickle slices and made grilled cubano sandwiches. To go with it I made black beans, and roasted a couple of tomato halves.

Wow, your dinners all sound so good!

I love the chicken in the slow cooker, steak, pasta sauce.

Stir-fries are always good, and anything can be used in it. So versatile.

Baked salmon and asparagus sounds delicious! I've got asparagus in the frig, that I'll either cook with orzo, or maybe roast it. We love it roasted. The last time we did that I made Angela's roasted asparagus breaded with breadcrumbs and parmesan.

Thank you SO much for the best wishes guys. I just read them to him and he's touched. I know things will be good and he'll have a good recovery. This is a top-notch hospital AND it's all done by robot. Not laproscopy but a robot, not a human hand. He think that's very cool. LOL

The time wearing the catheter and the recovery time is greatly reduced by choosing this method. And he's home the following morning, vs spending 3 days in the hospital with the traditional surgery.

Jasdip, that sounds very encouraging and it sounds like you are both very optimistic. Wishing the very best outcome for your DH!

Hubby had leftover pasties last night. I snacked on some saltines with butter, smoked salmon and marinated artichoke hearts.

easy supper last night..we had clam chowder and corn bread...it was sort of rainy and the hot soup was good!
