We leave for a cruise early, early morning tomorrow. The past two days have been clean out the fridge. We had scrambled eggs with bacon and pinot noir.

My evening meal was red beans and rice (with quinoa mixed in). Also had a hotdog that I dipped in hot mustard sauce. That was my gourmet meal.

Chicken Gumbo soup (something I haven't had in years I don't think) and half a tuna sandwich....which I'm getting ready to make.

Dh will have to have leftover Chinese food from yesterday and I'll probably have eggs, as my tummy hasn't been too happy today. Your meals sound very good!

Kathsgrdn, since they reduced the salt in Campbell's soup, I don't think any of them are as good anymore.

Had snow fall warnings out all day today. They had to close Hiway 2 south of Calgary and Hiway 1 between Strathmore and Calgary, the roads were so slick. It didn't start snowing here until around 6 tonight, and I doubt it will amount to much.

But snowy days call for stew and dumplings with biscuits. Yum!

A lovely, sunny day for a change instead of clouds and rain. We had pork chops, mashed potatoes and lima beans.

Prairie Rose, I think they added some kind of spice that is awful.

That is a shame, Kathsgrdn. It is so frustrating when they take something that was good tasting and "improve" it. It seems especially common to happen right after I stock up on the changed version--then it just warms the shelf.

We ate cherry wood smoked tri tip roast, ranch beans, and Italian bread for dinner tonight.

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs.

Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa.

Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems.

Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should!

I made a Thai coconut curry chicken and rice noodles.

Husband threw a "skirt flank" (that's how it was labeled ... have no idea ??? LOL) into the crock pot with tons of vegetables. I was skeptical. It turned out very good!

Dumplings

Sift together 1 C flour, 1 1/2 tsp baking powder and 1/2 tsp salt into bowl, cut in 2 Tbsp chilled lard or shortening with a pastry blender until mixture resembles coarse meal. Add 1/2 C milk and mix lightly until dough just holds together.

Add enough liquid to stew to cover by 1/2 inch and bring to a gentle boil. Drop dough gently onto liquid in rounded tablespoons. Lower heat so liquid is just simmering. Cover pot and DO NOT LIFT LID TO CHECK for 15 to 20 minutes. Serve.

We had nothing. I had a late lunch of leftover tacos & my husband went to an all you can eat buffet & made an absolute pig of himself!! He called me when they left & said he was to stuffed to work! So neither one of us was hungry. And just put together a meatloaf for tonite, not one of my favorites-but my husband loves meatloaf.
