Sour Cream Banana Bread

1 cup sugar

1/2 cup oil

2 eggs

1 cup mashed bananas (2 medium)

1/2 cup sour cream

1 teaspoon vanilla

1-1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

Preheat oven to 350F. Grease and flour bottom only of a 9 X 5 loaf pan. In large bowl, beat together sugar and oil. Add eggs, bananas, sour
cream and vanilla, blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking soda and salt, stir just until dry
ingredients are moistened. Pour into prepared pan.
Bake at 350F for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan. Cool completely. Wrap tightly and store in refrigerator, if not serving immediately. Makes 1 loaf.

Note: you do not need to refrigerate, as it is so good, mellow's in couple of days, and great eating. But if you are not going to eat it soon, then refrigeration would be good.

That is the same recipe I've used for years. I've also used pumpkin and apple in this recipe. I add more spices when I do that.

This is one of those recipes that is so good, I pretty much ignore every other banana bread recipe I come across.

I seldom make banana muffins/loaf because usually it's too moist for my liking.
I guess it's because I've used frozen bananas, as I often don't have enough ripened bananas to make into a loaf.
Although, mom makes all of her muffins out of frozen and they're awesome.

I copied this recipe when Glenda posted it last week as it struck my interest. I'll have to make a point of trying it, using ripened bananas, but not frozen.

I'm going to pass it on to Mom as well, and have her try it.

This looks good. I'll have to try it nest time I make banana bread. The recipe I usually use I got from mom. It uses a bunch of shortening. It's nice and gooey but man all that shortening.

I've been waiting for nightfall to turn on my oven and make a loaf of banana bread when I found this thread. Since I have some sour cream in the fridge, I'm gonna give it a try! Thanks for posting your recipe, Glenda. I can't wait to try it.
