It's called Sex In A Pan. This is soooo delicious!! First Layer 1 cup chopped pecans 1 cup flour ½ cup butter, melted Mix and press into 13x9-inch pan. Bake 20 minutes. Cool. Second Layer 1 (8 oz) pkg cream cheese, room temperature 1 cup icing (confectionerÂs) sugar ½ large tub of Cool Whip Whip cream cheese, icing sugar, and ½ tub Cool Whip together, and spread evenly over top of first layer. Third Layer 3 cups milk 1 pkg chocolate instant pudding 1 pkg vanilla instant pudding Beat above ingredients together until thick, and pour over cream cheese layer. Top with remaining ½ tub Cool Whip, and sprinkle with 2 crushed Crispy Crunch chocolate bars, or chocolate shavings

It doesn't set up like a pecan pie-a thinner consistency but almost as good and you can use your cream and save on the crust calories! LOL RL`

I bought the corn flour today...the one that comes here in the bag marked especially for making frangollo... just so I could try making it and had some conversations with the girls in the supermarket who were in those photos, dressed in costumes. It seems this pudding must be stirred, and stirred non-stop for 20 minutes or more while it's on the stove. (Yikes!) So I'll try to prepare it sometime this week and will come back with photos and a play by play of how I made it. There is a recipe also on the back of the cornflour bag so we'll see how I get on. :-) (Stirring for 20 minutes....grumble, grumble...). Annie I have some palm syrup (miel de palma) that I bought the other day, made from the sap of palm trees, called guarapo and very much used here for drizzling over desserts such as this one. So that'll be an excuse to open the jar and give it a try. It's an all natural product with no conservatives or other elements added to the cooked sap of the palm tree. I have had palm syrup which is another delicious tapa served here. The syrup is the dark topping in the upper part of the plate. This was a tapa night out and this one disappeared so quickly I was hardly able to get a photo!) The green in the bottom part of the plate is a mojo of cilantro and garlic. SharonCb

here is the recipe I use at work. 2 cups milk 1/3 cup sugar 1/4 cup cornstarch 4 egg yolks sprinkle of salt Mix all the ingredients together in a microwave safe bowl. I use a 2 quart pyrex glass bowl. Microwave for 2 minutes and stir. Repeat this 2 or 3 more times. It depends upon your microwave as how long it will take. We only have a small one at work. I dont know the wattage. Peel and slice your bananas into 7up or orange juice to prevent them from turning black to fast. Let set for a couple of minutes and drain real well and add to pudding mixture. Put into a baked pie shell or a graham cracker crust. Top with meringue made with the remaining 4 egg whites and bake at 400 degrees for 13 minutes or until desired color. Or you can skip the meringue and use whip cream on top. The salt may be omitted, all it is for is that it takes the really sweet taste out of it and makes it taste much better. THIS SAME RECIPE MAY BE USED FOR COCONUT CREAM PIE.THE ONLY DIFFERENCE IS THAT YOU OMIT THE BANANAS AND ADD A 1/3 CUP OR MORE OF TOASTED COCONUT. IF YOU TOAST THE COCONUT IT GIVES IT A STRONGER FLAVOR. I USE THE MICROWAVE TO TOAST IT. PUT IT ON A PLATE AND MICROWAVE IT UNTIL IT IS CRISP AND BROWNED. BE SURE TO CHECK IT EVERY FEW SECONDS AND STIR IT WHEN YOU CHECK IT OR IT WILL BURN IN ONE SPOT AND NOT BROWN IN THE OTHER SPOTS. THIS IS REALLY EASY. If anyone has any questions or would like a similar recipe for butterscotch pudding please let me know. In fact I was thinking with Marilyn Sues recipe which sounds really good I think my butterscotch recipe might work.
