Adding a new light and light switch

I am adding a recessed low-voltage light over my sink. I plan to run power to a dimmer switch, then on to the fixture, from a nearby existing outlet that is in the middle of a circuit.

The existing outlet has romex coming and going with the whites connected to the silver screws, the blacks connected to the gold screws, and the grounds connected to the green screw on the outlet.

What is the best way to run power from the outlet to my switch? I don't think I should connect my new wires directly to the outlet screws (too crowded). Should I have a pigtail somewhere? Any suggestions will be appreciated.
