Leftovers......beans & rice, along with chicken livers and mushrooms. Probably a weird combo to some, but I like a wide variety of things.

I made up a pot of potato-cheese soup. Earlier in the day I cooked up a few diced potatoes along with some frozen mixed vegetables. Then I made up an envelope of country gravy using a can of chicken broth and milk, added the potatoes, vegies, a big handful of shredded cheddar cheese and a half-ring of kielbasa sausage diced up. It was goooooood!! Dottie

debn, when I lived at home, my Mother made macaroni and tomatoes often. I really like it. Husband isn't too fond of it though. How do you make yours if you wouldn't mind sharing your recipe?

I just open a can of Hunt's diced tomatoes with a can of water added, put it in a pot and bring it to a simmer. Add some salt, pepper and a tsp of bacon grease. After it simmers perhaps 15 minutes I add 3/4 cup of shell pasta and cook until pasta is al-denta. Take off heat and let sit a minute or so. Add a good dollop of butter and serve!! Hoe cake is good with it to sop the tomato juice up with. I might add less than 3/4 cup pasta because I like mine juicy.

Took a short nap this afternoon and woke up dreaming of lasagna. Well, I found a convenient 1 lb package of 1/2 ground beef, 1/2 Italian sausage in the freezer, three remaining non-boil lasagna pasta sheets, and a jar of pasta decent quality sauce. Also, some pizza cheese (mostly mozzarella), cheddar and parmesan, as well as some cottage cheese (usually use ricotta). Veggie drawer turned up some fresh mushrooms and an onion. 30 minutes later, a lasagna went into the oven. It turned out very good indeed.

I've never used cheddar in a lasagna before. It was good, but overall a bit too salty, so I'll try to keep more mozzarella in stock in the future.
