I am making hamburger steaks stuffed with mushrooms, onions, and cheeses. I am going to steam some fresh asparagus.

Sounds pretty tasty, ellendi. I'll be making a big green salad with lots of good stuff! Am chilling the quinoa as we speak. Big shrimp will be broiled to put on top.

Haven't decided on a dressing yet. Ginger? Sesame? Oil and vinegar? I've got some nice vinegars.

Oh, it's so good to be back.

We had sausages, mashed white and sweet potatoes and sauteed cauliflower.

Rhizo, how do you make your quinoa?

All of your meals sound delicious! Plus one of my nieghbors is doing some outdoor grilling, so the air is quite fragrant. Smells like ribs!

I bought a rotiserrie chicken, shredded it and made sour cream enchilidas. It will be leftovers for tomorrow's dinner too, as they are even better the next day.

Raven, I finally remembered to pick up some asparagus! I'll have it tomorrow with something.

Ellendi, tonight I just cooked it in a very basic way. I like having cold leftovers to put on a salad, in my green sludgies, soups, etc. One cup quinoa, rinsed and drained twice. Use a mesh strainer. Add one and a half cups water or broth to the pot with the quinoa, bring to a boil with the lid on....then turn heat down to simmer for ten minutes or so. Let sit for five minutes with the lid on after the heat is off.

I also add it raw to any rice or mixed grains that I'm cooking. I even add it when I'm making pea or lentil soup! Always rinse it....it has a bitter taste otherwise.

I did a lot of cleaning today in preparation for Easter so I made a Bertolli skillet dinner.

We had Goulash. I love that.

Korean Beef over Fried Rice.

Breaded razor clams, tomato/mozzarella salad, garlic bread. Two drop ins for dinner, all impromptu...which seems to be about the only way I entertain any more, nothing is planned. But, that's why DH wanted this house so badly, welcoming and room for his friends.

Fried chicken and a baked potato. Life sure is busy right now. I'm ready for this weekend! We're going to a movie in the afternoon tomorrow, but the food is gonna be good on Sunday. All I have to do is bring a dessert. I can handle that. A chocolate dessert. Which means I'll have to keep out of it, and I think I can manage that. Maybe.
