What;s for dinner Wednesday?

A couple of girl friends are coming for dinner tonight and I am making a new recipe I saw on the Barefoot Contessa. If it's any good I'll post the directions tomorrow. It's sausage with grapes and a balsamic vinegar reduction served with Focaccia bread. It certainly sounds interesting and is very easy.

I saw the most beautiful, big green peppers at the store yesterday and they ended up in my shopping cart. So, tonight I stuffed them with a spicy, cheesy, tomatoey, ricey mixture and baked them with some chicken thighs.

Great meals as usual!!! Shirley, aren't leftovers grand? No thinking of what to cook and easy cleanup. Phyllis, it's nice to take something handy and put your own touches in it. Susan, I had to laugh at you taking yourself physically away from the kitchen to avoid eating more. I agree, the packaged meals are definitely portion-control! Pam, leftover lasagna sounds good! Especially with your snowy weather. Raven the rotisserie chickie and your sides make a great meal! Angela, your dinner sounds so good. I really like the idea of the pasta and shrimp salad. Cherryfizz your meal made my mouth water. Did you use chicken breasts?

Jeff, I very respectfully disagree with that last statement, lol. I adore fried green tomatoes, squash, zucchini, mushrooms, asparagus, cauliflower, and even fried pickles. But, I am one of the droves of people for whom NO preparation will make okra palatable. There is no adequate disguise, as far as I'm concerned. Every few years, I'll give them a try...always from someone else's plate....but the verdict is always the same. Blech. No matter who the cook is or how they've made them.

Shirley, yes our neighbours are terrific. You must have had a nice day today, as we did. Jim, I'm taking a pork roast out of the freezer for the weekend. Haven't had one in a while. Phyllis, that's what I do. I made a ziti on the weekend to have extra meals thru the week, and cooked extra chicken breasts on purpose.

I made my first pot of vegetable soup since last March - it's that time of year to start thinking soup.

Hubby wasn't all that hungry and he just had a bowl of cereal and the rest of the watermelon.

I reheated some pasta from an earlier meal.

I'm glad he's happy with cereal or a peanut butter sandwich, he loves both!

We're having corned beef sandwiches on 7 grain bread with some chips. No cooking again tonight.

Hope you have a great time with you GF's. Any Ina Garten recipes are bound to be good. That sure sounds good!

We had left over curried chicken salad with a little watermelon on the side. Didn't really feel like cooking tonight and tomorrow night will be even worse.

Oh, schoolhouse...I wish it was time to start thinking soups and stews here! My car registered the outside temp at 104Ã¯Â¿Â½ again. No break here in sight for Houston!

We had chicken that cooked in the crock-pot today. Unfortunately, it dried out a bit but the flavor was still good. Served over rice it was edible!

I roasted chicken pieces last week, used most for a salad, but froze a huge breast piece. I've had three meals on it! Filled up on sliced tomatoes, so it was plenty.

I cooked that spiral ham. Along with that was mashed potatoes and beets. Anytime I send Bobby to the garage to get a vegetable either from the freezer or canned on the shelf I can be assured he is going to come in with beets. LOL

After dinner I cut the meat off the bone and packaged it for the freezer. Got six packs of meat and a big pack with the bone and the juice from the pan the ham cooked in. Looking forward to 15 bean soup in the near future.

My husband ate with "the guys" last night,so I had a tomato sandwich and iced tea. I'm really 'gonna miss fresh tomatoes this winter.
