Saving Melted Chocolate

I was making candies today and have some left over melted white and dark chocolate.

We are leaving tomorrow for the weekend and I would like to save the chocolate to dip candies in on Monday.

Can I save it or should I dump it?

I'm not sure what will happen if you try to save it but I wouldn't just dump it... I'd mix the two together then add either puffed rice, coconut, or Rice Krispies then drop teaspoons full onto waxed paper... Instant candy... lol

Don't know about that brand... actually know little about any specific brand?!? Made chocolate dipped goodies as holiday gifts... started with bags of semi-sweet chips. I ended up with left-over melted chocolate that I just could not just toss. I poured it into a mini loaf pan and it harded up just fine once cool. I wrapped it in several layers of plastic wrap and just stashed in fridge. Can be unwrapped and grated. As for how long you can keep it? My scientific answer (kidding) is a LONG TIME, especially in fridge. If it develops that gray-ish film... it's NOT BAD! Just might not be the prettiest. I have chips in a vac seal container from LAST holiday season... absolutely nothing wrong with them.

I'll try one or two more and then just choose one to use. Don't think I'll use white; kids see chocolate as dark brown, so I don't want to use something else. Of course, each of these practices involves me eating the leftovers! Tough assignment, huh? Is the fat in chocolate from the cocoa bean, or is it another kind of fat added? Thanks everyone. Susan

I hate the double boiler. I get it out for things that I'm going to dip, like buckeye candy but if I'm just melting chocolate for my regular brownie recipe or something like that, I just put it in a saucepan and melt it on low. I watch it very carefully and stir it a lot. Never had a problem. I have an electric stove, so low is really low heat. Tracey

Disclaimer: the following "recipe" is made for those white chocolate melting tabs. I think it is called "white trash", but given its addictive nature, "crack snack" seems more fitting. My family, especially me, loves it. 1 1/2 bags chex mix (I used Wegman's brand) 1 lb bag bulk melting chocolate 1 cup lightly salted peanuts Melt chocolate on 50% in microwave. Pour over other two ingredients. Stir to coat. Spread on parchment paper and separate slightly. Store in tupperware type container. Jo

I save melted chocolate and remelt it. It's fine. I don't temper my chocolate so it develops bloom after a little while which will probably happen to yours, just melt it over hot water as usual. As long as you eat whatever you dip in a few days, bloom won't be a problem.

DD saves it all the time, she'll leave in bowls if she'll be working with soon or saves in block form for later use.

Norm always says it wouldn't be Xmas in this house if there weren't a bowl of melted chocolate sitting on the counter somewhere! I just keep it and add more when I need some to decorate the next thing. It's usually around for a couple weeks! (Actually not the same chocolate but the same bowl!)

Definitely remelt and reuse. Keep in a covered container. If you are worried, just do a few pices and see what you think. I remelt chocolate several times but I do it in the microwave (50% or lower for no longer than 20-60 seconds at a time or in an electric fondue pot to keep away the chances of water or moisture ruining it.

I've been making my Xmas "candy" for a week now (it's really 2 ritz crackers with peanut butter in the middle, then dipped in white chocolate,,tastes like a Reese's PB cup) and whatever choc. is left, I leave it, it hardens and when I make them again, I just add a little non-liquid Crisco to it, then heat it up in the double boiler and it thins it down just a bit and it works fine. Also works if for some reason you've got the heat on too high on the double boiler. Try it!

I agree, I remelt mine and always have. I'm far to cheap to throw it away so it never dawned on me to do anything else!

I just lick the bowl clean before it can solidify all the way..LOL

Nah...I save it too...Have some on the counter now from a little "mousse" filling I needed a few ounces of melted chocolate for.
