Going away for the Holidays, so I have been clearing the freezer.

Because of the predicted snow storm here, I was too busy getting the snow thrower ready and buying snow melt etc. I didnt realize I have nothing for dinner except bacon and eggs.

What?! Bacon and eggs for dinner?

Sure looks good to me!
Don't think it is written anywhere that "Thou shalt not have bacon and eggs for dinner".
Especially when it is dressed up like that.
The asparagus is really tantalizing, too.

Shirley, it sounds like you ate at Sue's house! LOL! Gayle, I wish we had a take-out restaurant nearby that had that. I'd probably eat in/out a lot! I needed a reminder about steaks. I bought a bunch when they were on sale a while back. Still to hot for chicken and dumplings but it sure sounds good. Ah, well. It'll be cold enough pretty soon. I would like to go with Lil, especially if she took Boston cream pie. I straightened out our freezer today and made a vow not to buy any more meat until I've used up a lot of what I already have. I could probably start a mini-meat market :0

We were visiting my wife's family in Vermont which ends up being a large group, with most of her brothers and sisters, and their spouses and kids, and this year even several girlfriends of the kids. All told we were about thirty. Meals were split up with one or two people volunteering for each meal. New Year's Eve was my night. I was stumped at first as far as what to make, but the co-volunteer Eric (a foodie BIL) came up with the suggestion of top-your-own tacos. We actually went with tostadas, and made black beans, three different meat toppings, and about a dozen other topping options, with side dishes of Mexican-spiced rice, and homemade cole slaw. Logistically the meal worked well, although some people didn't realize that they were supposed to be able to pick up the tostada after they made it, and instead they buried it beneath a 2-inch deep mound of toppings. Also we forgot to put out the guacamole until after half the people had served themselves. Food wise, some parts of the meal worked better than others. The shredded chicken verde was good but would have been better with more of the tomatillo salsa, however the co-op closed early, and the normal grocery store had no green salsa. The beef/chorizo was good but could have used a bit more of something, Eric and I couldn't decide what it needed. The shrimp was a big hit, the only problem with it was it disappeared so fast, the recipe (as well as I remember it) for the shrimp is below. Chili-Lime Shrimp 2 lbs peeled uncooked shrimp (31-40 count -- cut into thirds) 10 cloves garlic (minced) 1 4oz can diced green chilies 2 limes chili powder canola oil Liberally cover raw shrimp with chili powder and the juice of 1 half of a lime, and let rest for 10 minutes. In small pan, heat oil over medium heat, add garlic and green chilies, until garlic is softened and fragrant. remove from heat. In large pan, heat oil over high heat, until it is smoking hot, add shrimp stirring occasionally to make sure all the shrimp are getting cooked, and none are burning, after about 2-3 minutes the shrimp should all be cooked, add the garlic and green chilies that you set aside, and the rest of the juice of the limes. Stir for about 1 more minute, and place in large bowl to serve. Overall the meal received rave reviews.

So many great looking meals! Ann_t, how on earth you can’t love your salads I don’t know! They always look delicious. How wonderful to have so many lovely tomatoes. I get you aren’t a salad eater, but… my goodness! Petalique, I was hoping someone would post a pizza – I’m so hungry for pizza. Your tomato and zucchini looks incredibly tasty – don’t you love how great those ‘whatever we’ve got’ pizzas always come out?! Always a pleasant surprise! Artemis_ma, you never fail to surprise me; I’d never have thought to stuff a pepper with potatoes, let alone Indian spices – sounds and looks so good. I need to be more adventurous : ) Jasdip, your pasta and tomato meal looks the best to me and has my mouth watering : ) Something about that combination just tastes so good. I’ve not made that this summer… yet! I like that you used asparagus. Your pot roast is making me pretty hungry too – we love a good well-done, melt in your mouth roast. Only thing I don’t like is how the onions always melt down to nothing and I find myself searching for more in the DO! Neely, I don’t even know where to start – that steak sandwich looks delish, your soup/stew is wonderful (you always have such nice chunky veg!). I know what you mean about sometimes just needing vegetables! But you do know what caught my attention! Your fromage frais with the poached egg on toast! Looks marvelous! Nancyofnc, I do that too! (put labels on food for parties). Your tea sandwiches turned out so pretty – and I can almost taste the marmalade/ricotta! Those tomato ‘bugs’ are adorable and I bet they were a hit too! Also, thanks for the help with sous vide - that black and blue steak salad below took me zero time to put together because the steak was already done except for searing - following your example : ) Thursday I wanted to grill, so gorgonzola burgers 3-bean bake, and grilled corn. That’s not a lettuce tree growing out of the burger, just an odd camera angle! Friday was busy, so poofed ribs – Ann_T’s recipe – so good! Made more Tunnel Bar-b-que sauce but didn’t thin it as much with Stubb’s and found it was more to our liking with that kick. Made DH some country baby kale (you know, cooked to death with bacon, vinegar, chicken stock). Saturday I needed veg, so black and blue salad hit the spot for both of us. Yes, that’s my plate. Yes, I eat that much : ) Sunday we had Mesquite Salmon with herbed mayo/mustard seed sauce, roasted cherry tomatoes (from my neighbor’s garden) with shallots and basil, and rice.

2many, I actually am pretty good at mudding drywall. I'm slow and meticulous, but it looks good when I'm done! As for that chili dog, well, at least once every summer I go to the local A&W. They still have the carhops that come out to the car and put a tray on your window. I get a chili cheese dog and a frosty mug full of root beer. Then I'm done for a year, but that one chili dog is sure good. As for Zaxby's, we don't have them up here so I'm not familiar, but Elery had their chicken when he went to Tennessee for Aunt Etta's funeral, and he said it was actually pretty good. He had chicken every day he was there, though, and was pretty tired of it by the time he got home. It's one of those foods that you can pretty much figure isn't too unhealthy, a grilled chicken breast, LOL, so he got it every time he had to eat out. Then his sister made chicken and dumplings, and his sister in law fried chicken and there was chicken salad and, well, he came home and wanted chili! Artemis, the best advice I have is to just do it. Don't watch, be sure you get in there and do it yourself. You can watch YouTube and watch someone else and read every instruction in the world, but you really just have to do it. The first one is slow, the second one is better. By the time you're on three or four, it'll take you a couple of minutes and you'll be done. I'm assuming you are plucking by hand, I have that handy-dandy chicken plucker that Elery bought me for my birthday and it is an amazing time saver, but with seven birds, probably not worth the price. Plucking by hand takes me about 10 minutes per bird, and cleaning another 2 minutes. Scalding is a minute or so, so about 4 birds an hour. The plucker will pluck 2 chickens in less than a minute, so that's very helpful. We did 28 birds in 2 hours, packed on ice and "resting" overnight. It took longer than that to break them down and package them. I always let them sit on ice for 24 hours or so, it seems to make the birds less stringy and more tender. And don't forget to save the backs/necks for stock. Feet too, if you can get past the thought and trim the nails! Like you, I'm offended by the life animals have in the commercial food chain, and so I have to raise my own in a humane and sustainable manner. It's not for everyone, but it works for me. Annie

I have eggs for dinner regularly, they are quick, easy and since I have a dozen hens, pretty easily accessible!

Oh no, no! Those yolks are perfect! Only, I see no toasted bread of some kind with which to eat them. :(

However, I am intrigued by the crisp rolls of bacon...did you pin them and deep fry them to get that shape?

We love breakfast for dinner! Although I must say, my B for D never looks as pretty as yours!

(Four eggs and 8 strips of bacon...I am guessing that is two servings, and not a single plate?) I wish I could make food look as good as some of you can.

I often eat eggs for dinner....but this looks like a COLD lovely arrangement of 4 cold poached eggs on a bed of more eggs with bacon, some raw onion and cauliflower.
Please tell me you warmed those runny yolks just a tad before eating them.

Dcarch, didn't anyone ever tell you not to play with your food as a kid? LOL! It does look interesting.....never thought to eat cauliflower with bacon and eggs...not to mention asparagus...but hey....if it filled your belly..it's all good to me!

Your plate is interesting as always. Love all the curving shapes. But I would have made a frittata, or asparagus crepes, or an omelette! ;)

Thanks. Yes, nothing better than having you own fresh eggs. I had a few quills before. It takes a few dozen quill eggs to make a meal.

Thanks. It was better than you think. It was sinfully good. The eggs were fried in bacon fat. I can afford to do that because I normally eat very healthy.

Thanks. I try not to have the yolk runny and not hard. Around 160 degrees, not hard, but safe to eat.

You are very observant. There is a method to make those bacon into curves and rings, perfectly crispy and not greasy. I will post how some other time.

Thanks. Actually 5 eggs. One was scrambled. 9 strips of bacon. One was made into powder to sprinkle on the dish. I am a big eater :-)

Thanks. I love egg yolks. Not too runny, I dont eat them too often.

Thanks. Actually the dish was very hot. I put the plate on the pot which was steaming the asparagus and cauliflower while the eggs were being fried.

Thanks. LOL! Yes, I always played with food. Made an air gun using grapes when I was a kid.
