Last dinner of 2013? What's for dinner ?

I did not cook dinner..Hubby came in from work, and I heated him up a pork chop and rice...Kellan and I had some of "his" lasagna earlier..

We will be having heavy munchies tonight when we get to our friends for the night..

I decided on 7 layer chili dog dip..
The "chili" is made, the bacon is chopped and crisped, red onions are diced, the tomatoes are too..
Still have to fry up hot dog dices...then put it all together and heat and top...and scoop with tortilla chips.

We had a "clean out the fridge" tonight, deer steaks, beer butt chicken, roast & BBQ ribs...mac & cheese & corn on the cob.. Most of the meat went back in the fridge & will be made into sandwiches tomorrow for lunch.

Dale I would never be able to describe the exact location of where these morels were found. They were on private property, and I was invited by the owner, or I never would have found it by myself. Now, since she has moved, I'd probably have to trespass or get the new owner's permission. Anyways, you should be happy to know they are to be found in many locations in Oklahoma. Keep tabs on this link, and you should be able to zero in on a good location. I think there's another morel link for Oklahoma as well as this one online. You won't be disappointed if you luck onto a good morel spot. As you will see in the pics in this link, even the homeies love them, lol! Just wait til about April and about four days after a rain. Look for a moist woodland, where some deer and cows have roamed, and there are many such places in Oklahoma. I LOVE morels just about any way you can prepare them. And especially morel soup, or perhaps cut up in small pieces for tempura. A real delicacy. I've been thinking of starting my own little shitake patch. You can buy the spores of those online and perhaps other varieties as well. Dawn I can relate to the harvesting, canning and preserving fatigue. Getting kind of tired of it myself, so when dinner time rolls around and it's just me, it's catch as catch can from the garden. I really do hate to see the summer crops dwindling. Okra not bearing well. The cucumbers that store boughts will NEVER be able to rival are just about kaput. I still have tons of BIG tomatos that haven't ripened yet. Since it's been dry, with no recent rain, I've been allowing them to store up all that deliciousness and not get soggy or insipidly flavorless, so they have been amazing! Especially enjoying the Indian Stipes, which were not new to you, but certainly a delightful first for me. I'm hoping I don't get stuck with having to can jars of pickled tomatos or green tomato relish. I like it, but there's only so much of it I can eat. Today's menu was simply one of my baked buttercup squash, (just the right size for me), with butter and brown sugar, and cooked to pieces pole beans. Since I don't have a family to cook for, sometimes I kind of 'batch' and my folks used to call it. I'm back from dinner. It was great visiting with our snowbird friends and we talked for over two hours. We were neighbors when we both lived in the boonies and they moved back to Ohio shortly after we moved. We went on a cruise together with others from the neighborhood and had so much fun with them once. So now we e-mail and get together once a year :-( Dinner--not so good. I ordered the fettucini alfredo with bacon-wrapped sea scallops. The salad that came with it was very good,the scallops cooked just right but the alfredo was disappointing, to say the least. It was a big plate of angel hair pasta with a huge glob of alfredo sauce out of a jar. Ick, ick, ick! What could be easier than alfredo sauce? It's just a little butter, cream, garlic and lots of parmesan. They had little rolls that came with the salad that looked a little like those biscuits at Red Lobster, but were floury and dry. Now I remember why we don't like to eat out. Harry had fried oysters, baked sweet potato and hush puppies. He said on the way home it wasn't very good, but if it's dinner time I swear that man would eat plastic! Guess we won't be eating there again any time soon!

I'm embarrassed to expound on me burning popcorn.....but....I will tell what I did. First of all, I almost never use the microwave. Second, I almost never eat popcorn. I am old fashioned and I always made popcorn on top of the stove. So I got some microwave popcorn. I decided to fix some. I didn't have on my readers and I thought it said in the directions 7 minutes and 45 seconds. I thought that seemed a little long, but what do I know? (Nothing, obviously.) To be careful, I set it for 7 minutes. Went in the bedroom, came out about six minutes later.....the kitchen, filled with smoke, smoke pouring out of the microwave. The popcorn and bag was a single, large lump of charcoal. Inside the microwave, stained very brown. I was able to scrub some of it off, but it is permanently discolored, but the microwave still works. I put on my glasses and saw that the 7 I thought I saw was really a 2. Kind of ruined my appetite for popcorn. ;)

I've been seeing a chiropractor on a monthly basis since a car accident something like 15 years ago. He released me from treatment from the wreck, but since my insurance covered it hubby and I go once a month, and LOVE it! Of course, some chiros want you to go vegan and do hot yoga and all that rot, some are just regular people like us! Who want to fix us! You have to shop around.

Went out to local cafe, had shrimp, and goodies. Could have had steak or baked fish. All could eat salads and homemake desserts. Still a minus 13 below.

Laura, that was my plan too.. But only hubby ate...oh well..

Well I just finished a 4 mile 16 min bike ride I was cruising! Usually do 5-6 mile in 30 min..strolling along..but I wanted to get my metabolisim moving pre party foods.. Lol..

Well I still have to fry up those dog bits..and shower and primp... Best put the ipad down...lol..or I'll get side tracked...

Oh and get my 2 lbs of pintos in the pot to soak..

we went over to where I work and had steak and lobster. I had a 25.00 gift certificate so it wasn't so bad of a price. Plus 20% off.

Dh made his chicken curry, rice and peas. Why does a meal taste so much better when someone else makes it? :)

We made chicken. 2 boneless breasts, pounded out to about 3/8-1/2 thick, dipped in egg wash, then in crushed saltines and bread crumbs, pan fried in a little coconut oil and butter, with stove top stuffing and corn. Oh, and the finishing touch on the chicken was deglazing the pan with a little bit of Blackberry wine! It was the perfect touch. Just a hint of sweet blackberry, but not too much. Yum! Too full for even a cookie afterwards!

We were visiting my wife's family in Vermont which ends up being a large group, with most of her brothers and sisters, and their spouses and kids, and this year even several girlfriends of the kids. All told we were about thirty. Meals were split up with one or two people volunteering for each meal. New Year's Eve was my night. I was stumped at first as far as what to make, but the co-volunteer Eric (a foodie BIL) came up with the suggestion of top-your-own tacos.

We actually went with tostadas, and made black beans, three different meat toppings, and about a dozen other topping options, with side dishes of Mexican-spiced rice, and homemade cole slaw.

Logistically the meal worked well, although some people didn't realize that they were supposed to be able to pick up the tostada after they made it, and instead they buried it beneath a 2-inch deep mound of toppings. Also we forgot to put out the guacamole until after half the people had served themselves.

Food wise, some parts of the meal worked better than others. The shredded chicken verde was good but would have been better with more of the tomatillo salsa, however the co-op closed early, and the normal grocery store had no green salsa. The beef/chorizo was good but could have used a bit more of something, Eric and I couldn't decide what it needed. The shrimp was a big hit, the only problem with it was it disappeared so fast, the recipe (as well as I remember it) for the shrimp is below.

Chili-Lime Shrimp
2 lbs peeled uncooked shrimp (31-40 count -- cut into thirds)
10 cloves garlic (minced)
1 4oz can diced green chilies
2 limes
chili powder
canola oil

Liberally cover raw shrimp with chili powder and the juice of 1 half of a lime, and let rest for 10 minutes.

In small pan, heat oil over medium heat, add garlic and green chilies, until garlic is softened and fragrant. remove from heat.

In large pan, heat oil over high heat, until it is smoking hot, add shrimp stirring occasionally to make sure all the shrimp are getting cooked, and none are burning, after about 2-3 minutes the shrimp should all be cooked, add the garlic and green chilies that you set aside, and the rest of the juice of the limes. Stir for about 1 more minute, and place in large bowl to serve.

Overall the meal received rave reviews.
