pizzelles??

HAD a pizzelle iron/press that came from my Dad's house. Had it for a LONG time and then it just died. Don't remember brand... but remember a steer head on it, cast aluminum (I think?) plates that flipped from pizzelles to a sandwich press... before pannini was the rage.

Bought a replacement at a yard sale. Looked like never or rarely used... not crazy about it... brand - Salton. Doesn't do a very deep impression on dough and for the LIFE of me CANNOT manage to get anything that resembles a circle outta it??

Anyway, on one of my mad scientist jags today. Made a mini batch of pizzelle dough... eggs, sugar, baking powder, flour, flavoring. Decided to try to make those "cigar" things by rolling HOT pizzelles around skinny wooden spoon. Not the prettiest, but came out well. Thinking of dipping in melted chocolate or filling with a ganache of soome sort. Pretty sure they'll stay nice and crispy unfilled if in air tight container. How far in advance can I dip/fill and still have crispy??

Remember a time when I made peanut brittle... in advance of holiday goodie packages... maybe a week or 2?? By Christmas... wasn't "brittle, but still really tasty.

Oh, and people who will be guinnea pigs for my experiment are far more into taste than looks. It can look f-ugly, but if it tastes great... it's a winner!
