Those 170+ soup recipes

1. Thank you all for your patience.

2. I have formatted them all completely. I have them as a Word file and a pdf file.

3. I have offered them all to our local FoodBank to turn into a recipe book that can be sold as a fundraiser during their semi-annual soup events.

4. Many of them, as I've said, came from this forum and the generous cooks who visit here. I would like to know who among you can take credit for some of the recipes. I would also like to know if some of the recipes posted should be credited to someone/somewhere else. So far, I have been told that these good folks posted these soups:

Chicken Gruyere Bisque -- Roselin

Spicy Cheeseburger Soup -- Nancy (wizardnm)

BLT Soup -- Marilyn (danain)

Tomato Bisque with Tortellini -- Linda (doucanoe)

Hearty Harvest Soup -- Linda (doucanoe)

Minnesota Wild Rice Soup -- Linda (duoucanoe; she's quite the soupmaker!)

Ribollita -- Linda (doucanoe)

Creamy Chicken Tortilla Soup -- Marilyn (danain)

Brie wtih Green Chile -- Marigene

If you think that one of the recipes in my collection is "yours", please tell me so that I don't get us both in trouble.

6. If you have a favorite soup recipe that isn't like anything in my collection and you're interested in helping out the Foodbank, let me know.

7. By the way, there were 2 or 3 of you that never responded to my e-mails to your GardenWeb account. Sorry, but I could not send you recipes that way.

Speaking of soups... I made a chicken soup awhile back and used mini cheese ravioli instead of noodles. Was really good!

Here's another...I think it came from this forum years and years ago....still wait8ing for Ann T to post...*wink* Ginger Carrot Soup 2 tablespoons sweet cream butter 2 onions, peeled and chopped 6 cups chicken broth 2 pounds carrots, peeled and sliced 2 tablespoons grated fresh ginger 1 cup whipping cream Salt and white pepper Sour cream Parsley sprigs, for garnish In a 6-quart pan, over medium high heat, add butter and onions and cook, stirring often, until onions are limp. Add broth, carrots, and ginger. Cover and bring to a boil. Reduce heat and simmer until carrots are tender when pierced. Remove from heat and transfer to a blender. Don't fill the blender more than half way, do it in batches if you have to. Cover the blender and then hold a kitchen towel over the top of the blender*. Be careful when blending hot liquids as the mixture can spurt out of the blender. Pulse the blender to start it and then puree until smooth. Return to the pan and add cream, stir over high heat until hot. For a smoother flavor bring soup to a boil, add salt and pepper, to taste. Ladle into bowls and garnish with dollop sour cream and parsley sprigs. *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. You can never go wrong with Asparagus Cream soup. I have some asparagus in the fridge that I bought yesterday and never cooked it so it is now destined for soup tonight. My recipe is a little different from yours. I make a roux with butter and flour, seasoned with a little fresh garlic, salt and pepper and I use chicken broth for the liquid. The asparagus is added and simmered for about 20 minutes or so until tender. I use a stick blender to puree and then add a cup of heavy cream and serve. If I'm being fancy I'll cook the tips separately and add just before serving along with a dollop of whipped cream. Ann

Here are a couple of my favorites. Both could be made with ground turkey or chicken. Vegetable Burger Soup makes 10-12 servings 1 lb. ground beef or pre-cooked frozen ground beef 2 lbs. can stewed or diced tomatoes 1 1 lb. can tomato sauce 4 cups water 2 10 oz. pkgs mixed frozen vegetables (carrots, peas, corn, green beans) 1 envelope dry onion soup 2 t. sugar - white or brown Brown beef and drain off fat if using fresh. Thaw beef if using frozen precooked. Add rest of ingredients to soup pot or slow cooker. Bring to a boil, lower heat and simmer one hour if in pot on stove. Cook on low for 8 hours if in crock pot. I add diced cooked potato cubes to this after thawing the soup and before heating. Sometimes cooked potatoes become soft with freezing. You can use diced fresh onion if the onion soup is too salty. Taco Soup I used less meat and it was great; subbed some bulk sausage for some of the ground beef. I did not include the can of hominy. You could use no salt versions of the tomatoes and tomato sauce. Not sure what you could sub for the Ranch Dressing or taco mix. Maybe garlic and parsley for the Ranch and chili powder for the taco? 2 pounds ground round 1 large onion, diced 1 packet taco seasoning 1 packet Hidden Valley Ranch original dry mix salad dressing 1 can kidney beans (with liquid) 1 can pinto beans with jalapeÃ±os (with liquid) 1 can yellow hominy 1 can diced tomatoes and green chilies (Rotel) 2 cans stewed tomatoes (I use Mexican stewed tomatoes) 1 8 oz. can tomato sauce 1 cup of water Cook beef and onion until beef is browned, drain excess grease. Add the remaining ingredients. Bring to a boil then reduce heat and simmer for 30 to 45 minutes.

ooops! I forgot to include the cooking spray or olive oil for the onions and garlic. Forgive me, I am pregnant, and inclined to absent-mindedness these days. I saute the onions and garlic in 1/2 TBSP of olive oil; but if your prefer a cooking spray for lower fat, it works just as well. I've tried it both ways; and have found that when I use oil it is cleaner. With the spray I often have to re-spray halfway through the process. And by that time my kitchen has begun to fill with smoke! It would probably be fine on a lower cooking temperature; but I am an impatient saute-er. What can I say? Forgive my omission! Melissa

I'd love to have your recipe file. I recall asking for it before, and I can't find it in my *&^%$^&*( computer.

gardenguru - just your usual chicken noodle soup but instead of using noodles, I used mini cheese ravioli. You just have to let it simmer longer so that the ravioli dough is cooked till tender.

Just a thought, Joe, before someone publishes a cookbook. Many of those recipes are copyrighted and it may be an infringement of copyright law to publich them in such a cookbook without written permission.

Example being a few of those that I have posted, they originated in other cookbooks or on food network etc.

I would check into that before publishing any recipe, even those by forum members....you never know.

Thanks for the reminder -- especially to those whose recipes are in the collection as it stands right now.

Most of the recipes in my collection of 160+ are my own originals or tweaked versions of some old "non-copyrighted" stand-bys.

The ones that I have gathered from this forum are still up in the air. I am still hoping that those of you who I have sent these recipes to will communicate with me regarding those recipes that you can identify. Did you post them? Are they your own originals? Did you post a recipe that is simply copied and pasted from a website?

That includes you, too, Linda. If I've sent you the collection and you can tell me exactly which ones are ones that you posted from another source, please do so soon.

Recipes that I do not get a "credit" attached to, will be dropped from the possibility of being published with the book.

And if they're your original recipes and you don't mind having them published, I am very happy to give you written credit right under the recipe in the book. Especially if it comes with a story, such as "From greatgrandmother Ethel..."

This book will be a donation to a good cause. It is no money in my pocket.
