How do you make chicken nuggets, or bites?

What kind of coating do you use?

I'm trying to decide between a seasoned flour, egg wash, flour again coating or tempura type for dinner tonight...

Either way they'll be dropped into hot peanut oil.

Just wondering what other people like to do..someone might have a recipe that just "seems" right too...LOL

Cut pieces of chicken to size, dredge with flour, dip into egg beaten with a little milk ro water, then into crumbs and dry for about 30 minutes on a rack before frying.
I season the flour with a little salt and pepper and the crumbs witha little powdered mild chilis, and parsley flakes...but you could add garlic salt and/ or parm cheese or grated lemon rind etc etc.
The crumbs can be all sorts of things...crushed soda crackers, dry toasted bread crumbs or matzo meal or even crushed rice crispies.

I have the GE Cafe dual fuel range and love it. I haven't had any problems with the SS scratching. I have four kids, two of whom use the stove with little supervision (ages 11 and almost 13) and they have done no damage, and trust me, they are not the type to treat their things with care. I don't know the model number but I got it last May. Wait, here it is C2S980SEMSS. However, I'm so jealous to note that the new model you are looking at has a tri-ring burner - NO FAIR! I would love to have that since I have to simmer on the back burner and not wild about that. I have an OTR microwave. Not my preference, but we eventually will be redoing our kitchen. The OTR microwave we had before getting the gas range. I don't know what model it is but it is a GE Profile w/convection. At the time, it was one of the pricier models. I have not had any problems with it being over my range. WHat problems did you read about? Are the problems that the GE OTR microwaves don't work well or are the problems due to it being over the range? Mine actually hangs quite low, about two inches below the adjacent cabinets on either side - the builder used the wrong cabinet size above the range but at the time it worked b/c we just had an exhaust fan originally. In any case, we've been using both the range and the microwave for nearly a year now with no problems (no melting, no hot buttons on the microwave, etc). If you have any other specific questions about the range or OTR, I'd be happy to answer.

Convection roast and bake have something to do with the broiler element cycling on and off for differing parts of their respective cooking times in addition to other elements. Don't remember if other parameters get to play a part. Some stoves have a visual on the control panel to highlight the action.

How do you make your chicken salad?

And now for something a little different: This is the chicken salad that was served for years at the annual Antique Show in Salisbury, NC. I think it is the only recipe my dear MIL ever used. Cook two large hens (5-6 pounds each) until tender, cool, and cut white meat in large pieces, dark meat into smaller bits. Mix with the cooked dressing that has been cooled and let stand overnight. Cooked Dressing: 2 TB flour 2 TB sugar 2 t. salt 2 TB butter 2 eggs, beaten 2 t. dry mustard 1 cup water 1/2 cup vinegar Mix dry ingredients; make a paste with part of the water. Then add in the eggs and remaining liquids and cook until thick, stirring constantly. Cook the dressing before mixing with the cut up chicken. The next day, add to chicken/dressing mixture: 2 bunches of celery, chopped fine, juice of two lemons, mayonnaise to the right consistency, red cayenne pepper, and additional salt to taste. Mix well, chill and serve on crisp lettuce. Another good recipe, a contender for the mythical "tea room" is this Chicken and Apricot salad with Double Mustard Dressing: 3 lb. boneless chicken breasts, poached just until tender, cooled to room temp 1 cup dried apricots, cut into 1/4" strips 1/3 cup cream sherry 3 ribs celery, coarsely chopped 4 scallions, green and white parts, sliced on the diagonal 1/2 cup slivered almonds, lightly toasted 3 TB chopped fresh rosemary, or less to taste Double Mustard Mayonnaise 2 egg yolks 2 TB fresh lemon juice 2 TB grainy Dijon mustard 3/4 cup vegetable oil 2/3 cup olive oil 1/4 cup honey mustard salt and freshly ground pepper to taste Cut up the poached chicken breasts into 2" x 3/4" strips and place in a large bowl. Place the apricots and sherry in a small saucepan and bring to a boil. Simmer for 3 minutes, add the apricots and liquid to the chicken. Add the celery, scallions, almonds, and rosemary to the chicken mixture in the bowl and toss to combine. Prepare mayonnaise: In a food processor with a tight lid and fitted with the steel blade, add the eggs, lemon juice, and Dijon mustard and process for 10 seconds. With the machine running, stream in the veg. oil and the olive oil to make an emulsion. Add in the honey mustard and process smooth. Season to taste with salt and pepper. Blend the salad with the mayonnaise. Refrigerate in a covered bowl for at least 2 hours. Serve on lettuce leaves with a sprig of fresh rosemary for garnish. This is my exception to buttermilk on chicken. Fried Buttermilk Chicken Livers from "Southern Fried" by James Villas An excellent cookbook 1 pound chicken livers, trimmed of fat if needed 1 cup buttermilk 2 cups all purpose flour 1/2 teaspoon baking soda Pinch of nutmeg (I do not use. I do not like nutmeg except in sweets.) Salt and pepper to taste. Oil for frying In a bowl, combine livers and buttermilk and let soak for about 5 minutes In a small dish, combine the flour, baking soda, salt, and pepper and mix. In cast iron skillet heat about 1 1/2inches coil to 350*. Drain livers, dredge in flour mixture, drop in oil in batches, Fry till golden brown and crunchy, about 3 minutes, turning once, and drain on paper towels. Serve hot or at room temperature. This can be cut down for how many you want. I usually freeze the livers on a sheet pan and take out what I need.

I like to season mine with pepper, coat with beaten egg then rolled in panko crumbs. I like to make them a couple of hours earlier and keep in the fridge till it's time to fry, I think it makes the coating stay on better.

Well I cubed up the chicken breasts and let them soak 20 minutes in salt water...drained...tossed in seasoned flour (garlic powder, salt, pepper, cayenne, smoked paprika and poultry seasoning) then in an egg wash that had Hot Sauce in it too..then just back in the seasoned flour...then let "Dry" on a rack for 10 minutes or so...they were deemed delish and "you can do that again" (that's hubby's speak for I like it and am willing to eat that more often)..LOL
~I almost got out the Panko..but didn't feel like dirtying another dish..LOL

I make these and they're always so moist and crunchy.

Dip chicken in flour, then egg, then panko. Fry in hot oil.

If you use a Tempura type batter they are delicious with Chinese Sweet and Sour sauce.

I don't like sweet and sour sauce, but I love the idea of making them with that tempura batter you posted.

Here is how I make mine. I prefer fresh bread crumbs over Panko.

Home Cookin Chapter: Recipes From Thibeault's Table

Breaded Chicken Fingers
=======================

Chicken fingers can be breaded, frozen on a cookie sheet and then placed in zip lock bags. No need to defrost before frying.

chicken breasts cut into fingers
garlic (minced on microplane)
flour seasoned with salt and pepper
fresh bread crumbs
parmesan cheese - fresh grated
eggs

Rub chicken with minced garlic.
Combine bread crumbs and parmesan cheese.
Dip chicken into seasoned flour
then into beaten eggs. Dip into bread crumbs.

Heat oil to 350Â°F and fry chicken fingers. Just do a few at a time. Drain on paper towels and keep warm in a low oven while frying remaining chicken.

I thought I would add my recipe;

I marinate the tenders in sour cream (heavy on the sour cream) after about 1 hour I roll the tenders w/sour cream around in Pepperidge Farms cornbread stuffing mix. Then bake at 350 until done. The sour cream holds the stuffing mix and makes the tenders delicious. Great flavor

Although I used large crumbs in this post, I now use finely ground almond meal for chicken tender nuggets. We also love it instead of bread crumbs for breading fish fillets .

10 - 12 chicken tenders
1 TBS dijon mustard
1 egg
salt & pepper
1/2 cup almond crumbles (ground to large crumbs)

1. Preheat oven to 475F (260C)
2. Beat egg together with with Dijon, salt and pepper. Dip tenders in it and then in almond to coat.
3. Coat oven tray with oil and
and place in middle rack of oven.
4. Bake 12 - 15 minutes until cooked through

Serve with Marilyn's Spicy Peanut Sauce for dipping:
From Marilyn (DanaIN):

1/3 cup smooth peanut butter
1 garlic clove; minced
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1 teaspoon sugar
1/8 teaspoon cayenne, or to taste
1/3 cup water

Combine in a blender until smooth and allow to stand to blend flavors.

Ann, Lou prefers fresh breadcrumbs over the Panko too. He says the panko is too crunchy. But I'm all about the crunch! hahaha!

Ann and Shaun..those look very similar...yummm...I think I'll try fresh bread crumbs next time..I have all kinds of pieces of bread in bits in the freezer..

Patti,I like the idea of sour cream to "stick" things too expecially if baking...Mental note that too...
I've soaked in buttermilk before..I'm sure it gives that same taste..

Sharon, your mustard almond sounds good..I've done something similar in a saute pan with pork cutlets.

Shaun, that isn't why I don't like Panko. The fresh bread crumbs are just as crispy/crunchy. But fresh bread crumbs have a better flavour that contributes to the finished product. Panko's flavour or lack of flavour doesn't do it for me.

Patty, I like your idea of using the seasoned corn bread stuffing.
