10 - 12 chicken tenders
1 TBS dijon mustard
1 egg
salt & pepper
1/2 cup almond crumbles (ground to large crumbs)

1. Preheat oven to 475F (260C)

Sharon, thank you so much for posting, it looks great, but my son is allergic to nuts, so it can't be that one. :( Thank you though!

I make 2 kinds of kid friendly "crummy chicken"...one is baked....and I don't soak in butter milk but I do dip them in evaporated milk and then roll them in my own home made toasted bread crumbs. The clue to success is toasted crumbs.
I make crumbs out of some slightly stale good quality bread...French bread or whole wheat, most often a mix....then I put the crumbs in the oven at 300 to toast and when brown and dry, they will keep in a baggie for months.
To about 1 cup of crumbs, I add 1 1/2 teaspoons of dry parsley flakes, about 1/4 tsp of garlic powder and about 2 T of grated parmesan cheese.
I dip the chicken pieces in evaporated milk seasoned with salt and a little pepper and then in the crumbs and bake at 375 until just not pink inside....about 15 to 25 minutes depending on size.
For the fried chicken tenders I cut smaller pieces and use cracker crumbs, seasoned the same way...or with some taco seasoning....and dip the chicken in flour, then in egg and then in the crumbs and let dry on a rack for 10 to 15 minutes before frying.

Blueiris, here is how I make mine. I use fresh bread crumbs mixed with some fresh grated Parmesan cheese. I prefer them fried over baked.

Breaded Chicken Fingers

Chicken fingers can be breaded, frozen on a cookie sheet and then placed in zip lock bags. No need to defrost before frying.

chicken breasts cut into fingers
garlic (minced on microplane)
flour seasoned with salt and pepper
fresh bread crumbs
parmesan cheese - fresh grated
eggs

Rub chicken with minced garlic.
Combine bread crumbs and parmesan cheese.
Dip chicken into seasoned flour
then into beaten eggs. Dip into bread crumbs.

Heat oil to 350°F and fry chicken fingers. Just do a few at a time. Drain on paper towels and keep warm in a low oven while frying remaining chicken.

Baked Buttermilk Chicken Nuggets

Serves/Makes: 4 In: 30-60 minutes

1 1/2 pound boneless skinless chicken breasts, cut into 1 1/2-inch pieces
2 cups buttermilk
3/4 cup dried bread crumbs
1/2 cup Parmesan cheese
1 tablespoon dried Italian herb blend
1 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 eggs

Directions:
Heat oven to 350 degrees F.

Place chicken and buttermilk in a large mixing bowl; toss to combine. Marinate 15 minutes.

Combine bread crumbs, cheese, herb blend, pepper flakes, salt and black pepper on a plate. Beat eggs in a small bowl. Drain chicken nuggets. Roll pieces in egg; coat with breadcrumbs, shaking off excess. Place on a greased baking sheet. Bake until coating is golden brown and chicken is cooked through, about 30 minutes.

I do mine like others. Simply cut up chicken into nugget size pieces, dip in flour (with salt and pepper added), then egg, then panko (or seasoned bread crumbs).
Fry in cast iron skillet that has a 1/2 " or less of hot oil.
My picky kids love them.

I haven't had lunch yet... Ann, your chicken fingers are killing me!

I never do nuggets, just strips. I dip in egg,then bread crumbs (either homemade, or Vigo that I've doctored a little), then fry in canola oil. Sometimes I boil first. If I don't, a few of them will be burned on the outside and raw in the middle. I haven't learned to regulate heat yet!
