Lost Homemade Chicken Nugget Recipe

I finally found a homemade chicken nugget recipe my kids would like by surfing online --- well, I've lost the recipe and can't find it online anymore.

It called for chicken breast tenders, I know you soaked them in buttermilk, and it did not use cornflakes or crackers as a coating. They were baked, not fried.

Does anyone have a similiar recipe you could share? TIA

10 - 12 chicken tenders
1 TBS dijon mustard
1 egg
salt & pepper
1/2 cup almond crumbles (ground to large crumbs)

1. Preheat oven to 475F (260C)
2. Beat egg together with with Dijon, salt and pepper. Dip tenders in it and then in almond to coat.
3. Coat oven tray with oil and
and place in middle rack of oven.
4. Bake 12 - 15 minutes until cooked through

Serve with Marilyn's Spicy Peanut Sauce for dipping:
From Marilyn (DanaIN):

1/3 cup smooth peanut butter
1 garlic clove; minced
2 tablespoons fresh lime juice
2 tablespoons soy sauce
1 teaspoon sugar
1/8 teaspoon cayenne, or to taste
1/3 cup water
Combine in a blender until smooth and allow to stand to blend flavors.

Sharon, thank you so much for posting, it looks great, but my son is allergic to nuts, so it can't be that one. :( Thank you though!

There are those who can't seem to understand why others threaten to "rid" those problem cats. Usually some owners of pets. Yet those who have to deal with other's pets, which is what cats are, who continue over and over to destroy and leave filth on other's own private property is a nuisance. There are some that should not own pets, that do not care what is done to neighbors. Those same people are the ones who have no say in what can or can't be done to remove those problems. What happens with these pets come down to the owner. Control them or don't. Would you let your children run free to trash and urinate on other people's property? If so, maybe others will return the favor to you and your home. Since it is apparently no problem there.

RachelEllen, I know you didn't ask me, and Maria's description is wholly accurate, but there is an easier way to pluck chickens if one is plucking several at a time: Put a steel drum full of water on a brick platform and arrange a torch burner beneath it so the water comes to a rapid boil. Grab a (freshly killed) chicken by the feet with some loooong tongs and dip it in the boiling water for a few seconds, then fire up your plucking machine! There are different configurations for plucking machines, but ours was a motorized horizontal cylinder with soft rubber fingers protrubing from the drum. One holds one's scalded chicken by the feet above the spinning cylinder and it ever-so-gently pulls all the feathers off as it rotates quickly. It's the only really fun part of the process to be honest. More than ten chickens can be plucked this way in the time it takes to hand pluck one. As for slaughtering your own chickens, it can be done quickly and with dignity by just about anyone. Your best bet is to ask someone who has several (get a referral from the place that sells you your chicks) that need dispatching and ask to come help/learn.

That's so sad. Here are a few recipes that are easy and kids usually like. You could double the ingredients and change the instructions to 8 balls on the porcupines before giving it to them. PORCUPINES - serves 2 1/2 lb. ground beef 1/4 cup uncooked rice 1/4 cup milk 2 Tbs. finely chopped onion 1/8 tsp. salt 1/8 tsp. garlic powder dash of pepper 1 Tbs. oil or shortening 1 (8 oz.) can tomato sauce 1/2 cup water 1 1/2 tsp. Worcestershire sauce Mix beef, rice, milk, onion, salt, garlic powder and pepper. Form into 4 balls. Fry in melted shortening, tuning frequently, until light brown but not crusty on all sides. Mix together and add remaining ingredients. Cover, simmer 45 minutes over low heat, turning porcupines occasionally. BAKED EGGS - Preheat oven to 375 degrees. Put about a tablespoon of cooked sausage or chopped up leftover ham in a custard cup. Break an egg over it and sprinkle with salt and pepper. Add 1 teaspoon of milk. Bake for 15 minutes. Serve with a piece of toast. You can make them without meat, just butter the custard cup before adding the egg. You can sprinkle grated cheese on top or add a bit of herbs. BUTTERSCOTCH NUT SLICES (4 dozen) 6 Tbs. butter or margarine, softened 2/3 cup packed brown sugar 1 egg 1/2 tsp. vanilla 1 1/4 cups flour 1/2 tsp. baking powder 1/4 tsp. salt 1/2 cup finely chopped hickory, pecans, walnuts, or other nuts Cream the butter and brown sugar. Beat in egg and vanilla. Combine the flour, baking powder and salt; gradually add into the creamed mixture. Stir in nuts. Shape into two 7 inch rolls; wrap each in plastic wrap. Refrigerate for two hours or until firm. (Can be frozen for later use at this point.) Unwrap and cut into 1/4 inch slices and place on ungreased baking sheets. Bake in preheated 350 degree oven for 10-12 minutes or until edges begin to brown.

Chicken Divan 1 head broccoli, cooked and cut into florets 1/4 cup butter 1/4 cup all-purpose flour 2 cups chicken broth 1/2 cup heavy cream 3 tablespoons sherry 1/2 teaspoon salt 1 pinch ground black pepper 3-4 skinless, boneless chicken breast halves - cooked and sliced 3/4 cup grated Parmesan cheese, divided 1/4 c slivered almonds Preheat oven to 350 degrees F. Melt butter or margarine in a small saucepan over low heat. Stir in flour; add chicken broth and stir until thick. Then stir in c parmesan, cream, sherry or wine, salt and ground black pepper. Stir until cheese melts and mixture is thickened. Remove from heat. Place broccoli crosswise in a 9x13 inch baking dish. Pour 1/2 of the cream sauce over the broccoli and top with chicken slices, pour remaining sauce over the chicken slices. Sprinkle top with 1/2 c parmesan and slivered almonds. Bake 30 minutes at 350F, then broil 5-8 minutes to brown top. Serve hot over rice or orzo pasta. I make 2 kinds of kid friendly "crummy chicken"...one is baked....and I don't soak in butter milk but I do dip them in evaporated milk and then roll them in my own home made toasted bread crumbs. The clue to success is toasted crumbs.
I make crumbs out of some slightly stale good quality bread...French bread or whole wheat, most often a mix....then I put the crumbs in the oven at 300 to toast and when brown and dry, they will keep in a baggie for months.
To about 1 cup of crumbs, I add 1 1/2 teaspoons of dry parsley flakes, about 1/4 tsp of garlic powder and about 2 T of grated parmesan cheese.
I dip the chicken pieces in evaporated milk seasoned with salt and a little pepper and then in the crumbs and bake at 375 until just not pink inside....about 15 to 25 minutes depending on size.
For the fried chicken tenders I cut smaller pieces and use cracker crumbs, seasoned the same way...or with some taco seasoning....and dip the chicken in flour, then in egg and then in the crumbs and let dry on a rack for 10 to 15 minutes before frying.

Blueiris, here is how I make mine. I use fresh bread crumbs mixed with some fresh grated Parmesan cheese. I prefer them fried over baked.

Breaded Chicken Fingers
=======================

Chicken fingers can be breaded, frozen on a cookie sheet and then placed in zip lock bags. No need to defrost before frying.

chicken breasts cut into fingers
garlic (minced on microplane)
flour seasoned with salt and pepper
fresh bread crumbs
parmesan cheese - fresh grated
eggs

Rub chicken with minced garlic.
Combine bread crumbs and parmesan cheese.
Dip chicken into seasoned flour
then into beaten eggs. Dip into bread crumbs.

Heat oil to 350Â°F and fry chicken fingers. Just do a few at a time. Drain on paper towels and keep warm in a low oven while frying remaining chicken.

Baked Buttermilk Chicken Nuggets

Serves/Makes: 4 In: 30-60 minutes

1 1/2 pound boneless skinless chicken breasts, cut into 1 1/2-inch pieces
2 cups buttermilk
3/4 cup dried bread crumbs
1/2 cup Parmesan cheese
1 tablespoon dried Italian herb blend
1 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 eggs

Directions:
Heat oven to 350 degrees F.

Place chicken and buttermilk in a large mixing bowl; toss to combine. Marinate 15 minutes.

Combine bread crumbs, cheese, herb blend, pepper flakes, salt and black pepper on a plate. Beat eggs in a small bowl. Drain chicken nuggets. Roll pieces in egg; coat with breadcrumbs, shaking off excess. Place on a greased baking sheet. Bake until coating is golden brown and chicken is cooked through, about 30 minutes.

I do mine like others. Simply cut up chicken into nugget size pieces, dip in flour (with salt and pepper added), then egg, then panko (or seasoned bread crumbs).
Fry in cast iron skillet that has a 1/2 " or less of hot oil.
My picky kids love them.

I haven't had lunch yet... Ann, your chicken fingers are killing me!

I never do nuggets, just strips. I dip in egg,then bread crumbs (either homemade, or Vigo that I've doctored a little), then fry in canola oil. Sometimes I boil first. If I don't, a few of them will be burned on the outside and raw in the middle. I haven't learned to regulate heat yet!
