Cooking with kids - I'm looking for suggestions.

Hi everyone.

Once a month I do a cooking/nutrition class for special needs kids, mostly preteens and teens. In total, there are about 45 kids, half special needs and half mainstream teens that are "helpers", but also do the projects. I've been doing it for about a year now, and I'm running out of ideas. Their abilities vary fairly dramatically, but generally most things that work on an early elementary school level would work.

In the past we've done fruit smoothies, make your own pizza (I make the dough, they roll it out and dress the pizza then I bake it), cookie cutting out and decorating, doughnut making, frozen bananas on a stick dipped in yogurt and granola/sprinkles, chocolate dipped pretzels, fruit faces, fruit kabobs, and that's all I can think of right now.

I like to keep it a little bit healthy if I can, but that doesn't always work.

Any new and exciting ideas for me?
