Wanted: Tried-N-True CrockPot recipes.

Hi Everyone! :-)

Will you please share your Easy, Tried-N-True CrockPot recipes with me???

I have a dear friend who is the mother of 4 (5 if you count her husband :-), and they are a *very* busy family. Dinner is her nightmareÂ I was surprised to discover that she does not own a CrocPot! How such a busy woman can survive without one is beyond me.

Soooo Â I want to give my friend a CrockPot along with several tried-n-true and easy recipes for her to start off with.

I thought I would share my 2 favorites Â these are delicious and as easy as they get.

1. Delicious Apricot Glazed Pork Roast. I throw in baby carrots and small potatoes and everything is delicious when we get home.

2. Honey Ribs. The recipes sounds like it will be too sweet Â but they are not. Delicious.

There isn't anything that I haven't tried in my crockpot! I have crockpots in various sizes and shapes. I have big ones for major meals, medium ones for football game parties and small ones for dips and sauces. I especially love a good chocolate recipe cooked in one. Here are a few of mine: Crockpot Sweet-Spiced Sweet Potatoes 2 lbs. sweet potatoes, cut into 1/2" pieces 1/4 cup dark brown sugar, packed 1 tsp. ground cinnamon 1/2 tsp/ ground nutmeg pinch of salt 2 tbsps. butter, cut into 1/8" pieces 1 tsp. canilla extract Combine all of the ingredients except the butter and vanilla, in a crockpot. Mix well. Cover and cook on LOW for 7 hours. Add butter and vanilla; stir to blend. Makes 4 servings ------------------------------------------------------- Citrus Simmered Steak 2 lb. round steak 1/2 cup drained mushrooms and stems 1 medium onion sliced 2 tablespoons catsup 1 tablespoon soy sauce 1 tablespoon lemon juice 1/2 teaspoon salt 1/4 cup water 1 tablespoon cornstarch Cut round steak into pieces to fit in the crock pot. Put the steak in the pot. Mix together all other ingredients and pour over the steak. Cover and cook on high for about 4 hours or until the meat is done. This is easy but delicious (from eatingwell.com) Slow cooker braised pork with tomatillo salsa 3 pounds boneless pork shoulder, or butt [i use loin] 1 1/2 cups prepared tomatillo salsa 1 3/4 cups reduced-sodium chicken broth [I use 1 cup or less] 1 medium onion, thinly sliced 1 teaspoon cumin seeds, or ground cumin 3 plum tomatoes, (1/2 pound), thinly sliced [I usually use drained diced fire roasted tomatoes from a can] 1/2 cup chopped fresh cilantro, divided 1/2 cup reduced-fat sour cream Directions: Trim and discard pork surface fat. Cut meat apart following layers of fat around muscles; trim and discard fat. Cut into 2-inch chunks and rinse with cold water. Place in a 5- or 6-quart slow cooker. Turn heat to high. Combine salsa, broth, onion and cumin seeds in a saucepan and bring to a boil over high heat. Pour over the meat. Add tomatoes and mix gently. Put the lid on and cook until the meat is pull-apart tender, 6 to 7 hours. With a slotted spoon, transfer the pork to a large bowl; cover and keep warm. Pour the sauce and vegetables into a large skillet; skim fat. Bring to a boil over high heat. Boil, skimming froth from time to time, for about 20 minutes, to intensify flavors and thicken slightly. Add the pork and 1/4 cup cilantro; heat through. To serve, ladle into bowls and garnish each serving with a dollop of sour cream and a sprinkling of the remaining 1/4 cup cilantro. Oven method: Total: 3 hours Preheat oven to 350°F. Combine pork, salsa, 1/2 cup chicken broth, onion, cumin seeds and tomatoes in a 9-by-13-inch baking dish; cover snugly with foil. Bake until the pork is pull-apart tender, about 2 1/4 hours. Skim fat. Uncover and bake until the meat begins to brown, about 15 minutes more. Stir in 1/4 cup cilantro. Ladle into bowls, garnish with sour cream and remaining cilantro. Note---I usually I don't have time to start and/or finish the sauce on the stovetop, and it still tastes very good.

I posted this long time recipe of mine on the Rubs and Marinades posting a week or so ago. Cuban Pork Tenderloin 1 Pork Tenderloin 2 Tbsp Cuban Spice Rub (see below) 1 Tbsp oil Preheat oven to 425 deg F Trim fat and silver membrane from tenderloin, and pat dry with paper towel. Rub spice mixture evenly all over the tenderloin. Preheat oil in large pan over high heat. Lightly sear tenderloin on all sides. Remove tenderloin from pan, place in baking pan, place in oven for 15 minutes. When tenderloin reaches 140 deg F remove it from oven and let it rest for 5-10 minutes, during which time the temperature should rise to 145 to 150 deg F. Slice 1/4" - 3/8" thick and serve with Madeira-Apricot sauce on the side (see below) Cuban Spice Rub: 1 paprika 2 ground red pepper 2 cumin 3 onion powder 3 garlic powder 2 black pepper 1 oregano (dried) 1 basil (dried) 2 parsley (dried) Madeira-Apricot sauce Ingredients: 1 jar Polaner All-Fruit Apricot preserves 4 oz apple sauce 1/2 cup medium-dry Madeira 1 medium onion (chopped) 2 tbsp butter Cook onions in butter until they are translucent, then add the Madiera, the apricot preserves, and the apple sauce and heat it until it is thoroughly bubbling. Pour into bowl and allow to cool to room temp. Note: For the apple sauce I often buy a package of single serving apple sauce cups (look for the ones with no added sugar) and use one of the cups to make the sauce. This avoids the problem I usually have where an opened jar of applesauce gets moldy before I use it all.

i hope you have a large family or a few friends you want to share a meal with because is sounds as if you have a bumper crop! daisy just posted this recipe very recently and i had to try it out ASAP--we're glad we did! Parmesan Sage Potatoes Daisy 4 large potatoes, peeled, cut into 8 wedges 2 tablespoons butter, more if needed 1 1/2 teaspoons dried sage leaves 1/2-1 cup Parmesan cheese, grated salt and pepper In a large saucepan, bring half a panful of salted water to a full boil over high heat. Add the potatoes and cook for about 5 minutes or until they are just beginning to become tender but retain crispness. Drain and set aside. In a large frypan, melt the butter over medium heat. Add the potatoes and sage, and cook 10-15 minutes or until golden brown, adding more butter as necessary. Stir in the Parmesan cheese, salt and pepper. Serve with chicken, pork or steak. and if you are hoping for something that is a little more seasonal, this from ruthanna is terrific: MRS. CHANDLERÂS POTATO SALAD (Ruthanna) 8 boiled medium potatoes (in jackets) 1 Â½ tsp. horseradish 1 cup chopped fresh parsley* 2 medium onions, finely minced or 1 onion and Â¼ cup minced chives 1 Â½ cups mayonnaise 1 tsp. celery seed 1 cup sour cream Â½ tsp. salt Peel potatoes; cut in 1/8 inch slices. Combine mayonnaise, sour cream, horseradish, celery seed and salt. Set aside. In another bowl, mix parsley and onion. In large serving bowl, arrange layer of potatoes; salt lightly. Cover with layer of mayonnaise mixture, then layer of onion mixture. Continue layering, ending with parsley and onions. DO NOT STIR. Cover and refrigerate for at least 8 hours before serving. Better if made the day before. Yield: 8 to 10 servings Recipe can be doubled or tripled. * - do not omit or decrease i love this recipe from my aunt and you don't need to worry about it possibly going bad in a short period of time. enjoy! Aunt KittyÂs Italian Potato Salad Boil 8 medium potatoes until fork tender and then cut into bite-sized pieces To the potatoes, gently stir in: 2 or 3 stalks chopped celery Â½ chopped green pepper 1 small chopped onion 2 chopped tomatoes Stir together and then pour over the vegetables: 1/3 C vegetable oil 4 T cider vinegar Â½ tsp dried oregano Â½ tsp dried basil 2 or 3 cloves chopped garlic salt and pepper Cover and refrigerate for several hours (I prefer to add the tomatoes just before serving as I donÂt like what refrigeration does to the texture and flavorÂ)

No need to feel stupid! Hope you find a few you like!

And here is another for good measure! LOL

Crockpot Beef Stroganoff

1-1/2 lb stew meat cut into cubes
1T cooking oil
1 lb fresh mushrooms, sliced
1/4c minced onion
2 cloves garlic, minced
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper
1/8 tsp dried thyme, crushed
1 bay leaf
1-1/2c beef broth
1/3c dry red wine
1 c sour cream
1/2c flour
1/4c water
4c hot cooked noodles or rice

In large skillet brown the beef in hot oil, drain. In crockpot combine
beef, mushrooms, onions, garlic, oregano, salt, pepper thyme and bay leaf. Pour in broth and wine. Cover and cook on low 8-10 hours or on high 4-5 hours.
Discard bay leaf, and turn crockpot to high heat. Mix together sour cream, flour and water. Stir about 1 cup of the hot liquid into the sour cream mixture, return all to crockpot and stir to combine. Cover and cook on high heat for 30 minutes or until thickened and bubbly. Serve over noodles or rice. Serves 6

Here are two that are tried-and-true that we like very much!

Shredded Beef Fajitas

(Serves 3-4)

20 (1Â½-inch) cubes sirloin OR 1Â½ lbs boneless beef chuck)
Â¾ cup medium-hot salsa sauce
2 garlic cloves, minced
1 Tbsp dark brown sugar, packed
1 Tbsp soya sauce
Â¼ cup fresh cilantro (optional)
1 Tbsp fresh lime juice (optional)

Put everything in crock pot and cook on High for 4-5 hours or on Low for 8 hours. Shred meat with forks and return to sauce; cook on Low for 20-30 minutes for meat to soak up the sauce. Stir in cilantro and lime juice, if using. Serve on small soft corn tortillas with toppings of your choice (shredded lettuce, sour cream, roasted peppers, Spanish rice, etc).

Sirloin Roast

2-3 lb sirloin tip roast
2-3 garlic cloves, quartered
2-3 tsp dried oregano
1Â½ tsp powdered thyme
Black pepper, to taste
2-3 Tbsp dry onion soup mix
Â½ cup medium-bodied dry red wine
1Â½ cups beef broth, divided

With a knife, make holes in roast and insert garlic clove quarters in each hole. Rub oregano, thyme, and a little pepper all over the roast. Let sit in refrigerator overnight.

Let roast come to room temperature for at least 30 minutes. In a skillet, brown roast on all sides; transfer to slow cooker. Pour Â½ cup beef broth into skillet and scrape up all the browned bits; pour into crockpot.

To crockpot, add remaining beef broth, red wine, and dry onion soup mix. Cover and cook on Low for 6-8 hours. Turn roast over halfway through cooking.

When done, let roast rest on platter (covered with foil) for 20-30 minutes to let juices redistribute. Put the roast broth into a small saucepan and thicken with a cornstarch/water mixture.
