Failed at dipping shortbread in chocolate. again .what gives?

I have tried this twice, and once I could say that the choc got too hot. Ok, I get that.

But the last time, it was the same kind of thing. The chocolate is all good and runny, I dip the shorbread in, and NO!! it says. I will NOT accept any coating. I pull the shortbread out and it is still virginal white/cream. Once again, I let the choc cool a bit and I ended up spreading it on top before sprinkling sprinkles.

I am using Toll House or Ghiardelli chips with added buttter. Does this happen to anyone else?? and/or WHY??????
