Eggplant hors d'oeuvre

I had this dip/spread/whatever at a party a while back and asked to copy down the recipe. I made it on Christmas Eve, and it was one of the most complimented dishes. I highly recommend it. I think it was meant to be served warm as I did (made a day ahead and nuked) but I'm told it's good cold, too.

I didn't write the name down, but if I can read my own writing it came from "China Moon Cookbook" by Barbara Tropp. Here's the recipe based on my shorthand version; I'm putting my own comments in brackets.

1 to 1.25 pound eggplant

Aromatics:

1T minced garlic

1T minged ginger

1/4 cup thin sliced scallion, white and green parts

1/4-1/2 t chili flakes

Sauce:

3T soy sauce

3T brown sugar

1t unseasoned rice vinegar

1T hot water

2T corn or peanut oil

1/2t sesame oil

Prick and bake eggplant at 425 until fork tender, about 20-40 minutes. Split it in half to help cool. While warm, remove tough stem end [and bitter, hard white stuff] and peel, retrieving all pulp. Cube the pulp , the process in PF [pulse till fine but not pureed] with baking juices [I didn't get any.]

Combine aromatics, combine sauce ingredients.

Heat wok or skillet on high, at 2T oil [not sure where the sesame oil goes, I just added it here, too], add aromatics, cook 15-30 seconds, add sauce and sir till simmering. Add eggplant and heat through.

[Serve on whatever you like - I had crostini]
