Which recipe did you make over and over...

...until you finally got it right?

It seems there's always one recipe that's important to try, test, and retest, for whatever reason; until it's something you can do better than anyone else, and becomes a family favorite, or the thing everyone asks you to bring for the holiday or event you're attending.

For me, it started with my Grandmother's potato rolls. She also made cinnamon rolls from these, and they are the one taste that takes me instantly back to an early childhood feeling of being loved. She would ''complain'' (with a smile on her face) that it took her all day to make them, just to see them disappear, almost instantly. Not surprisingly, her recipe was an old one that had instructions like ''bake in a slow oven'', and the problems of dealing with a sticky dough were unknown to me at the time. I spent 10 years perfecting that recipe, and realized when I finally owned a more...modern oven...than the antique Magic Chef I was cooking on (which needed me to adjust the broiler door in order to adjust the flame), I could finally ''perfect'' my technique.

There have been others since then...you must know what I mean. For example, I finally learned how to make cookies, which for years eluded me although I could manage bread very well! There are some recipes that seem like they'd be so easy, if made just as the instructions indicate. But THEN, you find out there are tips and little tricks that make it easier to have a more successful end product.

Currently, I'm trying to perfect Junior's Famous No. 1 Pure Cream Cheesecake. That cheesecake is incredible; easily one of the best I've ever tasted, but I'm having trouble with the crust. I'm not getting it done enough to hold the topping, without it rising up to become part of the cheesecake. I'll figure it out, and have to say I'm enjoying the Testing!

Anyway...what recipe was it for you, that required much testing before you finally ''got it?''
