John you should get some good responses here as quite a few members have made stock and demi. I make my own chicken stock or chicken, veg and beef bones mixed. But it's not a regular thing at the moment and I'm looking for a big stock pot to make it easier to do larger quantities. Here's what I have written about my method for stock and chicken soup. Here packaged in twos in the supermarket, after they've removed most of the meat for their trays of wings, breasts etc. But there's still enough meat on the bones for a great and flavourful soup. Soup Ingredients: Homemade chicken stock - about 2 quarts 2 carrots - diced 2 stalks celery - diced 1 leek - diced 1 cup diced rutabaga or orange squash 1/2 cup fine soup noodles salt & pepper oil or chicken fat Ratio of solids to stock should be about 2 cups stock to 1 lb chopped vegetables. Add any more chopped veg if you don't have enough. Stock ingredients: 1 meaty chicken carcass or piece of whole chicken 2 heads of garlic 1 onion - cut in half celery stick - sliced 1 carrot sliced fresh thyme - large sprig 1 bayleaf black pepper & salt MAKING STOCK: 1. Early in day or day before: Preheat oven to 350F. Cut top off heads of garlic. Place on roasting pan together with chicken carcass and sliced onion and drizzle a bit of oil over top of all. (I had two carcasss to roast as they are sold this way in pairs at our supermarket. I also added a couple of beef bones.) Roast in oven about 40 minutes or until all is toasted. and juices from pan. 2. Put bones into a very large pot. Squeeze one head of the buttery garlic cloves into the stock pot, saving the other head of garlic for adding to the soup. Add the rest of the stock ingredients and fill pot with water to cover. Grind in fresh pepper. Bring to boil, turn down heat, put on lid and simmer for a couple of hours. Skim off any grey residue that rises to the top. 3. Afterwards, strain the solid debris from the stock ---(REMEMBER you're saving the stock so don't pour it down the sink - as has been done LOL !). I look through the solids and pick out the meaty chicken pieces to save for the soup. Throw away all the rest of the solid material. Here I let it cool and refrigerate until next day when it's easy to remove solid fat from top. Otherwise continue to make soup. MAKING THE SOUP: 1. Sauté the chopped ingredients in a frypan in a TBS of chicken fat or oil until lightly golden. Squeeze out the buttery cloves from the 2nd head of garlic and add to pan. 2. Put soup ingredients including small bits of chicken into large saucepan and add an appropriate amount of stock - about double the amount of liquid to vegetables. Put on lid and simmerwith lid on for about an hour. Add soup noodles during last 5 minutes. 3. Check seasoning, add salt. SharonCb

One of my favorite soups uses smokey ham stock. I make it thin style with just cabbage, onions, and jalapeno/serreno peppers... salt to taste. Good when fresh and great when simmered for a day... low cal/high fiber.... cheap/easy. Everything a soup should be. A "pea soup" that is spiced then put in the fridge to set up makes an interesting dip for corn chips. I like curry spices and hot peppers for my spices. A little ham fat and some leftover coffee would make a good start at red-eye gravy. With a plate of grits you can almost see the red clay and peach trees of Georgia. : ) lyra

LOL May! I don't really use a recipe... I eye up the amount of ham. If I had about a lb. of ham, I'd chop it in the FP, put it in a bowl, add a couple of Tbsp of sweet relish, a couple stalks of celery, chopped, season with some black pepper and add enough mayo to bind. I know some like to add hard boiled egg... If the ham is fresh, then you could figure the salad will be good for 5 days refrigerated but if the ham has already been sitting in the frig...for three days, then you would figure on the salad staying good for only 2 more. Five days is my limit when using any high perishable food and you need to figure the time left when using leftovers... Nancy

Pllog, here is my "lighter" pea soup recipe. I got it from "epicurious.com" but the attribution says "Bon Appetit, Dec. 2006." Split Pea and Green Pea Soup With Fresh Dill 3 TBLSP extra-virgin olive oil 1 large leek, white and pale green parts only, chopped (about 1.5 cups) LR note: I would probably often have to sub other types of onions as I can't usually afford or find leeks. Occasionally they do become available in the market at reasonable prices though. 1 bay leaf 1 cup green split peas, rinsed 5 3/4 cup (5.75 for you decimal folks!) vegetable broth, divided. Could use chicken if you don't have veggie broth I guess. 1 cup frozen peas, thawed 5 TBLSP chopped fresh dill, divided. LR note: I rarely have fresh dill and often have to make do with dried so I would do that to taste, starting with 1 TBLSP. Heat oil in heavy large pot of med. high heat. Add leek and bay leaf. Saute until leek wilts, about 3 min. Add split peas and stir to coat. Add 5.25 (5 1/4 for you fraction folks) cups of broth. Reduce heat to simmer until split peas are just tender, about 35 min. or longer with more water depending on how old the dried peas are . . . (LR's note) Remove from heat and cool somewhat. Transfer 1 cup of soup solids and remaining 1/2 cup of broth to a blender. Add peas and 4 TBLSP of fresh dill. Puree until smooth. Return puree to pot with rest of peas. Season to taste with salt and pepper. Ladle into bowls and serve sprinkled with remaining fresh dill. LR notes: I would not do that, I would mush up just the frozen peas with a hand blender and then add them and mash the rest a bit with a masher to combine, or else just add the frozen peas to the pot and use the hand blender to blend mostly just the area with the frozen peas. But who am I kidding, I probably would just add the frozen peas and give the whole thing a zip with the hand blender, trying to keep pea soup out of my hair and the stove area . . . This would be great with buttered herb croutons if you are so inclined . . . I've also made it with spinach and chopped pea pods added, and maybe some fines herbes . . .
