I have a family member who visits yearly and is the worst snoop ever! I have no problem with someone going into my bathroom or kitchen cabinets. I am fine with that. I have found this gal reading my bank statements, checking my CallerID and going though my desk. She giggles and says she just wanted to see who called me or who my mail was from. She is bold enough to ask me what business I have with such and such a company. When caught in my file folders she bold-faced lied and said she looking for pen. Often she tells terrible stories about relatives and claims they just "told" her this...she didn't ask or snoop. I really think she has a psychological problem. I now have locking file cabinets and one locking closet. I need plenty of notice before she arrives. I do love the marbles story. I am often tempted to plant "fascinating" things for her to find so she can tell the relatives that I won millions in the lottery or something. LOL

I've had this recipe since my early college days (1980's) and most everyone likes it except confirmed non-squash eaters. I got the recipe card from the health food store in East Lansing MI. Cheesy Tofu Squares Makes 8 servings of about 230 calories and 500 mg. sodium each. Grease 8 or 9 inch baking dish, preheat oven to 350 degrees. Ingredients 8 oz. white cheese (mozzarella, swiss or cheddar) (You can use a little less than this and get away with it, like maybe 6 oz., if you are really touchy about cholesterol and fat. It's better of course with all the cheese.) 8 oz. tofu 1 TBLSP tamari or lite soy sauce, or regular soy sauce 2 TBLSP oil 1 med. onion, chopped 2 carrots, grated 1 med. zucchini or yellow summer squash, sliced thin (here's where I'm thinking you could use partially cooked spaghetti squash, but I've never tried it. Use about a cup to 2 cups I would say) 3 large tomatoes (can use a small can of canned tomatoes, with the juice drained.) 2 TBLSP hot Mexican salsa (or use med. or mild if that is your taste. I use med. and a dash of tabasco) 3/4 tsp. oregano 1/2 tsp. dried basil or 1 1/2 tsp. fresh basil 1/4 tsp. salt (omit if using regular soy sauce) 1/4 tsp. black pepper 4 eggs (I'd probably use three eggs and two egg whites to cut the calories a smidge) Directions Grate the cheese and set aside. Drain the tofu (see that tofu link above for how to do that), and dice the tofu into small cubes. Place in a small bowl and mix with tamari (or soy sauce). Set that aside too. Heat oil in a large saute pan and add onions and carrots. Saute 5 min. or until tender crisp. Add squash and tofu and saute until squash is tender (if you're using a harder squash, you will have to add it first to the pan and saute it a little longer than a zucchini or summer squash. Meanwhile, peel tomatoes and chop fine. (When I use garden fresh tomatoes I never peel them, and most of the rest of the time I use canned ones which are already peeled.) Add tomatoes to squash mixture along with salsa, oregano, basil, salt and pepper. Simmer rapidly until liquid is evaporated (this is important!), about 15 min. Remove from heat, let cool to room temperature, (or at least cool enough it won't cook the eggs and melt the cheese when you add them). Beat eggs and stir in 1/4 cup grated cheeese. Stir egg mixture into cooled tofu-squash mixture. Pour half of this mixture into a well greased 8 inch square baking dish (I use a little larger baking dish when I make this, like maybe 9 inches or 7x11). Top with half remaining grated cheese. Layer with remaining tofu-egg mixture and top with cheese. Sprinkle top with paprika if desired. Bake 25 minutes or until eggs are set. Remove from oven and let stand 10 minute before cutting into squares. It doesn't say what temp. to bake it at, I would do 350 degrees. This is very yummy, especially if you like those kinds of vegetables, which I do. I'll bet you could sub chopped broccoli or cabbage for the squash too.

Another thing to consider is how far/long people will be traveling to your wedding. If someone lives an hour away, they will probably leave home by 6:30, in order to get to the wedding site and find a parking space and get into the venue, plus a few minutes extra time in case of getting lost/construction/accident on the road. That means that they might be eating dinner at 5:00 or 5:30, and getting ready at 6 pm at the latest. So by 9 pm, there's a good chance they might need more than cake, mints, and chips to keep them going. So substantial finger foods are a good idea, unless you want the guests to leave early in search of food. I agree that for an 8 pm wedding, a meal isn't necessary afterwards. But I do think hosts have to take into consideration travel/prep time for their guests. If everyone's staying at the same resort and is just walking down the beach to the wedding, that's one thing. But if many of the guests are driving from home, they may be eating dinner pretty early in order to make the wedding on time.

Heh heh, these are quite the controversy :oP I guess I have to see what the Versache logo is (since I didn't recognize it in the pattern). I thought the cups were fun, but actually when we serve coffee, we do that in the library and we use nice big chunky hand thrown mugs that I have collected from all over so these would be just for fun (or china cabinet decoration I guess). The red is rather tomatoe like. It's not pink at all. I have no red in the dining room so it won't clash with anything. I was going to have to buy several filler pieces elsewhere so I'll do a bit more research on the pattern. I don't have to buy it at Costco...but their price is cheaper. I'll email Rosenthal and ask if the Costco pattern is a different pattern, and if the quality is different than anything I'd buy elsewhere. Typically on this type of stuff it's not different...but you never know. They wouldn't be my "only" china....well I suppose they would be, but they wouldn't be my only formal dishes. My texas dishes (that's where I purchased them) were hand made in Italy. They're quite nice, they just chip easily so I don't love using them as I thought I would. We ues those more often than anything. If we entertained we'd use restaurant china (rented) it if was a group larger than a dozen or so. THere is another set that is sold at costco which is black as the primary color. It would blend with these well, so I might mix and match sets. I will have to pick up one of each and see what it looks like with my things after we get into the new place this week. I'll post some pics and see what ya'll think then :o)

Oh Peppi, that was great and too true. Within my one small group of friends, I think there are 100 food intolerances. Sulfites, anything with cholesterol, garlic, shellfish, gluten, tomatoes, you name it. The last time I had a gathering I told them to bring their own food. Seriously! I'm tired of cooking a lovely meal and then being told they won't eat half of what was on the table.

Loved it! Already emailed to some family members. I do have family members that are:
allergic to onions & garlic
no grapefruit
have issues with gout (no asparagus, mushrooms, sausages and minimal yeast breads)
gluten intolerant
vegetarian
vegan
others that won't eat granulated sugar (they want natural sweeteners)
others that will only eat organic

Then they wonder why you've made so much food!

Very funny. Not to be insensitive to true allergies and medical conditions...but you have to wonder if some people make this stuff up!

A note on sodium. That attached link says the cdc now says sodium is not so bad for you and reducing it too much is dangerous.

FYI, I'm one who is intolerant to many foods, so I totally "get" it!

I wonder how many people who say they are "allergic" to certain foods in reality just don't like them. I don't like cheese in any way, shape, or form (you can imagine how vigilant I have to be in this era of add cheese to everything. It's one of my pet peeves and I believe it contributes to the national obesity problem, but I digress). I remember a friend I was lunching with explaining to the waitress that I was allergic to cheese so be sure there was none on my fish sandwich, Somehow it's more acceptable to be allergic than to just not like something.

Absolutely! My friend who hates any food that comes from the sea, actually any species of fish or seafood often tells people that she's allergic. My DD is very allergic to pistachios band now carries an epipen. In today's world nuts are added to many dishes, often without thought. As a result, she just tells everyone she's allergic to nuts and leaves it at that. She doesn't want a reaction to a nut that she's unaware of.

Yes, it sounds like dinner at my house quite a lot of the time. I just make so much stuff that everyone finds something to eat that's acceptable, LOL.

Oh I have a better one than that..I made thanksgiving dinner for 11 family members,now Im on dialysis 3 days a week I need a kidney,I was beyond exhausted when I sat down.I noticed 3 of grandkids weren't eating nor was the daughternlaw.You know like a little pile mashed potatoes maybe peas.My daughternlaw went to rest room.I said to grandson hey why aren't you guys eating."He says Cause we go somewheres else"He said they were going to great Grammies for dinnerS They didn't eat at my house ,so they would at hers.

My grandson used to say he was allergic to something if he didn't like it, but I think that was because he didn't understand what "allergic" means.
