What's for Dinner ... Tuesday?

Mine was a 'rerun' from last night: red beans, brown rice and a salmon patty.

The sun is out so pretty right now here in my part of Ohio. But the weather map shows I'll soon have some snow. Not to amount to much this time though.

So what did you plan for your main meal today?

Mine was the same as this time last week: Miss Myra's for a serving of smoked chicken salad and crackers. Mighty good.

We had chicken tempura, zucchini and onions, rice and baked beans. We had my sister to dinner and she loves chicken this way.

gadgets, hope you are feeling better soon and nothing too difficult to resolve has happened.... DH is just about to put on the prime rib that we had planned but didn't cook yesterday. He's home early enough this afternoon that he can cook it, and roast potatoes, I'll make a salad and wash some blueberries, adding some antioxidants to the meal ;) The roast had been for the holiday weekend. We ate out on Sunday, weather yesterday was cool and drizzly and we got involved canning tuna outside over gas in the open doorway to the garage and didn't feel like watching the roast too. Stuffed patty pan squash is on the menu, as much as I hate to use the oven. The stuffing will consist of squash innards, jalapeno and chipotle peppers (small doses), corn, chopped tomato, quinoa, seasoned with a little cilantro, lime zest, and topped with queso fresco. It's gotta be good, right? A neighbor brought over a Sugar Baby watermelon which will be enjoyed later.

Leftovers here, too. I'm going to make chicken fajitas with the chicken from last night, plus grilled green, yellow sweet peppers, and onions, avocado, chopped lettuce and tomatoes and sour cream, all on a flour tortilla. I'll mix up a little fresh salsa, too, I guess. Raven, I hope that your power comes back on SOON!

I made a pile of zucchini noodles, sauteed them briefly in a little butter with some minced garlic and served it up with grilled shrimp and smoked sausage kabobs. I steamed some broccoli, too, to stir in with the zoodles. It's been very rainy here and very steamy when it isn't raining. No sitting on the patio, that's for sure.

Hi Shirley,
We were at Luckygardner's on Saturday evening and I took a large dish of Chicken Marbella. There were enough leftovers for all of us for another meal, so we had it again tonite. Made a caesar salad to go with it.

I have some big veggie shish kabobs and chicken fajita meat and some avocados.

Temps dropped 15 degrees in less than an hour, and everything is white.

Glenda: There are some foods I could eat several times a week and not get tired of them.

Pam: I haven't tried chicken tempura, but I'll bet it's good, especially with all the other dishes.

Old Fixer: Steak and salad ----- any day of the week.

Jasdip: Lucky gals, being able to get together. What fun that would have been!! I looked up pictures of Chicken Marbella. Really looks good.

Ravencajun: Slide some of those ingredients on to a plate, and send it north.

We had pizza. I worked late; DH ate at one of our local pizza places and brought home leftovers for me.

Tostadas, some had green chile on them some had red sauce, then topped with ground seasoned beef, lettuce and sour cream. Vanilla Blue Bunny ice cream for dessert.
