Guess What I Did Today :)

Hi everyone,

Well, today I accomplished something I thought I never could do: cook a big meal! My gram (who's 80) wanted me to try oyster stuffing and she bought a small turkey to roast it in! So, after staying the night and waking up early, we both (more of me since she can't get around too good) stuffed the turkey, made regular mashed and fried sweet potatoes, corn (from a can, actually Mexicorn), noodles, gravy and a salad (I'll get to that in a moment). We did it throughout the morning and early afternoon (taking breaks while doing so). We made most of the things towards time to eat but the turkey, stuffing and salad we all did in the morning. The leftover oysters we made into oyster stew for lunch.

The salad we made (I brought some of it and the other foods home with me) is delicious. I wanted to know if there was a name for this salad? Here are the ingredients and how much we used.

Lettuce (a whole head of Iceberg)

Tomatoes (I think three)

Onion (half of a white one, diced)

Hard boiled eggs (seven of them)

Green olives (diced up and from a jar)

Miracle Whip (not a big fan but it wasn't sour when I ate it just now!)

I just had some and boy it was good! My gram said she had it in a restaurant one time and she loved it! I view this day as an experience I'll never forget and a total self-esteem booster! The meal only consisted of my uncle, my gram, my dad and myself (Mom didn't want to come). We didn't eat much but it was good! The stuffing was the best I ever ate!

Sounds like a wonderful meal and sweet you and your Grandmother could make it together. Sorry I can't help with a name for your salad unless maybe a cobb salad? Were all the ingredients chopped?

1--The bad news is that the local postmaster who has been so helpful in the past is no longer there. He is no longer employed by the USPS....sigh 2--This AM I called about making an appointment with the person in charge. I spoke with the 'officer in charge'. When I asked his name, he gave me his first name, and would not give me his last name. Why would he have refused me that info? 3--I explained that I had several padded mailers that I had received in and they were unopened, and the customers who had sent them had been overcharged. I was wanting to bring them in, and have him (or anyone for that matter) inspect them and determine that they had indeed been overcharged. I explained that I then wanted a signed piece of paper saying that they were overcharged. He said he could not help me and gave me the telephone number of Consumer Affairs in Louisville. Well, I know from talking to someone down there a while back that there was at that time no Consumer Affairs Manager and that NO ONE was even an acting manager. gggrrrrrrrr........ 4--This week I received in a bubblie from Williamsport OH 46134 that was overcharged. It weighed .7 OZ yet was charged $1.05, which is for a 2 OZ large envelope. That means that either the clerk failed to weigh it, or else their scale needs calibration, thus is overcharging a lot of customers. I got a tel# for that PO, and when I called it, I get a non working # recording.........ggggrrrrrrr.........shot down on getting that done. 5--I was on the phone probably 30 minutes or so this AM with the USPS complaint #, getting 3 separate complaints filed. I have the confirmation numbers on all 3 of them and someone is supposed to call me back within 2 business days. Yeah right. I'm not holding my breath on that one. On the one report that was filed for overcharge, I have asked that the overcharge be sent to me. I wonder how they are going to handle that. shall I go on? Anyway, I this AM I learned about Restricted Delivery. Below is the info on that. Restricted Delivery Be sure your mail gets into the right hands. When you want your mail to reach a specific recipient, use Restricted Delivery. Sometimes, you might have private or highly classified documents that you require to be seen only by the addressee. Restricted Delivery ensures that your mail is only delivered to the person you specify, or to the person authorized in writing to sign for intended recipient. I just checked and the cost on a 13 OZ First Class Parcel, sent Certified, with Restricted Delivery signature and signed receipt of the person that accepted it being sent back to me would be less than $11. The exact amount escapes me now. What a bargain, huh, if the Parcel gets to someone who does their job? I have started to compose my letter to The Honorable John E. Potter..but will have to abandon that until I am feeling better. Postmaster General U.S. Postal Service 475 L'Enfant Plaza, SW Washington, DC 20260-0010 I also found an email address for him this AM, not that anyone would even really read any of the complaint emails and actually respond. I found the addy at the Answers.com site, so don't put much faith in it being up to date or valid. E-mail: pmgceo@usps.gov Light bulb moment. I can try taking in the overcharged envelopes, (one at a time might be best) along with an email from the member who sent them and they can authorize me to file for and collect the overcharged amount. I would think that would generate paperwork and that paperwork could then be used as additional evidence (proof) of the 2 year 9 month old problems of post offices across the US overcharging.

Hi jlhug, thank you for the welcome to the Prius family. I am happy to be a member! ;-) I found priuschat.com today & there's some good information there. I was lucky in that a friend just purchased a Prius 3 weeks ago. So he told me all about the "break-in" period, and what I should and should not do for the first 600 miles. I commute to work four days of the week, and average a daily 55-mile roundtrip. I use the city streets & freeways every day to drive to work & back. So my decision to purchase a Prius will work out great for my driving needs. I've only had my Prius for 2 days, but I sure love it! As I drive, I watch the panel display for MPG readings and am learning fast as to what my car likes & dislikes. It's a great real-time learning tool. The mileage I am getting is above the posted 50/60. I'm not heavy on the pedal when I start, don't speed, and I take advantage of a lot of "coasting" ...which the Prius really likes! :) I haven't had a chance to look thru every nook inside the car, but I will sure find the spots you mentioned above. Thanks everybody for your kind words. We actually had people over this weekend SWIMMING. That said, we're still a landscape/construction zone. I'll put some pictures up of where we're at. marta p: Yes, we found a jump rock. It's perfect and will, hopefully, look amazing once properly landscaped. womanowned: VERY long process. However, I'm in Michigan so it's not quite fair of me to count Nov - March. Then in May, our Great Lake State had a record amount of rain which stalled us further. We're on clay so even when the rain stopped, the trenches needed to be pumped out, etc. I was patient because at the time my build was stalled, the rest of the country was experiencing devasting floods and tornados. Whenever I started to whine, I realized that my problems were small in the grand scheme of things. (I didn't necessarily share those feelings with the pool builder, though ;-) Once he got rolling, he rolled. Now we're trying to tie up landscaping.

Do you have a laundry chute that's just a long upright box, good for only one-way traffic, i.e. you throw the dirty stuff in, to get collected in a basket at the bottom? If you are, or have a spouse, or a friend who is, a handy person, maybe they can rearrange it to make it into a two-way street? If you could get or build a box just the right size to fit into it, you could attach a rope to it, split to attach in three or four places, so that it pulls straight up and doesn't bind. Maybe you could just have the rope attached to a hook just above the top of the chute and pull the box up with some clean laundry. Or perhaps you could fasten a pulley above the middle of the chute, then have the rope pass over it, to allow a pull without hanging your body into the hole. Perhaps you could arrange a second pulley at the top to have the rope slip down beside the box, and you could get a slim weight to attach to the bottom end of the rope when you wanted to pull the clean stuff up, to help lift the load. ole schemer

OMG Brad I have no idea what you've been up to the past five days but God bless you for getting excited about turkey at this point! That said, congrats on your first big meal!

I have no idea what to call your salad, but I'm most interested in hearing more about the oyster stuffing, and the oyster stew while you're at it.

Sounds like a really nice memory to have had with Gram.

Fantastic job! Anytime a meal turns out well it is a great accomplishment. And how wonderful you were able to share the experience with your Gram. Now would you share your oyster stuffing recipe?

Thanks everyone!

The oyster stuffing and stew are really easy to make! My gram doesn't have written recipes but this is how to make them.

Oyster Stuffing
Loaf of bread, broken into pieces/cubes (or bread cubes if you wish)
Diced/chopped onion
Diced/chopped celery
Jar of oysters (I poured them into a saucepan and got them out one at a time)
Salt and pepper

The oysters in the jar were large and my uncle bought a pint while Gram said she usually used half of a pint. It's just like making regular stuffing except adding the oysters only cutting them up if they're on the large side.
Stuff into duck, chicken, goose or turkey or however you wish! Enjoy!

Oyster Stew
The oysters that were left over in the saucepan, with the juice. I just took it out of Gram's fridge when we wanted our lunch! :)

Milk
Oysters with the juice
2 tablespoons butter
Salt and pepper

Combine all ingredients in a saucepan. Cook and stir over medium heat until butter is melted. Pour into bowls and serve with oyster or soup crackers. Enjoy!

Linda, my Gram shakes her head when she drops or spills something. I told her a good cook is a messy cook! She chuckled at that line!

Foodonastump, I had to lol when you said "Congrats on getting excited about turkey at this point!" I don't even like turkey and mom fixed duck and chicken for Thanksgiving. P.S. Mom hates oysters and shellfish for that matter.

I've been helping mom with cooking since I was little (I helped her bake cookies) so this is a vast improvement!

Congratulations, Brad, on a successful meal. You beat me to the oyster stuffing, I'm trying to decide what to stuff oyster stuffing INTO, I've had three turkey dinners in the last week and so it's got to be something else.

Maybe cornish game hens, or chicken.

I'm glad you and your Gram got to have this nice cooking day together, and that you'll remember some of her recipes. Family heirlooms and memories...

I think your salad sounds more like a 7-layer than anything else, just missing the peas....

Hi Annie,

Three turkey dinners! You must be exhausted! Cooking a meal like this is tiring but I LOVE doing it! I tried candied sweet potatoes for the first time ever yesterday and they are tasty! I said to Gram: Who needs candy when you can eat them?! LOL

Joann, yes all the ingredients were chopped by my Gram who used a large paring knife to do the job!

I have a few corrections to make. It was a quart jar of oysters (they aren't cheap!) that we used for the stuffing. Gram set out the stuffing with all the ingredients, except the oysters the night before so it got a little firm.

If anyone tries these recipes, I would appreciate it if you would let me know! Gram would be delighted to hear that other people tried her recipes!

Got myself a couple of times from accidentally touching a hot pan but I'm okay (I did use mitts when I took the lid off the roasting pan to baste the turkey but it was sitting on the stove next to pans that we were cooking in). If everyone keeps liking my cooking I may have to consider a career as a cook!

Well done! You know that when you are 80, the memory of this meal will be as special as it is today. Cooking memories are the BEST!
As for the name of the salad......"Gram's Salad" sounds good to me! :)

Brad, between you and seagrass, I'm definitely doing the oyster stuffing, and I might even have to have oyster stew if there are "leftover" oysters!

Your meal sounds grand! And delicious. My grandmother also loved oyster stuffing but rarely indulged herself. Making an entire turkey meal is a huge accomplishment. I was glad this year to be in charge of stuffing, spuds, and gravy only. Though I did make pies to have at home.

Ya done good. Photos would be delightful. I agree!

I know, because my grandsons are the light of my life.

I can't help with a name for the salad, either,
I agree with murphy, "Gram's Salad" seems right.

Annie1992, we like oyster stuffing, too,
But because of my 'yankee' upbringing
and my family's Texas upbringing,
I make it with half cornbread & half white bread.
With as many oysters as I can afford,
And I usually bake a goodly share of it in a seperate dish,
not stuffed into anything at all.

rusty, I made plain white bread/sage stuffing and I made cornbread stuffing on Thanksgiving, to satisfy my very Midwestern children and my Tennessee-raised husband. Now I get to try the oyster stuff just for me.

But stuffing that isn't stuffing into something? That just seems sick and wrong, LOL.

When one of our sons fries the turkeys,
Our stuffing gets stuffed into casserole dishes!

Does that makes it 'dressing' rather than 'stuffing'?

Anyhow, I mix the cornbread and the white bread together,
sometimes include some whole wheat, or whatever else is on hand.
Same seasonings in the whole 'mess'.
Everyone is happy with this method.
And that's what counts.
And it always all gets gobbled up.

My gram doesn't like to have her picture taken but I might take pictures of the food that we make. She never really cooks big meals anymore but she does make things like the salads (potato, macaroni, etc.) and I do make a mean fried steak (not to brag). I like the idea of calling the salad "Gram's Salad".

Thanks for offering on how to post pictures but I already have! I post on the garden forums and I did take a picture of the fried green tomatoes and mom's new cookware she got. I don't have the best camera but I do get some nice pictures.

Usually if I want something to eat when I'm there, she gets me to cook it or dad if he's there (when we visit).
Annie, I'll be sure to say thanks for all of you and of course I always get a hug from her :).
