Beyond Delicious Cranberry Sauce!

I just made this and I know it will be gone by Thanksgiving and I will have to make more. And I made a double batch!

I used a large can of mandarin oranges, and used the juice for a portion of the water. Then I just chopped them. I used Sunmaid Fruit Bits (apricots, raisins, cherries, apples, peaches, plums) and Craisins for the dried fruit and a fresh granny smith apple. And canned pears. And I only used 1 cup of sugar even though I doubled everything else.

CRANBERRY SAUCE EXTRAORDINAIRE

Ingredients

Â 1 cup granulated sugar

Â 1 cup water

Â 1 (12 ounce) package ocean spray cranberries

Â 1 orange, peeled and pureed (plus I like some zest)

Â 1 apple, peeled and diced

Â 1 pear, peeled and diced

Â 1 cup dried mixed fruit

Â 1 cup pecans, chopped

Â 1/2 teaspoon salt

Â 1 teaspoon ground cinnamon

Â 1/2 teaspoon ground nutmeg

Directions

Boil the water and sugar in a medium saucepan until dissolved.

Reduce heat.

Add the rest of the ingredients and simmer for 30 minutes, stirring occasionally.

Remove from heat and allow to cool to room temperature before serving or storing.

Sounds wonderful! I'm going to try it. Haven't done the shopping yet, so that's a plus.

I found this info when I was looking up storage time... which I think for the homemade stuff is about a week in an airtight container. It says it needs a full boil for 10 minutes (sometimes I think I may simmer mine a little too much and the boil may be too weak). It also mentions that you have to let it cool at room temperature.. moving it to the fridge to soon can affect the gel. Lastly, they recommend NOT doubling the recipe as it may affect too many variables. (I've personally never had any huge problems..I just let it cook longer). Just finished up mine. Very traditional - cranberries, grated orange peel, orange juice (and the chopped up remains of the grated orange) sugar, cinnamon and a bit of grated ginger. No booze in this one - too many kids at the dinner. It smelled so good cooking and tastes even better. btw, I made spiced poached D'anjou pears for dessert for family Sunday dinner this weekend. They were a huge hit ;-)

Well, having said I used canned sauce with whole berries, I had quite a surprise on Wed night when I finally started to make my cranberry sauce. I had used Kroger's Quick List - order online, select pick-up time, go to special place in the parking lot, call number on sign, and ones groceries are carried out and put the the car. I've used it before with no problems. Not this time! I opened both cans and started to pour them into a mixing bowl so I could add the fresh orange juice and zest. They had given me the JELLIED cranberry sauce, not the one with whole berries! I'm sure there was a Kroger open somewhere at 11PM on Wed, but I wasn't going to get dressed again and go out. Fortunately, I had also ordered 2 packages of fresh cranberries to use in the Nantucket Pie I take to my pulmonary rehab for our Christmas party. Well, there's a first time for everything, so I followed the recipe on the bag, cooked it WAY down so it was very thick, added the fresh squeezed OJ (don't like to cook it - can make it bitter) and the fresh orange zest. Easy, peasy! And delicious. I will forget canned from now on.

Linda - the Sunmaid Fruit Bits (apricots, raisins, cherries, apples, peaches, plums) are dried fruit. And they are already cut into very small pieces! And they are on sale at Publix today for $2.00 for about 1.5 cup bag. I added the Craisins to make it 2 cups of dried fuit.

This is so good! I like it tart, so you may want to use the full amount of sugar if you like it sweet.

We just had a spanish food dinner party for my husband, but everyone tasted the cranberry sauce and loved it.

And the dinner was so delicious. My stepmom is Panamanian and made mojo pork butt, yellow rice, black beans and sweet fried plantains. And yellow cake with fudge frosting for dessert!

We usually have Cranberry Jezabell but this may be the change in Thankgiving dinner! Thanks

Thank you so much tropicals9b for posting this recipe - it is truly beyond delicious!

Made this sauce (although it came out more of a chutney or almost a filling as Linda mentioned with the changes I made) last night and we couldn't stop eating it, lol

I used a little better than 1/2 cup sugar w/1 cup water, 2 bags fresh cranberries, 2 cups dried fruit (cherries, blueberries and apricots), 2 small cans mandarin oranges, the zest from 1 orange, 1 apple, 1 pear and the rest of ingred. as written.

Paulines - it looks like you doubled everything but the water? Maybe that's why your's is thicker? Don't get me wrong, even with two cups of water it is very thick and chunky and probably could easily be used as pie filling!

I can't wait to have it on a turkey, stuffing, mayo and cranberry sauce sandwich the day after Thanksgiving!

We have family with nut allergies do you think I could just leave them out and put in more of the fruit bits?

LOL, I think you're right.

Originally used 1 bag cranberries, but DD said it didn't look cranberry enough, so we added 1/2 and then the rest of the 2nd bag. Of course, had to add more dried fruit then.

I agree DQ, the recipe will be fine w/o nuts.
