Comments (14)Cranberry Jezebel (adapted from Cooking Light and LindaC on the Cooking Forum) Cranberry Jezebel 12 oz bag fresh or frozen cranberries 1 c. fresh squeezed orange juice 1/2 c. white sugar 1/2 c brown sugar 2 Tablespoons horseradish 1 Tablespoon Dijon mustard Wash and pick over the berries. Put water and sugars in saucepan (large enough to prevent boil over) and bring to a boil, add berries and return to a boil, cook on medium for 10 minutes from the time it returns to a boil, stirring occasionally. Cool to lukewarm then stir in horseradish and Dijon mustard. Refrigerate for at least a few hours or better yet overnight....See MoreCranberry Sauce -- What do you prefer/use?
Comments (25)Well, having said I used canned sauce with whole berries, I had quite a surprise on Wed night when I finally started to make my cranberry sauce. I had used Kroger's Quick List - order online, select pick-up time, go to special place in the parking lot, call number on sign, and ones groceries are carried out and put the the car. I've used it before with no problems. Not this time! I opened both cans and started to pour them into a mixing bowl so I could add the fresh orange juice and zest. They had given me the JELLIED cranberry sauce, not the one with whole berries! I'm sure there was a Kroger open somewhere at 11PM on Wed, but I wasn't going to get dressed again and go out. Fortunately, I had also ordered 2 packages of fresh cranberries to use in the Nantucket Pie I take to my pulmonary rehab for our Christmas party. Well, there's a first time for everything, so I followed the recipe on the bag, cooked it WAY down so it was very thick, added the fresh squeezed OJ (don't like to cook it - can make it bitter) and the fresh orange zest. Comments (15)I buy several bags and freeze them as my family and friends love my homemade cranberry-orange relish as a side dish year round. I also make a few batches all through November and early December and freeze that, too. I make a delicious coffee cake with it (added on top before baking) and so , for me, it’s a staple. I did see bags of frozen cranberries at our Walmart SuperCenter just the other day, which I thought was odd. But, as already mentioned here, I never see the jarred cranberry sauce in stores until sometime in late-October. I hope you find some. Comments (19)It will steep and get better so hope you made it at least a day ago minimum. It is for sure a 'to taste' thing with the sugar. I make relish and sauce each year--double batches. We eat it by the cup full! The relish gets the orange peel cut into as I process the cranberries and the sauce gets the rest of the orange as it cooks. Correct it has NOTHING to do with the thickening. I do think it enables one to use less sugar..the added flavor cuts the natural bitter of the berries. Truly you can't mess cranberry sauce up.
