Need Help for dinner tonight (pork)

Hi Everyone!

Today I bought some nice looking boneless pork loin chops thinly sliced. Got any good recipes using this?

I saw that breaded pork that Ann made Saturday night and that looks really good. Would this cut of pork work for that?

Thinly sliced chops are best cooked very quickly....just pan fry quickly...maybe dredge withg a little seasoned flour or fine bread crumbs, but if you over cook them even slightly they will be tough and dry. Ann's looked toi be at least 3/4 inch thick.
If yours are between 1/4 and 1/2 inch thick,,,,just flour and fry....when they are brown on both sides they will be done.
Here they are called "breakfast chops" and cooked much like bacon.....and if you over cook them they can be crunchy like bacon! LOL!

We had chicken cacciatore last night, and I cooked six chicken thighs, thinking that two thighs would the the serving for one person. That was wrong, and so we'll be having that again tonight. I put lots of vegetables in it (celery, onion, red bell pepper, tomatoes, mushrooms, etc.), and so it doesn't need side dishes, although I did serve it with rice. So tonight we have either rice or pasta with the leftover chicken. The last two thighs will be someone's lunch. I do plan to add stuffed green olives to it before I heat it up. Lars

I was going to suggest the pressure cooker. Without a manual, you can still get some good info online. I've included links below to the two most popular sources for pressure cooker recipes. Also, you could search online for the manual that accompanies your particular cooker. Once you get a general recipe for a pot roast that's about the weight of your cut of meat, you'll know how much liquid is needed and how long to cook it. Dad always cooked when he could. Weekends, and then when he retired to work from home... he was cooking up a storm. Mom always cooked, too. Two different styles... Mom followed recipes, Dad played Chemistry Experiment Kit. Both were great at it. I learned a lot via osmosis from both, and have always been confused when hearing that women were supposed to be in the kitchen... WHY not both? Mom wouldn't let Dad clean up, he ended up with water and soap spritzed everywhere. So, um, that's where I came in... (Maybe I should have tried cleaning up the same way he did... ) Oh, after Dad retired/worked from home, they loved to grocery shop together. They'd usually hit three or four groceries at the same jaunt out. There were only a few failed meals, but everyone should cook often enough that they have mistakes to learn from. I'm single, but my brother loves to cook as much as Dad did. He experiments a bit less (I mean, how many people will bring home an entire goat's head and cook it?) but he's an excellent cook in his own right, too. And he cleans his kitchen along with his wife.

I seldom see ground beef in supermarkets with the hard white fat that makes it juicy when it melts. They throw in all the connective tissue, which isn't fatty, just so there's something white in there to pass off as fat. Fatty hamburger isn't necessary in a recipe like chili where you brown the meat, but for meatballs, meatloaf, and burgers, you need hard white fat. With the right amount of fat, the meatballs will be light and a bit spongey. I'm buying my ground beef from a meat market now because they trim the meat and they grind the hard white fat along with the muscle meat. I've thought of buying a metal meat grinder like my mother had but I have nowhere to attach it. I would save the fat trimmings from a ribeye steak and grind it with well-trimmed chuck.

Ok well I made those cute little pork cutlets last night. Made them with Panko. They came out beautiful!

I fried them ouside on the patio to keep the fried food smell out of the house.

But sadly I dropped the whole pan of them on the floor. Upside down. They were all laying there where I'm certain there is cat hair, dog hair, dirt..... they're pavers with sand/dirt in between them!

Hubs said he'd still eat them. I tried but couldn't. I get grossed out too easily.

So much for the cute little pork cutlets. I threw a bunch away after he ate what he wanted.

Now that man won't eat vegetables but he'll eat off the pavers. I just dont understand him.
