Time to Think about Dinner Tonight

OK, I asked for it. What's cooking in your kitchen tonight? I'm having leftover Chicken, Okra and Slaw. So boring.

I'm still hungry for Shrimp Gumbo, but Main Man says it has to much Cholesterol. I told him that he'd just have to eat around the Shrimp. Maybe I can add a little crab meat.

We have Easter leftovers. Mainly baked ham, baked beans, polish sausage, rolls, and fruit and green salad. Sure makes "cooking" dinner easy!

Anney, LOL, no problem. It happens to the best of us. AND, it is confusing. There's John Scheepers and there's Kitchen Garden Seeds. 2 yr ago when I 1st ordered from them S&H was $2 rather than 2.50. A sign of the times. I also have a beef with the high cost of S&H. Some places are reasonable but most are over the top. I try to find all my seeds at a single source to cut down on cost. There's a sweet pepper I want seeds of but I can't justify ordering them when they don't have anything else I want. Ohio grower, I like simpson elite also. That's another seed I can't find without paying outrageous S&H. I grew candy onions this year and really liked them. I've ordered my onions from Dixondale the last 2 yrs. I like their healthy transplants and when I place an order with a couple of friends the cost goes way down. Plus, their bundles have way more plants than promised. The shelf life of onion seeds is so short and I grow several varieties so that works best for me. I still grow some onions from seed. Anney, your turkey may still thaw if you leave it in ice cold water overnight. I always soak my turkey overnight in a brine. Usually I can just leave it outside in a secure pot but it's too warm this year. 2 words...ice cubes. Good luck and happy turkey day to everyone!

I'm making hash from last night's pot roast. Cooked extra potatoes and carrots just for hash. We like it better than just having the roast! Made a dump cake this morning so we actually have dessert for a change. It's a cherry dump cake so we'll have ice cream with it if I can talk Harry into going to the store for me.

I made a Chef Salad with everything except the kitchen sink in it. Hidden Valley Ranch dressing that you make yourself. (I think once you try Hidden Valley packet, that you make at home, the store bought ready made kind doesn't taste as good. MHO) Bread machine garlic bread. Angel Food Cake with strawberries and whipped cream. Now I am hungry again, I am trying to hold off until tomorrow morning. (sigh)

I was going to suggest the pressure cooker. Without a manual, you can still get some good info online. I've included links below to the two most popular sources for pressure cooker recipes. Also, you could search online for the manual that accompanies your particular cooker. Once you get a general recipe for a pot roast that's about the weight of your cut of meat, you'll know how much liquid is needed and how long to cook it. I was up until 10 last night making jalapeno poppers and deviled eggs and didn't eat a darn thing.
Have 170.00 worth of groceries in the frig/freezer and have no idea what dinner is going to be yet.
Something to do with meatballs! LOL
But I can't decide between sweet and sour or the stroganoff type.

Joe, shrimp does have more cholesterol than chicken, but less saturated fat. The cardiologists and those who know such things have decided that the human body will not be harmed by that low-fat yet high cholesterol shrimp, that it's actually the saturated fat that harms us.

So, does the chicken have skin? (grin) Now THAT'S bad for you.

Supper? Hmmmm. I haven't thought about it yet.

I stopped at Harris Teeter on my way home after work and they had wild caught yellowfin tuna medallions for 5.99. Never bought them before, so not sure how to cook them. Thinking I'll marinate them in Soy Vey for 30 min., press sesame seeds into both sides and sear them in sesame oil. Something like that. Saw a recipe for rice with coconut milk, lime and cilantro that sounded good, but don't have coconut milk. If the snow peas I have in my fridge aren't ancient, we'll have those, too.

I made a grocery store visit today, came home with ground beef and ground pork for meat loaf tomorrow. We are have a burger tonight with fresh mushrooms. Sorry, not very inspired. I also picked up some Florida sweet corn since it was on special but I'm not holding my breath.

Nancy, I hear ya..I picked up a big bag of Organic corn (individual kernals) from Costco..It's quite tasty. But of course not as good as on the cob!!!

Brisket is smelling good..
Now to figure out what to have with it! Hubby wants his on a rolls.....I don't feel like making any..

We had chicken cacciatore last night, and I cooked six chicken thighs, thinking that two thighs would the the serving for one person. That was wrong, and so we'll be having that again tonight. I put lots of vegetables in it (celery, onion, red bell pepper, tomatoes, mushrooms, etc.), and so it doesn't need side dishes, although I did serve it with rice. So tonight we have either rice or pasta with the leftover chicken. The last two thighs will be someone's lunch. I do plan to add stuffed green olives to it before I heat it up.
