Time to Think about Dinner Tonight

OK, I asked for it. What's cooking in your kitchen tonight? I'm having leftover Chicken, Okra and Slaw. So boring.

I'm still hungry for Shrimp Gumbo, but Main Man says it has to much Cholesterol. I told him that he'd just have to eat around the Shrimp. Maybe I can add a little crab meat.

We have Easter leftovers. Mainly baked ham, baked beans, polish sausage, rolls, and fruit and green salad. Sure makes "cooking" dinner easy!

Gosh thanks, Judith and Jenn. I'm glad you enjoy seeing my painting projects, it really is a fun thing to do. Jenn, that was an interesting comment, I guess I tend to be drawn to the cute style the most. I like things that make me smile. Tammy, no I did not make those cloth ones. Bought them at Kmart a few years back. They are so darling. I just love them. My ideal snowman would be in top hat and tuxedo holding a black cane. Like he's ready for a night on the town. The other style I would like would be to dress him in a ski sweater and stocking cap. Good luck in your search. Please come back and show us what you came up with. Well, how did the evening go? Pink, I would take Deborah's advice, she is wise... -BUT- I would also set boundaries. Snooping-no way! You don't want her driving your child? - don't let her! You are the Mom control the situation. I would have been thrilled if my MIL had sent pictures of my child to friends and family. She was good to my child while she was growing up but there was always tension between me and her- I was always the outsider or outlaw(and the closest neighbor). I sucked it up and carried on, never called her on anything. She was never overtly mean to me but made little comments and made many demands around the holidays. My DH was always aware of it but never took a stand even when I ranted and raved over her. Ten years ago my husbands father died and there was a huge rift in the family, we didn't see or speak to MIL for over 8 years even though she was 1/2 miles down the road. I was shocked last Christmas when I saw her comming thru the yard on her walker! DH's brother had brought her to have Christmas dinner with us. She had had a stroke, and was much older looking than when I last saw her, but I greeted her with a kiss. Then I went out on the deck for a smoke and a drink! I stayed on the side lines and kept my mouth shut, just let DH and DD visit with her, it was strained, but at least they got to "visit" for a while, and all went well. It felt so good! I think she must have seen what shes been missing - family! She came back for Easter too. I am the one that cooks for the holidays now and the house is always full of her kids, gkids and ggkids and I like having her here too. I try to dwell on the good times, DH and DD are still wary (they were very hurt)but they are comming around. She taught me alot, about being the wife of a farmer, raising kids and how not to be a mother in law. I hope I can be a good future mother in law. Things change, be open to it.

I loved Hidden Figures (saw it last weekend). Awesome movie. I'd consider A Dog's Purpose, the trailer looks great. Even though I am a cat person. I know nothing about The Comedian. No desire to see LaLa - I don't like movies about show biz, but that may stem from a school roommate years ago who played the soundtrack for "Funny -- ha ha - Girl" about 50 times a day, and I was too much a milquetoast to break the dang thing. To this day: if the topic is show biz... I'm so outta there you won't ever even see the dust trail!

While we don't have much variation year to year, I do love the meal. We do our turkey on the grill and have for the last 20+ yr. It is amazingly moist and flavorful. No sweet potato casserole, just baked sweet potatoes (my preference). There is always green bean casserole though and roasted brussels sprouts (this recipe sometimes changes) .. also corn. I make creamed onions-- I can't really eat more than a bite because of the milk but it's a very old family recipe and it seems only I can get the thickness and garlic-white pepper-black pepper ratio just right. I don't care for our stuffing-- it's boring and just not worth the carbs/calories. I also usually pass on the mashed potatoes though they are delicious. I load up on the veggies. I am sure many of you will cringe but most of us like cranberry sauce from the can lol ... but we also have my Aunt Ruthie's cranberry walnut salad. The gravy has a wonderful taste from the charcoal grill .. and some of us like it with the roasted onions, carrots and celery included. It used to be a treat my dad would save just for me (the veggie lover) but now my sister and a few others love it too. Of course there are breads and rolls. We don't do appetizers -- it's just too much food. We do start with bloody marys in the morning as I help sister prep and cook.. then move on to cocktails or champagne by afternoon when guests start arriving. There are always MANY pies. I very much dislike pumpkin pie and rarely have room or desire for dessert but the selection is mind numbing. Always a peanut butter pie and usually a couple of apple pies, blueberry, raspberry .. I like a pumpkin roll but don't make one every year. A very traditional, not-so-fancy meal. If I could change it at all ... it wouldn't be much. I'd make a more interesting and flavorful stuffing and add something with wild rice. I'd love a soup too but logistically, it wouldn't work well. PS. It is getting harder and harder to get the onions for the creamed onions. We have tried fresh pearl onions, frozen but the absolute best are Aunt Nellie's Holland-Style onions in a jar. I just ordered 6 jars! I don't know if the recipe is swedish or ukraine (i should research it) but it is from that side of the family. Dad loved them and some of the rest of us like them-- but they are a prized leftover because they are great to add to soups.

I was up until 10 last night making jalapeno poppers and deviled eggs and didn't eat a darn thing.
Have 170.00 worth of groceries in the frig/freezer and have no idea what dinner is going to be yet.
Something to do with meatballs! LOL
But I can't decide between sweet and sour or the stroganoff type.

Joe, shrimp does have more cholesterol than chicken, but less saturated fat. The cardiologists and those who know such things have decided that the human body will not be harmed by that low-fat yet high cholesterol shrimp, that it's actually the saturated fat that harms us.

So, does the chicken have skin? (grin) Now THAT'S bad for you.

Supper? Hmmmm. I haven't thought about it yet.

I stopped at Harris Teeter on my way home after work and they had wild caught yellowfin tuna medallions for 5.99. Never bought them before, so not sure how to cook them. Thinking I'll marinate them in Soy Vey for 30 min., press sesame seeds into both sides and sear them in sesame oil. Something like that. Saw a recipe for rice with coconut milk, lime and cilantro that sounded good, but don't have coconut milk. If the snow peas I have in my fridge aren't ancient, we'll have those, too.

I made a grocery store visit today, came home with ground beef and ground pork for meat loaf tomorrow. We are have a burger tonight with fresh mushrooms. Sorry, not very inspired. I also picked up some Florida sweet corn since it was on special but I'm not holding my breath.

Nancy, I hear ya..I picked up a big bag of Organic corn (individual kernals) from Costco..It's quite tasty. But of course not as good as on the cob!!!

Brisket is smelling good..
Now to figure out what to have with it! Hubby wants his on a rolls.....I don't feel like making any..

End of the carton cream

Sounds like cream of chicken soup.

Along with seafood salad made with BOGO shrimp and imitation crab.

Our dinner was similar to Cathy's.

Baked chicken, corn on the cob and bow ties with cheese.

We had chicken cacciatore last night, and I cooked six chicken thighs, thinking that two thighs would the the serving for one person. That was wrong, and so we'll be having that again tonight. I put lots of vegetables in it (celery, onion, red bell pepper, tomatoes, mushrooms, etc.), and so it doesn't need side dishes, although I did serve it with rice. So tonight we have either rice or pasta with the leftover chicken. The last two thighs will be someone's lunch. I do plan to add stuffed green olives to it before I heat it up.
