I'm off today so I'm making a comfort meal.

Baked chicken, spinach casserole, mashed potatoes and possibly another cheesecake... since dh ate the one I made last week almost single-handedly.

I think I might have to grill out again. The weather this week has been so wonderful here in Minnesota. It has been in the 80's all week! In Minnesota! I am not taking this for granted at all. I am in heaven.

I have been in such a cooking mood lately! I think it's the cloudy, cool, rainy weather we've been having. Sunday nite I made Cajun Fish Soup. Monday I made Beef Vegetable Soup with sides of Italian bread, some cheeses and wine. Tuesday nite I made a pork, apple and acorn squash soup. Yesterday morning my DH & DD asked me to please NOT make soup again for a while! They love my soups, but I think I've kind of souped them out a bit (LOL)! I do this every year when Fall weather finally hits around here. I get so jazzed! Anyhoo, I made green chile cheeseburgers last night to make up for it.

So, tonight I'm making coq au vin and a really yummy tomato tart made with one of those puff pastry sheets. I made it for the first time last week, and still have half the box of heirloom tomatoes (from TJ's: yellow/green/reds ) left. But, honestly, it was so darn good I couldn't wait to make it again!

This WARM weather is kinda weird for early October up here!

I was down in the 'Cities Sept. 24th, when my NDSU-Bison beat up on the MN Gophers....AGAIN!! I think literally HALF of "The Bank" was full of Bison fans! There was a LOT of Bison tailgating @ the Fairgrounds parking lot b4 the game.

We've got a music rehearsal tonight, so we typically go out on Thursdays. I cooked a chicken in wine sauce last night with veggies, to try to keep away from carbs. Will see what DH is in the mood for.

Ohh lynninmewmexico - I love coq au vin. When I was growing up, on our birthdays my mom would always make whatever we wanted for dinner. From about the age of 6 I chose coq au vin every single birthday. Of course, once I got married that stopped. But, for my 50th Birthday my mom came into town and made me coq au vin as a surprise. Thanks for bringing back that memory for me.

As for my dinner tonight - nothing so I'm accepting invitations. My youngest son flew to Halifax last night to visit his girlfriend, DH is at a soccer game and oldest son is at a small school reunion. So I'm on my own. Maybe I'll have toast with cinnamon and sugar sprinkled on it - another of my comfort foods.

Does anyone here make a killer Beer-cheese soup?!?!?!?!

(long late afternoon workout + no one at home) + (subway sandwich + pjs + bed + TV) = ahhhhhh . . .

I make a killer cheddar cheese soup with beer, Faron. Love it!

Michigan Cheddar Cheese Soup with Beer
Ingredients:
2 Tbs butter
1 garlic clove, minced
1 cup chopped celery
1 cup chopped carrots
1 cup chopped onion
3 (14.5 ounce) cans chicken broth
8 oz shredded extra sharp Cheddar cheese
1/2 cup all-purpose flour
1/2 tsp prepared Dijon-style mustard
1/2 tsp Worchestershire sauce
12 fluid ounces of good beer

Prep:
1. In a medium pot over medium-low heat, melt butter. Saute garlic, celery, carrots and onion in butter for 5 minutes. Pour in chicken broth and bring to a boil; reduce heat and simmer 20 minutes.

2. Cool a bit and then puree mixture in a blender or food processor (or using an immersion blender). Return to pot over medium heat.

3. Toss Cheddar with flour and stir, a little at a time, into the pot, until fully incorporated and melted. Season with mustard. Stir in beer and Worchestershire sauce to achieve desired thickness just before serving
   
   Servings: 8

Drive due south to Oklahoma City, then west to Albuquerque. Finally, head north on I-25 towards Santa Fe.

I had 2 small, unrelated 'medical procedures' today (I'm fine) so whatever I eat better be cooked for me and served to me!!!

Good luck dlm. Can you manage a small cough or a grimace each time you move - that might buy you a few extra days.

I'm going out to dinner. I will order fish, if I can, but with my shellfish allergy it can make it difficult to find one without expecting the dish to be altered too much. For instance, flounder without crabmeat is just boring flounder. Sometimes they can hold the shrimp or crab without significantly changing the ideal the chef had in mind. Other times I wouldn't ask because I can see it would be different dish. We'll see how it goes. I won't starve.

The company will be excellent, the view lovely, the sunset superb so I'm not concerned about the evening.

I'm a basic type of cook. I am cutting up leftover chicken from last night and tossing it with some pasta, cooked broccoli, olive oil, and parmesan cheese.

dlm, I hope you are waited on! I will use anything to get out of cooking. ("Oh, had my teeth cleaned today... how can I possibly cook?")

Leftovers!

Sunday I made meat loaf, mashed potatoes and peas. Monday we had hot dogs, fries, beans and coleslaw. Tuesday we had jambalaya and hot bread. Last night we had Greek chicken with rice, feta and tomatoes. So tonight ... leftovers! I put dibs on the meat loaf for a sandwich.

The cheese soup sounds yummy.

Roasted chicken with mashed sweet potatoes/butternut squash on the side plus a salad.

DH is making stir-fried sweet and sour pork. He is an amazing cook when it comes to authentic Chinese cuisine so I know it will be great.

Last night was dinner out in Atlanta for DD's 29th birthday. She and I had the lamb burgers, I will link to the menu. It is an amazing place. We sat outside as we are having typical Fall weather in the South...cool evenings and sunny warm dry days.

For the 3 nights before that DH and I were camping in our tent at FDR State Park in Pine Mt. GA. We were camped right on Lake Delano. Here is one pic. ( you can see the rest of pics and beautiful sunset if you click on pic) I made most of the food ahead, DH baked an amor di polenta cake, we had steak chili...a new soup I made up and home made sourdough sandwiches. It was a great time. Lots of hiking trails and cycling.

stir fry here too...mine is a salt free chicken and veggies teriyaki using store bought mrs dash. Nothing to exciting, but I had fresh bread today and used up all my salt allowance for the day so need a salt free meal tonight:(.It is amazing how much salt is in bread!
More than twice as much per slice as in a serving of potato chips!

A local store makes sausage with beef they raise themselves. Had some of that and sweet potatoes I grew myself this year.
There's no question, if it's home grown, it tastes better...

roarah: have you thought of making homemade bread ? My sourdough , which is made from my own wild yeast culture has only 15 grams-20 grams of salt for 2000 grams of dough ! There is almost NO salt in homemade breads depending on what you make. I would be glad to walk you through making your own.

The reason store bought bread has such high salt content is the same reason all store bought foods have high salt/sugar....to disguise extremely inferior product content.

Let me know if you are interested in learning to make your own. Also why is it you are limiting your salt intake ? None of my business at all but perhaps there is something more we could do together to enhance your diet choices....I would love to help. c

OOh trailrunner I would love to have and try some home made breads recipes! The bread I had was bakery bread but still high in salt...I have bilateral Meniere's disease. It is an inner ear hydrops condition that causes hearing loss and vertigo and although there is no cure limiting salt helps keep some of the symptoms at bay for longer durations. I have always preferred savory foods to sweets so it has been quite a change for me. I have been using alot more lemon and vinegars as salt substitutes but other ideas would be very helpfull too. Thanks! Breads are my favorite food ever! And I hope you enjoy the rest of your trip! My Dh was in atlanta for dinner last night too on business:)

I used the wild yeast tutorial on Wild Yeast blog to get started about 3 yrs ago. She has great formulas on her website for her breads. I use them every week to make all that we eat. They are completely fool proof.

Do you make breads so that you are familiar with how to do it ? I would be glad to help you after you read her tutorial. I have pics to show what it looks like as it is growing. It really is very easy. Takes time but most of it is waiting LOL. A few minutes of work and then wait...work ...wait...let me know and if you are close would be glad to help you and give you a pot of my starter. c

OMG, Trailrunner, you make all your own bread, too?!? I think you deserve the official GW Superwoman award!
I've just googled the Wild Yeast Blog and have bookmarked it. Homemade bread is something I have rarely made, but would love to try. Thanks for mentioning it!

lynne...no you have to stop...I am SO not super...if you only knew.

I started making all our bread in 1977 or so...saw an article in a BH&G about a little boy that made and sold Challah from his wagon. I thought if this little Jewish boy could do this why not me ??? The first batch turned out so well I have kept it up and expanded to lots of other types. There are 100'a of pics on my photobucket food album.

I have "taught" so many folks on GW over the years...it has been so rewarding. There are slideshows on the pb album too. Let me know if you are interested. The Wild Yeast is very different from " straight" doughs...those that use commercial yeast. it is a whole different concept. Would be glad to discuss with you via email off GW if you like...just send me a note. c

Wednesday nights leftover Chilli~~small amount of ground round, 3 types of beans, large can tomatoes, large can tomato sauce, pepper, chilli powder. Spoon into *large* bowl and sprinkle with fresh shredded sharp cheddar. Eat with Jalapeno corn bread. ;o)

I had a late lunch (with my girls, what a treat that was!!) and worked late tonight, so when I got home, DH had already eaten. He made some chicken 'soup' and it just didn't look like much to me, so I passed. He offered to make me some alfredo & noodles, but again...his cooking leaves something to be desired, so I settled on a PB&J on 12 grain with homemade blueberry jelly.

I haven't been to the grocery store lately, so I need to take inventory of what we have so I can go buy stuff to actually COOK for a change. Y'all are making my mouth water with your dinners. And lets not even go there with home made bread...

On Friday nights we often get fast food- does anyone here do that or is Friday a cooking night too? We try to eat healthy, so I'm getting a grilled chicken sandwich from chik-fil-a.

It was fun reading about all the different dinners!
