I'm sorry not to have responded sooner. The bad news: my husband's digital camera was stolen right off his desktop this month. Things are a bit tight and we couldn't justify replacing it at the moment. The good news: some friends of ours moved a few hours away (that's not the good part) and invited us to come and stay a few days after they got settled in. They took us to dinner at a casino near their home and after dinner I was convinced to spend $5 on a quarter machine. I won $375! DH got a camera and I got to buy a lot of yarn to support one of my habits. We have a potluck to go to in a couple of weeks and I am taking deviled eggs. I promise to take a picture.

I think I used too much vinegar in the first batch - all the eggs had dark grey marks all over them. Some in spots and some where the shells had cracked. I skipped the vinegar in the second batch, and it was fine. My MIL tried to give me a square egg mold once! If you have a lot of them, it's cool, but one at a time is deadly! Thanks for your help. I ran across this method for hard cooked eggs from Julia Child. Please read #5. WHO KNEW! -Grainlady Perfectly Easy-to-Peel Hard Boiled Eggs 1. Start by placing your eggs in the bottom of a large pot. You want the pot to be large enough that the eggs can fit in a single layer. Add water until it's 1 inch above the top of the eggs. 2. Turn on the heat and bring the water to a boil. (If you want, you can add a half teaspoon of salt here like Katie suggests.) 3. When the water boils, cover the pot and turn the burner off. Let the eggs sit in the covered pot for 17 minutes. Get a bowl filled with ice water and set it off to the side. 4. After 17 minutes, transfer the eggs into the ice water using a slotted spoon. 5. Now, bring the water back up to a boil again and place the cooled eggs into the boiling water for just 10-20 seconds more. Cooling the egg causes the egg itself to shrink away from the shell and membrane, and when we give the outer shell that extra blast of heat, it causes it to expand slightly, pulling it as far away from the egg as possible. Real nice looking deviled eggs Donna L. I did unpack my deviled egg plate and it holds 12 plus room for a few more in the center. That is enough for our meal, that way I won't have a lot of them left. I too have the plastic lidded ones and they are good to store or take eggs in. Two Rubbermaid ones and one Tupperware one. I also have several different glass ones and do use those for other meals. I use either Miracle Whip or Mayo in mine plus, some sugar, and some mustard. Not a lot of any of it. Some times I like to boil more eggs than I need and use the extra yolks so they will be nice and full and of course paprika on the top. Then I just eat the egg whites that are left over :) Sue
