Deviled Eggs - recipe and presenation?

I'm totally kicking myself. When we were in NH on vacation I saw the cutest deviled egg plate. I loved it but thought "I never make those, I'll never use it". Well, now of course, I'm having a brunch for DH's family and I have it in my head that I absolutely MUST make deviled eggs. I can't shake it.

So, got any favorite recipes and how should I display them without the proper plate so they don't wobble all around?

I thought about a bed of sea salt, but then they'll be too salty when you pick them up. Lettuce or spinach?
