deviled eggs, it can't be that hard!

I tried to make deviled eggs a few days ago and they were a little less than perfect. I've watched other people make them many times, but I never paid close attention to them. I figured it was easy enough to wing (like sloppy joes!).

Looked at a few recipes to get a general idea. I already knew to boil the eggs and mix the yolks with mustard, mayo, and relish. Then sprinkle paprika on top and all done. What could be easier?

Well, to start with... I over boiled the eggs. The shells cracked and the whites came blistering out of the cracks before I even poured the water off. So, I peeled them. They were looking pretty mangled because of the over cooking and blistering. I cut them in half and dug the yolks out with a spoon. Even more mangled by the end of that process. I mashed the yolks with a fork. Then added "some" mustard and mayo. I don't like either of those two things. I tried to be conservative with the amounts of each and just get the right consistency. I don't keep relish so I threw a couple small pickles in the rotary chopper and added those. I scooped the filling in the holes into the whites. I sprinkled the paprika on... well I started to anyway. The shaker fell off as I tipped the jar and all the paprika fell out onto one egg. I decided to taste test (what was I thinking) (never mind, I wasn't!). Awful. They tasted of vinegar. I obviously used dill instead of sweet pickles. The texture wasn't right. They were all lopsided from the peeling and yolk removal process. I almost got sick just looking at them. A friend came over who eats almost anything... she took one look at those eggs and said she'd already eaten. I've never heard that from her before, but it was a very tactful way to say, "Are you out of your ^$#%&*(% mind?"

Is it really that hard? Any tips to make the next venture go better? Specifically how long to boil the eggs and the proportion of of mustard to mayo.
