'Nut Pudding'

The "nut pudding" at the Thanksgiving dinner can be described thusly:

A thick pudding-textured mound of creamy-white. No sauce. I was told it was to be served WITH the turkey, not as an after dinner dessert.

Texture was dense and uniform with tiny bits of walnut accenting the feel.

There was obviously pineapple in it and probably some coconut. And vanilla wafers. Otherwise, I couldn't tell what was going on.

The maker would only tell me that her MIL gave her the recipe and her MIL has had the recipe since the 40's-50's. I suggested that maybe it was something that came off the back of a box of vanilla wafers. They would not share the recipe with me. That was a first.

Anybody have any idea what the recipe might be? It was OUTSTANDING.

Thanks,

Joe
